- We challenged chefs of three different skill levels - amateur Bianca, home cook Emily, and professional chef Joshua Resnick from the Institute of Culinary Education - to make us their take on tater tots. Once each level of chef had presented their creations, we asked expert food scientist Rose to explain the choices each made along the way. Which tater tots would you choose as your next dipping companion?

Emily's recipe is if you want a side dish with your main meal with your family or friends
Joshua's recipe is for when you want to impress someone with your cooking skills, and also patience, cause ain't no way i am waiting for 2 days for some tater tots

One of the coolest things about Emily's "hero's journey" has been how much more touch she has when seasoning. Confidence and determination.
Chef Josh was actually my instructor at ICE for my first course this year! Glad to see him finally on the Epicurious channel, dad jokes and all.

I absolutely love how proud Emily keeps being every times she can say that she's a lever 2 chef :)
I've never thought of tater tots as a gourmet experience. Joshua proved me wrong. Though really, Emily's looked pretty amazing, too, and even Bianca stepped up the frozen potato game with all that seasoning.
I believe the original potato pavé recipe is Thomas Keller's. It's actually a fancy version of scalloped potatoes. Joshua just totted them up by deep frying them instead of pan searing.
Bianca is always so entertaining to watch! Lol glad to see her back

I love the confidence Bianca has as a level 1 chef. Plus she's funny, consulting her ancestors on how much seasoning to use...ot the 3, her's were the most tater-tot like. I bet they would have tasted better if she'd used more oil or deepfried them

So, Emily is promoted, and is still an original. How do you not love her? Bianca is a sweetheart, and I love a "saucy girl." Josua, like all these pros, is way over the top! As for Rose...if she weren't married, I'd be an eager suitor!! Despite all that, $3 for a two-pound bag of frozen tater tots is really all I need --- and that ketchup Emily threw at me!!!

I think this is my first time seeing chef Joshua but I really like his take on this. It's super ~elevated, but looks really good, stays with the idea of the tater tot, and isn't sooo ridiculous that you couldn't do it at home.

Emily!!! I'm so proud of you! You were the hands down star of this show. With the level 3 dish, there were a lot of techniques and ingredients that aren't very accessible to the average home chef. But Emily's dish in this episode was not only accessible, but honestly incredibly well thought out and appetizing. Again, incredibly proud of Emily and what she's accomplished here. Looking forward to trying her tater tots recipe myself!
