I try to clean mine while the pot is still warm. I use a Mr. Clean magic eraser on all of my Le Cruset and Lodge enameled cast iron along with a little warm soapy water. It works really well and doesn’t scratch the surface at all. If there is really stuck on stuff I will use a plastic cast iron scraper to get the big stuff off then the magic eraser and water.

Looks tasty vi’ll have to try your version. I have made the simpler version with just butter, onion and canned tomatoes. the key is the San Marzano tomatoes. The recipe I used called for cream, instead I used 1/3 cup of raw cashews and it was amazing.
