    Airfryer Souffle Cake Recipe: Perfectly Fluffy & Deliciously Easy! |一口咬下去即化口感!氣炸鍋版自製舒芙蕾蛋糕的秘密
    We would like to share with everyone how to make the fluffy & delicious airfryer soufflé cake
    Main Ingredients:
    1. 2 Eggs
    2. Low gluten flour/cake flour 40g
    3. Sugar 10g - For egg yolk mixture
    4. Sugar 20g - For egg white foam
    5. Milk 30ml
    6. Corn oil 20ml
    7. A little bit of lemon juice
    Method:
    1. Separate 2 eggs into egg white & egg yolk.
    2. Add the 30ml milk into 20ml corn oil, then mix it well.
    3. Add 10g sugar into egg yolk, then mix it well.
    4. After that add into the mixture of corn oil & milk. Mix it well.
    5. Sift 40g of low gluten flour / cake flour into egg yolk mixture.
    6. Mix it well with zigzag motion until no flour seen.
    7. Add in few drops of lemon juice into egg white (Note: This can help to stabilize the egg white & prevent overbeating).
    8. Beat the egg white with medium speed.
    9. Beat it till the bubble size slightly bigger than fish eyes, then add the 1st portion of sugar (Total 20g, added in 3 separate portion).
    10. Add in the 2nd portion of sugar after egg white beat until smooth & fine.
    11. Add in the 3rd portion of sugar after texture seen on egg white.
    12. Continue to beat the egg white until stiff peak formed.
    13. Add in a portion of egg white foam into egg yolk mixture. Mix it gently.
    14. Add into egg white foam & mix it well gently.
    15. Pour the mixture into cake mould with baking paper (note: The baking paper folding method can refer to another video).
    16. Bang the mould for few times till mixture smooth.
    17. Bake in preheat airfryer for 1st 15 minutes in 160C (320F)
    18. 15 minutes later, cut a cross on the surface of cake.
    19. Continue to airfry for another 15 minutes in 160C (320F).
    20. Cover with aluminum foil after airfry for 5 minutes, then continue to airfry for the remaining 10 minutes.
    21. Completed.

    7. 在蛋白中加入幾滴檸檬汁(注:這有助於穩定蛋白,防止過度打發)。
    8. 用中速攪拌蛋白。
    9. 蛋白打至大氣泡後,加入第一次糖(總共20克,分3次加入)。
    10. 蛋白打至細膩後加入第二次糖。
    11. 蛋白出現紋路後加入第三次糖。
    12. 繼續打蛋白至出現尖角。
    13. 將一部分蛋白霜加入蛋黃糊中。輕輕攪拌。
    14. 加入蛋白霜中,輕輕攪拌均勻。
    15. 將蛋糕糊倒入鋪有烘焙紙的蛋糕模中(注:烘焙紙的折疊方法可以參考另一個視頻)。
    16. 將模具敲幾次,直到蛋糕糊平滑。
    17. 在預熱後的氣炸鍋中烘烤15分鐘於160℃(320°F)。
    18. 15分钟后,在蛋糕表面切一个十字形。
    19. 继续在烘烤15分钟於160℃(320°F)。
    20. 在烤5分钟后用铝箔盖住蛋糕,然后继续烘烤剩下的10分钟。
    21. 完成

    Hi dear, if no cake flour and low gluten flour, what’s the portion for all purpose flour n baking powder? Thanks for sharing.

      You can use all purpose flour instead of cake flour but the texture of the cake won’t be the same.
      For this recipe, if wanna substitute with all purpose flour maybe you can try 30g of all purpose flour and 10g of cornflour.

      可能氣炸鍋的溫度太高了,需要調低點。表層有蓋鋁箔紙嗎?烘烤期間如果表面顏色可以了,可以先蓋上鋁箔紙,避免表層烘烤過度。

      可以。不过当天烤好之后就吃完的蛋糕口感最好。

      你好,可能是蛋白打发的不够或者蛋糊翻拌的时间过长导致蛋白消泡了。

    我只有用普通烤箱才能把蛋糕烤得漂亮。每当我用气炸锅烤蛋糕时,顶部每次都是被它的热风吹得很难看,令我感到无助和失望,几次失败后让我再也不敢用气炸锅来烤蛋糕了。然而当我看到你能用气炸锅烤出那么漂亮平整的蛋糕,就觉得你真是了不起。我也不知道我为何我用气炸锅烤不出顶部平整的蛋糕。唉!

      你可以试一试在烘烤5 至 10 分钟后,盖上铝箔,接着继续烘烤完剩下的时间。这样表面就不会烤焦。
