Epic day on the pier (catch, clean and cook ) Thai Curry

  • A day on 91st pier followed by Chris cooking Thai fish curry with the sailcats that he caught. Sorry about the wind. Cooking starts at 14:30.
    Recipe for Thai Fish curry
    Ingredients
    1 can of coconut milk
    2 tablespoons of coconut cream
    1 jar of red curry paste
    1 tsp of curry powder
    3/4 curry leaves (optional)
    1red bell pepper
    1 yellow bell pepper
    1/2 of onion
    2 tablespoons of ginger
    4/5 garlic cloves
    1 lime
    1/4 cup cilantro
    2 tablespoons of fish sauce
    1lb of fish
    3 cups of snap peas
    2 tablespoons of coconut oil
    1cup of water
    1 tablespoon of brown sugar
    Take fish and cut into 2inch pieces then coat in red curry paste and place to side
    Start by taking a large pot and add the coconut oil. Once that is hot add your ginger , garlic, onions and peppers. Stir till onions become translucent. Then add your coconut milk , water and more curry paste. Bring to boil then turn down to low heat. Add 1 tablespoon of brown sugar and stir then add in fish. Continue on a low boil till fish has completely cooked. Taste for spicy likes and salt modify accordingly. Then voilà your Thai fish curry is all done . Serve over rice and enjoy.
