stories of his youth. He was also a WWII vet and was wounded on Anzio beach in Italy.

That's way too complicated for cooking a rat (or a rabbit). Lay it whole in a lightly oiled cast iron skillet (or wide shallow pot), add seasoning & chopped vegetables (to your liking), than half a dozen thick slices of smoked bacon on top, than pour in a glass of wine (or a cup of brandy) and enough water to completely submerge the meat. Cover the pan with a lid or tightly wrapped aluminum foil and stick it in the oven at low heat for about an hour (until the meat is soft enough to flake off the bones with a fork), than remove the lid/foil and give it another 15 minutes at medium-high heat to crisp up the surface and reduce the fluid to a nice thick sauce. Goes well with mashed potatoes and pickles or fresh bread and a spicy salad.

As a kid, in the Trinity river basin between Texas and Louisiana in the 60s, we were told by Texas Fish and Game that they were brought in to eat the underbrush of the Trinity but then found out that the rats much preferred rice (Texas produces more than Japan as a fun fact) so there was a bounty on a pair of ears. We spent many days on the river harvesting them.

Louisiana pays by the tail. They also have the Jefferson Parish Sheriff's Office(JPSO) do night patrols in pirogues in the city's drainage canals shooting them with .22's. They don't want civilians firing off rounds within city limits.

Belive it or not we have a lot of nutria is sw Washington, all over the pnw really. I've had a lot of fun riding my Mountain bike to the nice local wooded park with a couple hidden lakes with a soda bottle of whiskey and a flat band slingshot and some half inch steel ball bearings. Hand lining bluegills and sipping some spirits on a beautiful evening is great. Launching half inch steel into a swimming rat at 40 yards is fun as hell too.

Hah, 2 weeks ago I ate my first ever Nutria-Stew (slow cooking is the best for their little tough meat my friend told me) and now Rob hunts them as well. They are a nuisance in Germany as well and got blacklisted by the government as of last year, so hunting them is allowed all year long and it is a fun hunt, walking along creeks at night with a silenced .22 and a Thermal-scope :)
It is just not looking very pretty with the rat tail and they are very wiggly when gutting and quartering

Very marshy there and we would take our barge to that area and shoot Nutrea from the barge. My mother wouldn't even consider cooking them neither would we guys shooting them. Maybe we missed out on some good eating. We never ate any of the water snakes we killed either!!

An interesting fact about where I live, Alberta, Canada. It is the ONLY rat free province as we have rat control borders set up years ago to protect crops. It is patrolled and has miles of traps etc. If fact, Alberta is the only place on earth (with maybe exception of Antartica) that has NO RATS.

Grill it, then boil it, then grill it some more. Add plenty of seasoning, then fry it & dip it in sauce and it maybe edible. I'd have to pass on the rat, but love the video!!

Super cool to see y'all eating invasive species or even sustainable ones. Just so y'all know Spanish Moss is a bromeliad related to pineapple. It's also edible if you want to forage some greens (but just the green tip.) Ball moss is even easier to forage and tastier.

We'll actuallly have nutria for christmas (I always like to cook something special/uncommon/interesting). I found that slow cooking nutria is the key to succes, because otherwise they always ended up a little more dry/chewy then I like them to be. The rat-rolls definitely inspired me to try something similar though, I think my family will love it, thanks for the idea!

I grew up in Kazakhstan and we breed nutria as well as chickens or rabbits ... Our family ate nutria meat and their skins were used for winter coats and hats ... I remember the meat was very tasty and tender, probably because nutria was grown on a farm, not in the wild... Wild meat is always tougher than home grown meat....
