Looks good, i normally skin the cats first then fillet them . I also usually soak the fillets in milk and lemon juice overnight before flowering and deep-frying. I use carolina reaper chilli seasoning and a hint of oldbay . If i grill them i use a flat griddle on my gas grill and use Cajun seasoning ,butter and lemon pepper also very tasty. Going to have to try your method/recipe of cooking catfish, next to northerns they are one of my faverites. Something you might try for bleeding your cats. Cut the tail off and hang them head up in ice water. I use a plastic 30 gallon barrel with the top cut off and a bunch of hooks off of bungy cords. By the way that river looks a lot like one I stopped at years ago at Park falls.

Nice! I find that if I fillet them clean and keep the dark meat and mud line off the fillet I don’t need to soak them.

It's very similar to torsk, ask your Norwegian neighbor. Only difference is using condensed cream of shrimp in stead of the heavy cream.
