That looks so good! Definitely NOT Hamburger Helper! I don't have any freeze-dried foods (yet), but I could make this up as a Meal-In-A-Bag, using canned foods. Not as portable, but convenient having all of the ingredients together. I would use a can (maybe 2) of Crema Media for the heavy cream/sour cream and a package of chicken gravy mix, canned veggies and chicken (either store bought or home canned) with a package of noodles. And yes, using the "assembly line" approach, you could definitely crank out a dozen of these at a time easily.

I haven't made many yet that don't have meat or dairy but some could be adapted! This one would be a good example... you could leave out the chicken and just add additional vegetables to fill the jar. The Thrive Life bouillon i used is actually vegetarian bouillon. I don't think the veloute is vegetarian but you could use additional bouillon and perhaps some cornstarch for the thickening, or whatever you like to use. I have used coconut milk powder in other recipes that added a nice creaminess so that might be a good sub for the heavy cream powder to make it dairy-free? I have a bbq beef and beans jar meal that i don't believe has dairy, and you could easily leave out the beef and add more beans or veggies. Here is that one: ruclips.net/video/9PzEZUDsDCI/видео.html
And definitely check out this video- no meat, it's smoothies and chia pudding. The pudding uses the coconut milk powder (it was sooo yummy! ) and the smoothies have dairy but you could sub in the coconut milk powder there too! ruclips.net/video/Wznq2Ym-69I/видео.html

It certainly does matter what bouillon you use. I bought a Costco bouillon and used that yesterday, and it was so salty I could barely eat it. Pretty sure it was the Knorr
What can be substituted for the veloute?
Veloute is a chicken gravy mix, I like it for my jar meals because it mixes well and doesn't clump. But you could try another commercial gravy mix (I'm not sure if the measurements would translate exactly or if you'd have adjust the amount) or you could try using chicken bouillon and a thickener of your choice. Be sure to blend the powdered ingredients well with the cold water before heating to ward off any possible clumping issues.

If you don't have or can buy freeze dried food
Some of the ingredients could be substituted with dehydrated, it may affect the shelf life and you'd have to play around with the recipe a bit as they measure and cook up differently. The meat would have to be freeze dried but you could sub in some tvp or something like that.

How do we make the veloute powder?

It's basically a chicken gravy mix though so if you don't have any and don't want to buy it I'm sure you could do a work-around with some more bouillon and some kind if thickener. Or you could test it out with a different brand of gravy mix. I like Thrive's sauce mixes because they're designed to mix in well without clumping even in hot liquids so they work well in jar meals.

How many oxygen absorbers ?
I’m seeing 5oz of FD corn for $15? Is that correct? Yikes. Also MSG and yeast extract are the same, but that thrive one still had way less artificial chemicals
Unfortunately the half off sale ended and the corn is back to regular price, but an important thing to remember when looking at freeze dried foods is that since all of the moisture is removed, they weigh almost nothing. Kind of like Styrofoam for lack of a better term. So you can't use weight as a comparison (unless you're comparing to other freeze dried foods of course). It's apples to oranges. Lots of people get thrown by the weight if they're not familiar with freeze dried foods. But of course that's one of the things that makes them so desirable with backpackers, rv'ers and astronauts lol... the weight is basically removed! With Thrive Life specifically, most people use the Delivery service because it unlocks the lower price that you see below the retail price of $15. A couple things I personally do is always buying the larger cans because they're a better value looking at unit price (less $ per serving and per oz) and I usually always focus on buying what's on sale. We have a pretty good stockpile built up so I can "shop" from that and then replenish when things are on sale so I always know I got the best price possible for anything I'm using. It's how I do all my shopping actually, to the best of my ability anyways. Not just my freeze dried foods. But freeze drying is definitely an expensive technology, so FD food is going to cost more any way you look at it, whether you're buying it or freeze drying it yourself. But the benefits are the trade-off to the higher cost... the extremely long shelf life, the high retention of nutrients, and the extremely lightweight quality is an important factor for many, like I mentioned. Personally I love that I can have many items shelf stable in my pantry for long term, and be able to include them in shelf stable meals like these, that I would not otherwise be able to have! That's worth it to me 😊

Just to add to that - that's a common misconception, but yeast extract and MSG are definitely not the same thing. Glutamate occurs naturally in yeast extract, typically at around 5%. MSG on the other hand, is a highly concentrated and processed form of glutamic acid. It is 100% sodium glutamate and does not occur naturally. Anyone can do it? Only if you can afford mega bucks for a machine or a ton of different no 10 f/d canned goods…what about the millions of poor folk that are hand to mouth right now?
Yes, anyone can do it. Is it hard? Yes. Are there a lot of people struggling? Absolutely. But there are people that pull themselves out of bad situations everyday. As far as preparing for the future.. obviously you've gotta worry about today first. But prepping doesn't happen all at once, and you've got to have the self-discipline and the mindset to make it happen. You start small, you find deals, you budget, you prioritize, you work. That's how we started, and that's how we continue on everyday. We sacrifice a lot to lead this lifestyle. We've got old vehicles, but no car payments. We don't take vacations. We don't waste time. My wife and I each work upwards of 14-16 hours per day, 7 days a week. When we're not working to make money, we're putting in time to save money, create and preserve food, and fix what we have instead of paying someone else to do it. We don't have it all .. far from it. We struggle. We have hard times. But because we prepare for the future and we work hard, we can ride out those tough times. I feel terrible for the millions that are hand to mouth, as you put it, but the best thing I can do is take care of myself and my family so as to not become a burden on society, in hopes that that will free up resources for those that really need them. And also with hopes that nobody is simply taking advantage of said resources.

I can't afford freeze dried food either. I've made all her meals in a jar recipes using either dehydrated ingredients that go into a mason jar that I got on sale. Or I use canned and fresh ingredients and freeze them. Her ideas are a suggestion, if you really want to try them there are alternatives
