We make 'thogayal '(chutney) out of the peels of ridge gourd using heeng, urad dhuli dal, little bit of tamarind, fresh coconut and the sauteed peels. It tastes very good with rice, dosa etc

Yes. Learnt that from my mom. She would cook very many things of what people usually discard,such as white part of watermelon,she would make pickle out of it,cauliflower leaves and stem and middle part of stem,cook with potatoes,tomatoes and regular spices and coriander leaves,raw banana peel with just methi seeds and crushed pepper and heeng, fried potato skins . Egg plant skin has most antioxidants,so after peeling,she will finely chop it and put it back in subzi,etc etc..
