How To Make Flavored Sugar

    If you love sugar as much as we do, follow along with this online pastry class as we show you how to make the flavored stuff. With so many ways to get creative, this is one of the most fun tutorials we’ve done so far!

    FLAVORED SUGARS
    When making flavored sugars more of the flavoring can be added to the sugar for a stronger flavor and more vibrant color. The sugars can be used in warm beverages, on cookies before baking, in oatmeal and yogurt, on quick breads and muffins and in breads and rolls.
    vanilla sugar
    1 vanilla bean
    1 cup sugar
    Slice the bean down the center, scrape out the seeds and rub into the sugar. Pour into a jar and let sit for 1 week to bring out the flavor
    cinnamon sugar
    1 Tablespoon ground cinnamon
    1 cup sugar
    blueberry sugar
    ¾ cup freeze dried blueberries
    1 cup sugar
    Place the blueberries in a coffee grinder and pulse until powdered. Mix into the granulated sugar
    raspberry sugar cubes
    2 ¼ cup freeze dried raspberries
    3 cups granulated sugar
    3 Tablespoons water flavored with ½ teaspoon almond extract
    Place the raspberries in a coffee grinder 1/3 at a time and pulse until powdered. Sift out the seeds. Mix into the granulated sugar and add the water, the mixture should be a sandy texture and not too wet. If the mixture is to dry add more water and if it is too wet add more sugar. Press into a parchment lined 9 inch square cake pan. Cut into squares and dry overnight, remove from the pan and break apart.

    Hi! So, when you make these infused sugars, particularly the berry, how would that work atop something like a creme brulee? I can't help but wonder if the torching wouldn't make the berry char, and ruin the effect I'd be shooting for.

    if i want to make rose flavoured sugar, can i use any roses or do i have to buy special ones? And can I dry them in the microwave?

      You can use dry organic rose petals which have been dried in the microwave or fresh petals.

    A fine episode, but seeing the finished sugar cubes via the magic of a premade batch would have been a nice ending.

      +MMRX “MMCA” CA You can store the sugars at room temperature for later use.

    I heard of "salted caramel" flavored sugar. Do you have any suggestions on how to even make that?
    BTW loved your video, you made everything so easy to follow.

      +BJ Garcia You can try browning some sugar in a pan a little bit and adding salt and if you have some big pieces blend them and add some salt. Be careful with the sugar it will be very hot.

    could you use alcohol in place of water with sugar to make the cubes?

      The fresh fruits are very wet and can dissolve the sugar, I recommend the dried fruits.

      Shireen Khadivi no I’m sorry! 😫
      I haven’t yet even made this type of sugar; if/when I do, however, I will definitely try using them to make cotton candy - and hopefully will remember to come post a comment about how it goes.
      If you try it before I do, I’d love to hear about your experience!

    How to make it possible, after making mint sugar, it will not contain any mint particles...???

      When using fresh mint you will always have the mint particles, you can avoid this by using a mint flavored extract or you could mix the whole mint leaf with the sugar and allow it to sit overnight. Then remove the mint leaf and the sugar. You will have plenty of mint flavor.
