    I THINK I remember this. I lived in Malta till I was 6 so have many mixed up memories!

    I’m Maltese. My mom always added lots of chopped garlic and and yellow cooking onions cut in half and then sliced. Do a layer of potatoes and a layer of onions and garlic. Mom also added water (use enough water to go a third way up from bottom of dish. This will make a nice gravy. (No fennel). Pepper and salt over the potatoes. She would then cut up a chicken that had been tossed in salt, pepper and a sprinkle of sweet paprika and place the pieces on top of the potatoes. The chicken will have crispy skin. Don’t forget some fresh Italian bread to dip in the gravy.

    ooooooh I LOVE fennel seed. Just bought at least a cup of them from the Bulk Barn. This is going on my "to do" list for sure. My husband and son could eat potatoes 7 days a week.

      She used to use Italian sausage, I use British bangers that I get from the British grocer in Bradford. They are wonderful.

    One of the best all time Maltese recipes, we add some Curry powder as well but either way the top potatoes are the best :)

      I add curry to mine if I do them on the stove top. In a pan crispy like my Aunt used to do. LOVE them!

    I just watched your other roast potato recipe, the seasonings of the two dishes are quite different, but the technique of roasting in the pan half filled with water is completely new to me. Really interesting and I'm impressed with the texture it looks like it give the potatoes. Thanks so much for sharing all these great recipes.

    We make ours just like yours but add pork chops or chicken thighs and instead of water we use chicken broth and add knobs of butter and olive oil ..to top once ready for oven and what a lovely smell all over the house when we make this ..thanks for sharing ..cheers from haliburton Ontario

    gorgeous - i remember my nanna slicing the potatoes in her hands not on a board. she basically sliced and chopped everything this way. i see older people doing that also nowadays. i think it's a maltese thing.

      You guys will love this! It's so easy, and you can easily make a huge batch or 2 casseroles! If your kids haven't had fennel seeds before, just put in a few, but it really makes it in my opinion! THANKS so much for watching!

    you can also use pork chops .or chicken .or any meat under all the potatoes ..and if you put meats under the potatoes just add a cube of any meat you are putting under the potatoes .beef chicken cubes and so on .
