You certainly know how to make a simple dish complicated. I have done something similar for years, usually as a side dish for meat cooked in the oven. Put a mix of olive oil and butter in a baking pan, in the oven at 400 to melt the butter. Chop the potatoes into a size you want. Toss into the hot butter and oil, adding mushrooms. I normally use Crinini. Stir to coat the potatoes with oil. 30 minutes in the oven at 400°F. Prepare a Spanish onion, sweet bell pepper and garlic. When the potatoes have been in the oven for 30 minutes, add the onions, pepper, and garlic. Add pepper, dill, and paprika. Stir, and back in the ovrn for another 30 minutes. Done to perfection
