Black Sesame Bagel
500 g of strong minutes
9 g of salt
30 g sugar
10g butter
5 g of yeast
280 g of water
50g black sesame seeds
100 g of hot water
1. Dissolve the yeast in warm water and let it sit for 3 minutes.
2. Put all ingredients except butter and soup in a blender bowl.
3. If the dough has become one loaf, add butter and mix for about 3 minutes. Finally, add the soup and mix.
4. After confirming gluten formation, first ferment.
5. After the first fermentation, divide by 120g and take an intermediate rest for 15 minutes.
6. After intermittent rest, mold into a bagel shape and ferment it again.
7. Blanch the bagel dough after the secondary fermentation in boiling water mixed with sugar for 15 seconds each.
8. Bake in the oven at 180 degrees for 13 minutes.
