    A classic South Indian dish!
    Masala Dosa Recipe
    Ingredients:
    For the Dosa Batter:
    2 cups rice
    1 cup urad dal (split black gram)
    1/2 cup methi seeds (fenugreek seeds)
    1/2 teaspoon salt
    4 cups water
    For the Masala Filling:
    2 medium potatoes, boiled and mashed
    1 medium onion, chopped
    2 cloves garlic, minced
    1 medium carrot, grated
    1/4 cup chopped fresh cilantro
    1 tablespoon lemon juice
    1 teaspoon mustard seeds
    1 teaspoon cumin seeds
    1/2 teaspoon turmeric powder
    1/2 teaspoon red chili powder
    Salt to taste
    2 tablespoons ghee or oil
    Instructions:
    Dosa Batter:
    1. Soak rice, urad dal, and methi seeds in water for 4-5 hours.
    2. Grind into a smooth paste.
    3. Ferment overnight.
    Masala Filling:
    1. Heat oil; add mustard seeds and cumin seeds.
    2. Add onion, garlic, carrot, and cilantro; sauté.
    3. Add mashed potatoes, turmeric, chili powder, and salt.
    4. Mix well.
    Assembling the Masala Dosa:
    1. Heat a non-stick pan; pour a ladle of dosa batter.
    2. Spread evenly; cook until edges start to curl.
    3. Place a tablespoon of masala filling in the center.
    4. Fold dosa; serve hot with sambar and chutney.
    Tips:
    Adjust batter consistency for perfect dosas.
    Use a non-stick pan for easy dosa removal.
    Experiment with different fillings.
