- Simple recipe for pickling beets at home without added sodium or preservatives using distilled white vinegar and sugar. The only cooking for this recipe is the beets.
Red beets are a good source of folate, manganese, vitamin C and fiber. Pickled beets can be stored in your refrigerator for up to one year. Homemade picked beets have up to 75 percent less sodium than canned or prepared beets.

The way I do mine is to miss out the sugar and add mustard seed, garlic cloves, pieces of dried chilli and black peppercorns. This gives a hot, zingy beetroot. I find that beetroot has enough natural sugars for me.

No, don't pour the water in the sink! Use the flavored water, with carbonated water, add a touch of sugar and you have a GREAT soda beverage!

No, you can use apple cider vinegar or other vinegar with 5% acidity. White vinegar is inexpensive and readily available.

did you sterilize the jars before? How long will the beets keep in the refrigerator? How will you know if there is spoilage. Thank you
I wash the jars in hot soapy water or in the dish washer. Sterilizing is not necessary since the beets are refrigerated and vinegar is antibacterial.
I normally make enough to last one year until the next growing season. I have not noticed any spoilage within that period of time.
Slime on the surface of the liquid or mold within the jar are indicators of spoilage.

Do the jars have to go in fridge? and how long do they keep? I'd want to get the freshly picked and enough for a year
Yes, you must refrigerate them unless you use hot water canning to seal the lids. They will keep a year or more refrigerated and unopened.

I had to find another recipe. These would be too bland for me. No salt no spices.
You can add salt and spices to taste.
I'm gonna try to make the beets and add the eggs at the same time. I'm gonna let them sit about a week before I try them. I'll comment and let you know how it turns out. I love pickled beets as much as the eggs.
Yes, please let me know how your pickled eggs turn out. Mine were tinted through to the yolk, but had a milder pickle flavor than the beets.
When I make my beats I boil the beats peel them then in a pot I put 2 cups of water 2 cups of viniger and 2 cups of suger bring to a boil and poor over beats in jars! Put them in a boiling pot of water cover and boil. Take them out and when there cool there ready to eat! :) and mmm mmm their good! :)

is there a reason why you cant make a 50/50 mix of water and vinegar to add to the jar instead of the extra step of pouring the water in a measuring cup and then hoping to remember what half of the measurement was to remove from and add the other half of vinegar to?
+silverdragon61288 Excellent question. You can make a 50/50 pickling solution of water and vinegar sweetened to taste with sugar. The issue is knowing how much to make so you do not have too much left over or too little. The size of the beets, jar size, slice thickness, and how many beets are in each jar affects the amount of liquid needed. You can assume 2 cups of liquid per 32 ounce jar or 50 percent of your jar's capacity. With the current price of water, vinegar, and sugar, making more than you need is inexpensive. When adding sugar to cut the acidity, warm the water to dissolve the sugar. Thank you for your question.

44 mg of sodium doesn't seem very low. Is this from the beets or the vinegar or what?

For best flavor 1 to 3 weeks, but they can be eaten within a few hours. The flavor won't be as intense.
Don't dump it into the sink. Use it to make soup.

Don't you need gloves when handling the beets, e.g. when peeling and slicing them after cooking? I have never done anything with beets, but people say that it takes weeks to get the red color off your hands. Or does that only apply to raw beets?
Gloves will prevent stained hands when making a lot of beets, but I've pickled several pounds of beets without gloves and didn't have any problems with hand stains. Stained clothing is another issue. You can get stains from raw and cooked beets.

can I use a potato peeler to skin the beets before boiling them
You can, but you retain more nutrients leaving the skin on while cooking. The skin comes off easily when fully cooked.
Is it ok to drink the brine once I have eaten all the beets?
Being 50 percent vinegar, I would not recommend drinking it in large amounts.

Refrigerate for how many hours?
I usually refrigerate the pickled beets at least a week after making them to enhance the flavor, but you can eat them the next day.
Do you need to keep the beets refrigerated for their shelf life of a year as you mentioned, or can you place them in a cold room shelf after a week in the fridge. Thanks. 🍻
This process is not hot water bath canning so the jars must be refrigerated to prevent bacterial growth and spoilage.
Can l use brown vinegar or its strictly white
White sugar is generally used for a neutral sweet flavor. Brown sugar contains molasses. I am not aware of anyone pickling beets using brown sugar.

My mistake. I've never heard of brown vinegar. Balsamic vinegar could be classed as brown vinegar but some have less than 5% acidity shortening shelf-life. Any acidic vinegar can be used for pickling as long as you like the flavor of the end product.

How soon can you eat the beets?
+nyslor1982 I recommend allowing the beets to pickle at least 7 days to develop the flavor. You can eat them sooner. The flavor intensifies the longer the beets are in the pickling solution. Thanks for asking.

Beets can be cooked until crisp or soft.
this method produces nice soft beets. you could probably have crunchy if you don't cook them first.

You'll have to use hot water bath canning to evacuate the air and create a vacuum.
Can you use something besides vinegar?
Citric acid will work. I do not know the ratio or how it will taste.
