Gourmet Blueberry Muffin Cookies You'll LOVE

  • These gourmet blueberry muffin cookies are HUGE and full of flavor! They are packed full of fresh blueberries and crisp, crumbly streusel. Just like the muffin, but in cookie form!

    Ingredients
    Streusel
    6 Tablespoons unsalted butter (85g)
    1 ¼ cups all-purpose flour (155g)
    ½ cup light brown sugar, firmly packed (100g)
    ⅓ cup granulated sugar (65g)
    ¼ teaspoon salt
    Cookie Dough
    ½ cup unsalted butter, softened (113g)
    2 oz cream cheese, softened (57g)
    ½ cup granulated sugar (100g)
    ¼ cup light brown sugar firmly packed (50g)
    1 large egg, room temperature preferred
    1 teaspoon vanilla extract
    2 cups cake flour (225g)
    1 Tablespoon cornstarch
    1 teaspoons baking powder
    ½ teaspoon salt
    1 cup fresh blueberries (158g)
    Glaze
    ⅔ cup powdered sugar (83g)
    1 Tablespoon milk, plus additional if needed

    Instructions
    00:00 Introduction
    00:22 Preheat oven to 350F (175C) and line a baking sheet with parchment paper. Set aside and prepare streusel.
    Streusel
    Cut butter into pieces, place in a microwave-safe dish and heat in the microwave in 15 second intervals, stirring in between, until melted. Set aside to cool a bit.
    00:33 In a medium-sized mixing bowl, whisk together flour, sugar, brown sugar, and salt.
    01:10 Drizzle melted butter over the flour mixture and use a fork to toss and claw the ingredients together until you have a crumbly streusel. Set aside while you prepare the cookie dough.
    Cookie Dough
    02:27 In a large mixing bowl (or bowl of a stand mixer), combine butter, cream cheese, and sugars and use an electric mixer to beat until well-creamed, light, and fluffy (at least a minute on high speed).
    03:40 Add egg and vanilla extract and stir until completely combined.
    04:04 In a separate mixing bowl, whisk together flour, cornstarch, baking powder, and salt.
    05:10 Gradually add the dry ingredients to the wet, stirring on low-speed until just combined.
    05:50 Add blueberries and use a spatula to gently fold into the batter until well distributed.
    06:25 Scoop dough by level 1 ½ Tablespoon sized scoop and drop on prepared baking sheet.
    06:43 Grab a handful of streusel (about a heaping tablespoon) and press firmly onto the top of the cookie dollop. Scoop another level 1 ½ Tablespoon-sized scoop of dough and drop directly on top of the streusel. Portion out another handful of streusel and press gently but firmly on top of the dough to slightly flatten the cookie and to embed the streusel into the cookie.
    08:03 Repeat with remaining cookie dough, spacing cookies at least 2” apart on baking sheet.
    09:32 Bake in center rack of 350F (175C) oven for about 15 minutes and a toothpick inserted in the center of the cookie comes out clean or with moist crumbs. Allow to cool completely on baking sheet before drizzling with glaze.
    Glaze
    10:09 Combine powdered sugar and 1 Tablespoon of milk and whisk until smooth. If too thick, add additional milk, a splash at a time, until smooth.
    10:56 Drizzle glaze over cooled or mostly cooled cookies. Allow to solidify before serving.

    1:01 just finished making these and they are delicious. I found it much neater, easier and quicker to drop the first cookie on the pan then instead of trying to get the streusel on both , I rolled the second scoop in the streusel then pressed onto the first scoop. Puts streusel in between and on top. Not so messy and came out delicious

    I made these once, and they were gone the next day! I will be making them again for the 4th. They are sooo good. One of the best cookies I’ve ever had, if not the best.

      Try adding a teaspoon of cinnamon to the dough and replacing the milk in the icing with lemon juice.😋 It took these to the next level.

    I would put a round cookie cutter down, fill with the cookie & streusel layers until you can ensure that it stay put, (without pressing down obviously) then remove cookie cutter & do the next one. Suppose spray cutter with oil so it does not stick.

    I would do every scoop of dough with the streusel in a cup.
    Let the kids combine those.
    Then stack two on the sheet straight from the cups.

    Made these and they are wonderful. Be sure to use cake flour in the cookie dough. I added about a tablespoon of lemon zest.

      @Dona 4 Him it's not. Self rising flour is basically all-purpose flour with baking powder and salt. Cake flour is flour that has cornstarch, lower in protein, and very finely milled. The only difference between the 2 is the added leavening

    That might just be the best reaction I've seen you have while tasting one of your bakes, there's no way I cannot make these after seeing that! I do have a question. Have you tried making these with chilled dough? I'm just wondering if I don't make them all at once and refrigerate the leftover dough whether I could bake using the chilled dough or if I should set it out to get up to room temperature first.
    Oh, and "Like a streusel-making tiger..." Love it!

      🤣 I hope you love them! I haven't baked them after chilling. I think it could work. They may not spread quite as much, but if you wanted to be safe you could just let the dough come back to room temperature. :)

      Lol I made them too big! Had 8 cookies instead of 11. Still delish but had to bake more like 17 min

    Ok, its midnight and I just finished baking the cookies and gobbled up 3 of them already. They are delicious! My only critique is I had way too much crumble left over and enough to use for multiple times. For the drizzle, I felt I didn't have enough for each cookie. I struggled with it, I could have used a little more. It came out slightly on the sweet side but delicious, very soft, and the blueberries in there are an amazing asset! I used the 1/4 cup scoop for the cookies to dish onto the pan because I dont have an ice cream scooper. I will definitely be baking this again! Thank you for the recipe! 🎉

    The texture of these cookies are excellent. But, I thought, they were lacking a little flavor. I added a teaspoon of cinnamon the second time I made them. It paired really well with the berries. I also tried lemon icing on half and will be using that from now on. These are addictive.

      Oh, they really aren’t finicky! They’re a little bit messy, but not finicky at all. In fact, that’s part of the beauty of them. I think they would lose a lot of their appeal and the proper texture in a brownie 10. I don’t wanna say it can’t be done I just don’t think it would be as good if that makes sense.

      Ooh good question! I haven't tried with anything else yet, other berries may work but you have to watch their moisture level. Definitely worth experimenting!

      Strawberries are a bit of a difficult fruit to work with here. They could make the cookie more cookie and maybe turn slightly mushy as they sit.

    These really were all they were talked up to be! At first I forgot the glaze and thought it would be sweet enough without but I did like them better with it! I was just wondering if I could freeze them???

      Ooh good question and hard to say without having tried it. I'd start with a Tbsp of zest at least, and if you have lemon extract subbing or adding that in addition to the vanilla extract would also help!

      Someone else said this too and they're really not so I'm sorry if I've mis-represented the effort level! It's literally as simple as making a batch of streusel-topped muffins. It's easy enough we made them about a dozen times last week 😂

      Not really, the dough and streusel are both quite straightforward and the recipe comes together quickly. You could double the recipe or even triple if you'd like to get more bang for your time. Also, remember this makes a dozen BIG cookies, so it's no more work than making cupcakes and the results are possibly even more satisfying 🙂
