  • This fish “Rockling” has a big head and unique color!!
    I’ve never seen the fish in Japan. I heard it’s roughly categorized as a group of cod.
    It’s usually sold as fillets at markets in Melbourne, but I believe a whole Rockling is rare. The taste is light and the flesh is solid and less fatty compare to cod.
    I made Saikyou-zuke with Rockling but not good because it’s almost no fat. I think the fish will be good for Tempura and Meunière.
