I didn't follow your exact recipe but I added just three ingredients to my cucumbers. Soy Sauce, Salt, Red Chilli Powder. It turned out really tasty but I added way too much chilli😂. So addicting that I made it two times!
i have tried it out an as an asian i had everything but my friend who is american didnt have these and i said to use soy sauce,garlic,sesame seeds, normal vinegar salt, sugar and she said it tastes amazing both ways and i agree so if you don't have all those extra ones at home try it with. only these ingredients

Its actually also served in Korean restaurants. I forgot the name but they come in the little dishes along with kimchi. Very tasty!
“Banchan” i believe is the romanized spelling of the term for those little side dishes!

Yes but i would add to taste as different vinegars have various acidity levels.

Just put it between something that won’t make the knife touch the surface. The chopstick just prevent the knife from cutting through
