Legumes contain phytates, which are not inflammatory. Grains are inflammatory, including noodles, made with wheat flour. PUFA oils like soy, corn and canola are inflammatory.
A tip: Do not throw away overnight soaked water... Water it to plants it acts as a fertilizer. I am pure vegetarian and in India this practice is being followed from decades.
Yes, I always use all soaking water with veg, rice or other grains, and even when I soak my pots overnight that I cooked in …lots of nutrients for the plants!

I am a vegetarian and lived in a village in Iran for a few years. The village would get together and make Aash rishte for me, yes it had Kashk and loads of fried garlic, seer daagh. They also put chokunder and its leaves, beetroot and leaves of the bulb. Thanks for bringing back my memories of this great dish and lovlier people of Naqlak who made my life wonderful. ❤

I learned about this recipe from a friend. Her Persian mother in law made this soup. I was so taken by this I learned to make it myself. It is so wonderful!
Pro tip, when serving mash like 2-3 cloves garlic into the yoghurt along with some salt and water to give a runnier texture, it makes this dish so much more nicer. You can use the fermented dairy product but we typically do this and it’s easier for those that are plant based, don’t skip that step cause it makes it 10x nicer imo.

Growing up in Kuwait, we used to regularly eat a dish similar to this, simply called Aash, prepared by Afghani workers in small shops- the taste is just amazing & I simply love eating these. Thanks a million for sharing this recipe here.

I always suspected you had roots in Iran:)) As an Iranian who loves Aush resheh with her whole heart, I am SO EXCITED to see this oh my God!✨ p.s, my mom starts cooking any type of aush in the morning on very low heat, and leaves it to cook until evening. Clearly not the best option if you're not home most of the day, but if you have the time and want to make it extra traditional and as my mom says, reduse gas even more, try leaving it on the stove from morning:))

I finally asked my dad to show me how he makes aash last year! He uses great northern beans, pinto beans, and brown lentils. Family friends of ours use chickpeas and other beans. My dad also uses SO MANY noodles that the soup gets super thick 😂 no one else I know makes it like that.
I remember my mom would make this when I was younger, but she always just used regular spaghetti noodles. This is how we broke our fast during the ramazan month. Love this channel!

Love your recipes ! Just wanted to share a secret of cooking beans thats works a treat for me. Gas from eating beans comes if I dont cook them beans enough, soaking water is irrelevant. So on common pot and lid, cook for at least 60 mins, never less. If the beans you are eating are delicious and creamy, but you still having issues, try cooking them further 10 mins or try removing other stuff from the recipe, like onions or fructan containing ingredients you mixing in de pot. bonus tip: Salt your soaking water at 2%, overnight, then discard the brine and rinse the beans. No need salting when cooking unless you really want to
My wonderful neighbors are Persian. They make us food all the time including Aush. Their rice dishes are amazing!! They even make them vegan for us. Best neighbors ever!!!!

In Syria and the Levant we have a dish called reshteh! I thought it’s similar to this one until I tried the Persian/Afghan Aush Reshteh when my boyfriends mom cooked it (they’re Iranian) and it tasted completely different. Both are delicious, ours has lentils and a lot of onions, tamarind, pomegranate molasses, cilantro and a type of wild green herb.
I enjoyed this soup at Persian restaurants never thinking that I can actually make it myself 🤭 You lifted my confidence level a few notches because I realized watching your video (20 times) 😅and making it myself, made me feel proud of myself 😁 many thanks and I can’t wait to make it again and again 🥰 😊

Surprised there was no mention of the dangers of undercooked beans - although your soaking and cooking methods would totally eliminate the danger, your videos are always otherwise so informative.
I’m Hispanic trying to avoid meat. I just tried this recipe and it was amazing and most importantly filling. I didn’t include the dried mint leaves because they didn’t have it at the store. Never used turmeric and when I added it to the grilled onions and garlic, wow just good. Making this my new weekly meal!

This goes so close to Indian Bissi Belle Bhath.. It's a mix of legume (Dal), veggies (so many variety) & rice (Indian staple carbs, along wheat roti). You should look it up. Love your videos as always, I dream of a kitchen like yours in my future - pls do a Kitchen tour.

Oh I never thought I would see aush reshteh on your channel😅 I love it! All Persians do indeed. But I stopped making it after moving out of the country since I don’t have access to Kashk anymore. Kashk is the heart and soul of this dish and should not be skipped (unless you’re vegan of course)!

Gluten free tip: I love using lentil spaghetti in soups and stews because they don't overcook. They are also very delicious. I haven't made this one yet, but it looks amazing. Persian food is some of the best I have tried and I don't say that lightly.❤

In Syria and the Levant we have a dish called reshteh! I thought it’s similar to this one until I tried the Persian/Afghan Aush Reshteh when my boyfriends mom cooked it (they’re Iranian) and it tasted completely different. Both are delicious, ours has lentils and a lot of onions, tamarind, pomegranate molasses, cilantro and a type of wild green herb.
I enjoyed this soup at Persian restaurants never thinking that I can actually make it myself 🤭 You lifted my confidence level a few notches because I realized watching your video (20 times) 😅and making it myself, made me feel proud of myself 😁 many thanks and I can’t wait to make it again and again 🥰 😊

Love seeing you encourage cooking beans from dry - SO much better tasting and less waste from all that packaging. Surprised there was no mention of the dangers of undercooked beans - although your soaking and cooking methods would totally eliminate the danger, your videos are always otherwise so informative.
Undercooked beans are almost inedible so hopefully that wouldn’t be a problem
I’m Hispanic trying to avoid meat. I just tried this recipe and it was amazing and most importantly filling. I didn’t include the dried mint leaves because they didn’t have it at the store. Never used turmeric and when I added it to the grilled onions and garlic, wow just good. Making this my new weekly meal!

This goes so close to Indian Bissi Belle Bhath.. It's a mix of legume (Dal), veggies (so many variety) & rice (Indian staple carbs, along wheat roti). You should look it up.

Oh I never thought I would see aush reshteh on your channel😅 I love it! All Persians do indeed. But I stopped making it after moving out of the country since I don’t have access to Kashk anymore. Kashk is the heart and soul of this dish and should not be skipped (unless you’re vegan of course)!

Gluten free tip: I love using lentil spaghetti in soups and stews because they don't overcook. They are also very delicious.
