A tip: Do not throw away overnight soaked water... Water it to plants it acts as a fertilizer. I am pure vegetarian and in India this practice is being followed from decades.
Yes, I always use all soaking water with veg, rice or other grains, and even when I soak my pots overnight that I cooked in …lots of nutrients for the plants!

I am a vegetarian and lived in a village in Iran for a few years. The village would get together and make Aash rishte for me, yes it had Kashk and loads of fried garlic, seer daagh. Pro tip, when serving mash like 2-3 cloves garlic into the yoghurt along with some salt and water to give a runnier texture, it makes this dish so much more nicer. You can use the fermented dairy product but we typically do this and it’s easier for those that are plant based, don’t skip that step cause it makes it 10x nicer imo.

Growing up in Kuwait, we used to regularly eat a dish similar to this, simply called Aash, prepared by Afghani workers in small shops- the taste is just amazing & I simply love eating these. Thanks a million for sharing this recipe here.
Those Afghanis until the late 19th century were part of the empire that was Persia. That is why they have more or less the same quisine, and yes in Tehran any thick broth is called Aash and there are many different varities of it.
I’m making aush now. I live in an RV with little counter space which makes this recipe a little time consuming but it will be worth it. Thank you for your time and energy to make these videos.

Here in Canada much of the diet centres around meat, stews etc. I suppose thats partly from living in a colder climate and the limited growing season of 3 months. In Syria and the Levant we have a dish called reshteh! I thought it’s similar to this one until I tried the Persian/Afghan Aush Reshteh when my boyfriends mom cooked it (they’re Iranian) and it tasted completely different. Both are delicious, ours has lentils and a lot of onions, tamarind, pomegranate molasses, cilantro and a type of wild green herb.
So chuffed to see you make one of my favourite Iranian meals...I loved your video about Afghani dishes. The lady who used to look after me when I was a child was Afgani and made me those amazing foods such as Borani and Ashak and Qabuli polow and she used to love it when my mum (Iranian) made Aush reshteh!!! Aush reshteh is one of 400 aush recipes made across Iran, there is even a Aush festival in Tehran during winter were you get to taste a range of aush. Aush is the core and most staple persian meal, and before modern westernisation of diets, it was the main meal. Like you said, Aush is in the name of both the cook Aushepaz and kitchen, Aushpazkhane! I likely recommend everyone incorporate aush into their weekly diet! 😘😘

I finally asked my dad to show me how he makes aash last year! He uses great northern beans, pinto beans, and brown lentils. Family friends of ours use chickpeas and other beans. My dad also uses SO MANY noodles that the soup gets super thick 😂 no one else I know makes it like that.
This is one of my favorite soups. I have been making it for years. A Persian friend of mine had me try some and I was hooked . So she gave me the recipe , she adds some cubed beets also. Delicious .

I always suspected you had roots in Iran:)) As an Iranian who loves Aush resheh with her whole heart, I am SO EXCITED to see this oh my God!✨ p.s, my mom starts cooking any type of aush in the morning on very low heat, and leaves it to cook until evening. Clearly not the best option if you're not home most of the day, but if you have the time and want to make it extra traditional and as my mom says, reduse gas even more, try leaving it on the stove from morning:))

I’m Hispanic trying to avoid meat. I just tried this recipe and it was amazing and most importantly filling. I didn’t include the dried mint leaves because they didn’t have it at the store. Never used turmeric and when I added it to the grilled onions and garlic, wow just good. Making this my new weekly meal!

Gluten free tip: I love using lentil spaghetti in soups and stews because they don't overcook. They are also very delicious. I haven't made this one yet, but it looks amazing. Persian food is some of the best I have tried and I don't say that lightly.❤

I absolutely love how you always find a way to incorporate diverse culture into your cooking. My kids have been able to enjoy tasty vegan food from around the world because of your app! FYI, our household favourite so far is Robin’s Indonesian Soto Ayam soup recipe. Sooo good!

p.s, my mom starts cooking any type of aush in the morning on very low heat, and leaves it to cook until evening. Clearly not the best option if you're not home most of the day, but if you have the time and want to make it extra traditional and as my mom says, reduse gas even more, try leaving it on the stove from morning:))

I’m Hispanic trying to avoid meat. I just tried this recipe and it was amazing and most importantly filling. I didn’t include the dried mint leaves because they didn’t have it at the store. Never used turmeric and when I added it to the grilled onions and garlic, wow just good. Making this my new weekly meal!
My father-in-law used to make this dish. It was delicious. I miss it. He even gave me the recipe but I had lost it. Thanks. 😊

I would use olive oil but other than that change, this recipe is delicious. Some of us in the US don't always eat healthy enough because frozen dinners etc with all the nasty chemicals are always available. I'm new to your channel. Thank you!
I use Japanese soba noodles or buckwheat noodles. It's less salty and still delicious.

Gluten free tip: I love using lentil spaghetti in soups and stews because they don't overcook. They are also very delicious.

Love seeing you encourage cooking beans from dry - SO much better tasting and less waste from all that packaging. Surprised there was no mention of the dangers of undercooked beans - although your soaking and cooking methods would totally eliminate the danger, your videos are always otherwise so informative.
Undercooked beans are almost inedible so hopefully that wouldn’t be a problem
