    I’ve always washed my mushrooms. Lots of dirt on them. And I love vege soup. I add chick peas, black/red beans, pasta along with tons of vegetables. Great video. Thanks.

    I wash my mushrooms too. 😊 My daughter won’t eat them if she finds a speck of dirt. Thanks for the inspiration today. I’ve gotten lazy on meal prep with our crazy summer schedule but now I’m feeling like I can do this today!

    I improvised a recipe yesterday, and I wanted to share. It's REALLY good:)
    Lemon-Pepper Lentil Soup
    500g lentils, cooked in a generous amount of water
    Puree in the vitamix or food processor:
    1 hot jalapeno pepper, or a habanero pepper
    3 red and/or yellow bell peppers
    2 onions (about 12 -16 ounces)
    3 whole lemons, peeled (about 6 ounces, removing seeds if desired)
    Add that puree to the cooked lentils and bring to a boil again for about a minute, stirring gently to prevent sticking.
    Add to the pot while stirring: (all quantities are to taste, adjust as you wish)
    garlic powder, generous (1 TBSP)
    cardamom, a few dashes (1/2 tsp)
    allspice, a dash (1/8 to 1/4 tsp)
    Mrs. Dash Original salt free seasoning (or equivalent) generous (1 - 2 TBSP)
    ground sage, a few dashes (1/2 tsp)
    coriander seed, ground, a dash (1/4 tsp)
    chinese 5 spice, tiny dash just for SUBTLE licorice and fennel notes (do not use much!) (1/16 - 1/8 tsp)
    Then add until combined:
    12 oz tomato paste.
    Adjust thickness of the finished soup with water or vegetable broth.
    Notes: tomato paste is optional, fresh or canned tomatoes can be used. Salt as desired. Soup should be thick, but if you want a thin soup, use vegetable broth or veggie bouillon to boost flavor. Celery juice, tomato juice, V8 Juice, or onion puree works well to thin the soup out without diluting flavors.

      So glad it was helpful Laura! We love the creaminess it adds... it also helps to add the plant milk directly to the jar and shake it up to get all the last bits of sauce out. 😅

    Mushrooms stored in a paper bag last weeks in the fridge (old grocer’s trick… that’s why paper bags are available by bulk mushrooms BUT the paper bag adds to the price so put in a plastic bag and transfer to paper once you’re home).

    Maddie, I love ❤️ Just Egg liquid. I missed the time and temperature fir the “egg cups”! Loved this! One day when I open my fridge, it will look like yours! 😊

      Isn't it handy!? I always find it turns out well when I cook with it. 😊 350F for 25-30 mins. for the egg cups! And let them cool and set for another 15-20 once out of the oven. 🤗

    Welcome back, Maddy. Nice to see a little snippet of baby plant. This is my kind of prep. I have to know what the recipes are going to be. I don't do well with just random pull things out of the fridge. If I need onion for a couple of recipes, I'll cut them how the recipe indicates (like you mentioned) to use later. I wash mushrooms, too, but I rinse them off under a slow trickle of water. It's why I don't buy pre-sliced mushrooms. Soups are year-round for me, too. It's just a hot dish like eating pasta with sauce.

      Thank you Cyndi! Oh yes, definitely helps to know the recipes beforehand. I like to plan a few out for the week.. but I do also do the random throw together with leftovers in the fridge too. 😂😂 (The soup is great for that. Stir frys too!)

    I always wash my mushrooms. They really need it. Yes, I wash my chicken in vinegar water as well, if there is any yellow on the skin I scrape it off and I feel great about it. Thank you for sharing.

    Love this. I’m disabled, so I don’t have the energy to be on my feet for too long, which means that I end up cheating and eating whatever I can order. Not ideal and definitely not healthy.

      I hear you! This kind of prep is perfect then as it only takes about an hour (or less!). But pre-washed veggies can be a good option too! And frozen. 😃 We do both of those as well and they really help to have healthy options in a pinch!

    It's good to see you back at it, Maddie! I saw a meme today about how some daughters are raised in a way that they can't be dragged back to the kitchen. My response was "And some daughters actually ENJOY being in the kitchen!". It was cool to see you make eggs cups, because I know we were talking about something like that, before.       Hahaha I really hope baby girl loves to be in the kitchen!! She'll definitely be getting a lot of exposure to it in her first few years of life. 😂 YES! The mung bean egg cups are still on my list to experiment with. The JUSTEgg works in a pinch, but it's expensive here! I'm surprised mung beans are expensive where you are! Have you tried an Asian market or online?

How did your egg cups turn out, BTW? I was hoping you would show us the finished product. I wonder if split mung beans are so expensive because they are popular amongst the vegan crowd? You know companies will take advantage of any trend, unfortunately...At King Soopers, they are $16.99 for a two pound bag (organic). I did look around to the ethnic stores for other options. Fortunately, my apartment complex is right near a number of them. The Indian grocery store sells a greater quantity for about the same price, if I remember correctly. I didn't think to look at the Chinese shop, but the lady who runs it is not very nice to me, so maybe I'm better off sticking with the Indian store, anyway. The guy there is really nice.       @@LetsEatPlants That's good that the egg cups turned out well. Ah, I totally understand :) Yeah, it's very pricey. I'm disabled and my income is very low, ATM, so I'm reliant on food stamps. I don't see anything on Amazon that would work with that, unfortunately. Also, I'd have to either get Prime or order $35 worth of stuff, to make that work. So, either way, it wouldn't be less expensive for me. Thanks, though :)

    I am team wash mushrooms! I also have some lettuce that is not washed in my fridge…and I ‘m not eating it!! Meal prep is essential!

    what's the drying time like?? can I just store them after a few minutes or do I wait hours with them in their containers without lids on on the counter??

      I usually wait around 20 mins... usually the amount of time it takes me to finish cleaning up! But basically just look for them to be dryish. Another way to speed it up if you're in a hurry is to use paper towel or kitchen towels in the container to help absorb excess moisture. I do that especially with leafy greens! But a small bit of water in there is fine. 😊😊

      350F for 25-30 mins! Basically just look for them to be "set". With a watery veg they may look a little jiggly still, but they will firm up after they're out of the oven. 🤗

    Cooking the mushrooms right before eating unlocks the nutrients inside the mushroom -- Raw doesn't give you the best benefit.
