Steamed Scallion Buns, or Hua-Juan, feel like an upgraded version of Mantou to me. Their savory flavor and fluffy texture make them the perfect breakfast treat. I absolutely love starting my morning with scallion buns! My secret to making the best ones? Pouring hot sesame oil over the chopped scallion filling-gives them an incredible aroma that’s simply irresistible.

食材 Ingredients▼
○麵團 Dough
中筋麵粉 300 g
all-purpose flour, 300 g
水 150 g
water. 150 g
砂糖 20 g
sugar, 20 g
酵母 3 g
instant yeast, 3 g
鹽 1/4 小匙
salt, 1/4 tsp
橄欖油 1 大匙
olive oil, 1 Tbsp
○蔥花餡 Filling
蔥花 1 把
scallion, 1 bunch
麻油 1 大匙
sesame oil, 1 Tbsp
鹽 1 小匙
salt, 1 tsp
白胡椒粉 1/8 小匙
ground white pepper, 1/8 tsp

●Making the Dough
1. In a mixing bowl, add water, oil, sugar, yeast, flour, and salt.
2. Mix all ingredients on low speed for about 3 min initially.
3. Continue kneading on medium speed for about 5 min.
4. Shape the dough into a ball.
5. Coat the mixing bowl and dough with vegetable oil.
6. Cover and let the dough rise for 60 min.
●Making the Filling
7. Add sesame oil to a saucepan over low heat.
8. Chop a bunch of scallions into small pieces.
9. Pour the heated oil over the chopped scallions in a bowl.
10. Add salt, and ground white pepper.
11. Mix well.

12. Place the dough on a baking mat.
13. Press and roll out the dough into a rectangle about 0.5 cm thick.
14. Place the scallion filling on the dough.
15. Spread the scallion filling evenly over the dough.
16. Fold the bottom third of the dough up to cover the filling.
17. Fold the top third of the dough down to enclose the filling.
18. Gently roll out the thickest part of the dough to even it out.
19. Divide into 16 portions.
20. Cover with a damp cloth and let the dough rest for 15 min.

21. Stack two pieces of dough on top of each other.
22. Press down the center lengthwise with a chopstick.
23. Remove the chopstick and stretch the dough lengthwise.
24. Thread a chopstick through the middle of the dough and lift it.
25. Hold the ends of the dough and twist the chopstick around once.
26. Press the chopstick down to secure the ends of the dough, then pull it out.
27. Repeat the steps to finish 8 rolls.
28. Prepare 8 small square pieces of baking paper and place one roll on each.
29. Place the rolls in the oven with the light on and a cup of hot water next to them to proof.

30. Transfer the rolls to a plate that fits in a Tatung cooker.
31. Add a cup of water to the Tatung cooker.
32. Place 4 rolls into the Tatung cooker at a time.
33. Cover and start steaming. Steam for about 15 minutes.
