💡 台灣朋友請注意: 有酮學反映用烘焙坊
買的乾燥蛋白粉做不成功,而在蝦皮買的一個牌子叫”永銓蛋白粉”就做成功了💪🏼
💡必須將蛋白打發至非常非常堅挺的乾性發泡,這有助麵包發起並做出蓬鬆感。舉起打蛋器,檢查蛋白是否尖銳挺直不下垂。
💡乳清蛋白粉、豌豆蛋白粉、小麥蛋白粉等因含有脂肪,將無法打發起來,因此不適用於此食譜
💡不建議用其他生酮甜味劑代替阿洛酮糖,因為阿洛酮糖的作用是令麵包更柔軟。
💡雲呢拿香精的作用是掩蓋蛋白粉中強烈的蛋腥味。
做法:
1. 將酵母、菊粉和30毫升溫水 (40°C以下) 混合。靜置10分鐘發酵,確保酵母有活性。
2. 酵母混合物、加入蛋清蛋白粉、阿洛酮糖、檸檬汁、130毫升水、少許鹽和雲呢拿香精。高速打發直到乾性發泡。
3.將麵糊轉移到麵包盤中,在溫暖的環境中讓它發酵45分鐘,麵糊將發大約兩到三成。同時將烤箱預熱至160°C。
4. 160°C烤30分鐘(中途用鋁箔蓋住麵包,以免頂部過度燒焦)。
5. 關掉烤箱後,將麵包留在裡面一小時,請不要打開烤箱,讓麵包逐漸冷卻和定型。

Ingredients:
3g instant yeast
30g + 130g water
1tbsp inulin powder (or 0.5 tbsp sugar/honey)
60g egg white protein powder amzn.to/3Q2xcF3
20g allulose
1 tsp lemon juice/apple cider vinegar (or 0.5 tsp cream of tartar)
1/3 tsp vanilla extract
Pinch of salt
💡Beat the egg whites to very very stiff peaks as it helps the batter rise better.
💡I do not recommend substituting allulose with other keto sweeteners, as allulose helps a lot in giving the bread a soft texture and a beautiful brown colour.
💡Vanilla extract is used here to cover the strong eggy smell that naturally comes from the protein powder.
Instructions:
1. Mix yeast with inulin powder and 30ml of warm water (below 40°C). Set aside for 10 mins for proofing, make sure the mixture turns foamy.
2. In a large mixing bowl, add yeast mixture, egg white protein powder, allulose, lemon juice, 130ml water, a pinch of salt and vanilla extract (optional). Beat on high speed to very stiff peaks.
3. Transfer the batter to a bread pan and let proof for 45 mins in a warm environment. The batter will rise around 20-30%. Preheat the oven to 160C meanwhile.
4. Bake at 160C for 30 mins (around 15 mins in, cover the bread with aluminium foil to avoid overly browning the top, if necessary).
5. After switching off the oven, leave the bread inside for an hour for gradual cooling and setting. Enjoy!

I've experimented and modified here and there to create my own version of this keto bread that has the shortest possible ingredient list and requires absolutely no skills, and still turned out with a soft and fluffy bread loaf (that’s not dense nor chewy at all). I hope you would like it :)

Got it.
Do beat the egg whites to really really stiff peaks for a fluffy loaf of bread, this could take some time (15-30mins) depending on the speed of your electric hand mixer 😉
I made this today! Aug28,2023.
It turns out exactly like this video! Fluffy, airy and crunchy on top. 🎉 It's perfect!
But on the down side,
1) unfortunately it has strong eggy smell..
2) Also when chewing, the texture tastes dry like eating sponge..
This is my third keto recipe on RUclips that I try (from multiple channels).. I'm going to keep trying.
Regardless, I am happy the final result turns out great! 🎉

Hi Erin! I’m afraid we cannot skip the egg white powder in this recipe as this is what gives the bread a more bread-like texture. Try looking on Amazon maybe? Some people got Judee’s dried egg white there

Thanks for this recipe. It looks very, very good. I will try it because I have never used yeast as a rising agent for keto bread ever before. I have tried some of the other RUclips variations to Maria's protein bread in the past with mostly good results. (Though it's true: some of the recipes I've tried have more of a "memory foam" loaf texture than others...) But I am extremely excited to see your new recipe as YOUR bread texture really looks like real bread and not at all like dense "memory foam". One other thing: I have never gotten a good result with toasting my protein bread slices in a normal bread toaster. It burns black really FAST and I always get a terrible smell like when your hair accidentally catches fire (Ugh!) Strangely enough though, I don't have this problem when I toast/roast my slices in my Philips Air Fryer. Would you happen to know why this is? By the way: thanks for the beautiful video. Short, clear, precise & to-the-point with no unnecessary off-subject "blah-blah-blahs"! Great editing also 👍👍👍
Hello, thanks for the kind words! The protein bread does turn black faster than regular ones (especially because we’ve used allulose), I usually turn my bread toaster on a lower heat so it will toast slowly and nicely :) also, it’s important to beat the egg whites to very, very stiff peaks so the bread will turn out fluffier, and with the help of the yeast, the texture will not be dense nor chewy at all. I hope you would enjoy it! ❤️

Thanks for sharing it looks great only thing that has stopped me from making the egg protein bread recipes is that it looks like they might feel like memory foam and that might be an issue for me. Did you get a memory foam feel from this?
Hi there! The instant yeast is what makes a huge difference here. By adding the yeast and letting the batter sit and proof, the bread will turn out very soft and fluffy and it doesn’t feel like memory foam like some other egg protein breads do. Some people find this bread a little dry though, and I would suggest adding a little oat fibre /or egg yolk powder so the bread would turn out more moist, do check out my other video where I experimented with these ingredients :)

Great video thank you for sharing ..not sure where I went wrong mine came out very hard, shrunken and dry not like yours :-( does your oven have a fan? ...mine is a fan oven so I will try again with reduced temperature (maybe 145C) and keep an eye on it
I had the same problem and I had to reduce the oven to 300 F from 320F . I also open the door after it finishes the 30 minutes and just leaves it for 10 minutes. My texture is not as pretty as in the video, so I may be changing my egg whites brands

So this does not have that memory foam texture? It looks much lighter and fluffier than Maria Emmerich's recipe.

Love your recipe, can I use fresh egg white to replace the egg white powder ? If so, how much should I use?
the result will be different. Powder makes this bread super light. but if you use fresh eggs will make this bread eggy and wet.

我一夠鐘就打開個爐拎左出嚟
是否因為咁所以失敗?

Hello Po Yi~放焗爐入面等麵包慢慢降溫呢個步驟比較重要,因為如果麵包快速降溫就有機會回縮架~記得全程用最高速打蛋白💪🏼

你好,謝謝你喜歡這個食譜😃阿洛酮糖在這裏的主要用途不是它的甜味,而是使麵包更柔軟,而且烤出來會有金黃色,如果沒有的話可直接省略,但注意麵包柔軟度會差一點😉

Instant yeast needs warm water and inulin? I thought only dried active yeast needs warm water and baking soda needs sugar....
Hi Kent! We do need a tiny bit of inulin/sugar to activate the yeast in a low carb recipe, because there’s no carb in other ingredients in the recipe that the yeast could feed off from (unlike regular bread recipes where the instant yeast can feed off the starch from the flour). Also, it’s my usual practice to proof & hydrate the yeast with water and inulin every time before using it, the idea is to make sure it’s active so we won’t be using yeast that’s no longer alive. 😊

酵母對生酮甜味劑沒有太大反應,麵包會發不太起來做不到蓬鬆口感喔,你可用半湯匙糖/蜂蜜代替菊粉,酵母會吃掉糖份的所以不用太擔心☺️
請問阿洛同糖和阿拉伯糖是一樣的嗎?

Hi Sophia! If you only use real egg whites, it’ll end up as a soufflé, egg white protein powder is needed here to create that texture that’s closer to regular bread :)

請問前面已加了一湯匙的甜菊粉後面又加阿洛酮糖,甜菊粉是不是量太多了,麵包會不會太甜了,還是需要這麼甜才能將蛋白粉打發。
Hello~我們需要甜菊粉的糖份,酵母將它消化後會變活躍,而阿洛酮糖另外一個很重要的用途是令麵包烤出金黃色及更柔軟,這個麵包是有些微甜味的,但我覺得不太明顯😉

I tried to bake this bread unfortunately It didn't turn out as expected..I'm so sad..the batter can't achieve stiff peak even when I follow the recipe..I don't know what I did wrong
Hi Teaya! So sorry for the delayed response. It takes a much longer time to whip up egg white protein powder than fresh egg whites, usually takes me 12-15 mins on high speed, but some people say it takes them 20+ mins to achieve stiff peaks. It depends on the efficiency of your electric hand mixer. Hope this gives you a better idea 🙂

@@nguyenlamanh9558 Under-beaten egg whites could lead to the dry or chewy texture. Or you could try adding oat fibre/egg yolk powder if you want the bread to be more moist, I’ve just made a new video on that, feel free to check it out ❤️
