    來源於義大利,聖誕節麵包潘納托尼風靡全球。
    大量雞蛋和黃油的加入,讓潘納托尼
    非常鬆軟,口感似蛋糕一樣。
    泡了朗姆酒或著葡萄酒的橙皮丁、葡萄乾,讓麵包充滿了水果乾的香氣和香甜。
    傳統潘納托尼製作工藝複雜,從水式酵種的轉化、中種的製作,再到主麵團的製作和漫長發酵、烘烤和晾涼,烘焙店裡常需要3~4天才能把這個麵包製作完成。
    我通過研究後進行了多次的試驗,讓我的這個經過改良的潘納托尼食譜在家也可以容易製作。
    只需要頭天晚上準備好波蘭種,第二天當天就可以完成。
    這個麵包製作只要發酵充足,就能非常輕鬆地做出蓬鬆美味的麵包。
    探索美食,不是只有一條路,也許我們也可以用自己簡單的方式去達成。

    潘娜托尼食譜:
    1杯=200ml
    6寸模具2個
    波蘭種:
    高筋麵粉100克 (3/4 杯+4小勺)
    水100克 (1/2 杯)
    酵母1克 (1/4 小勺)
    主麵團:
    高筋麵粉340克 (2+1/2杯+6大勺)
    雞蛋2個(雞蛋帶殼60克/個)
    蛋黃2個(35克+-)
    水100克(1/2 杯)
    白糖90克 (6大勺)
    鹽5克(1/2+1/3小勺)
    酵母4克(1小勺)
    無鹽黃油160克(3/4杯+2小勺)
    果乾
    葡萄乾70克
    蔓越莓乾40克
    糖漬橙皮丁50克
    表面:
    杏仁粉 40克 (5大勺+2小勺)
    蛋清40克 (5大勺)
    糖粉40克(5大勺)
    杏仁片
    糖粉
    烘烤:
    預熱烤箱15分鐘
    180°C
    35分鐘
    Tips & 過程:
    1⃣️波蘭種:
    常溫水100克➕酵母1克,攪拌溶化,加入高筋麵粉100克,拌勻,
    溫暖處發酵30分鐘(或著到1.5倍大),
    放入冰箱冷藏一夜(10~18小時),(或室溫2~3小時)發酵到3~4倍大
    2⃣️麵團製作
    波蘭種200克➕雞蛋2個➕蛋黃2個➕水100克➕酵母4克➕糖90克
    攪勻到酵母基本溶化
    篩入高筋麵粉340克
    加鹽5克
    拌勻到麵團沒有幹麵粉
    加入無鹽黃油160克(也可以分兩次加)拌麵團3~5分鐘
    3⃣️
    麵團室溫靜置30分鐘、第一次折疊拉伸麵團開始緊繃(大約3~4圈)
    麵團室溫靜置20分鐘、第二次拉伸折疊麵團
    麵團溫暖處發酵70~90分鐘,體積2~2.5倍大。
    取出,案板抹油,用刮板輔助分切成2個,放入墊了烘焙油紙的蛋糕模具。
    發酵60~70分鐘。
    4⃣️
    表面醬:
    蛋清40克➕糖粉40克➕杏仁粉40克
    攪拌均勻,裝入裱花袋,擠在麵包表面。
    撒杏仁片
    篩糖粉
    5⃣️
    烤箱提前預熱15分鐘
    180°C
    烘烤32~35分鐘
    Recipe:
    1cup=200ml
    6 inch cake mold✖️2
    Poolish starter :
    Bread flour 100g(3/4 cup+4 tsp)
    Water 100g (1/2 cup)
    Instant Yeast 1g(1/4 tsp)
    Dough:
    Bread flour 340g(2+1/2cup+6 tbsp)
    Egg✖️2 (60g with shell/ per egg)
    Yolk ✖️2(35g+-)
    Water 100g(1/2 cup)
    Sugar 90g(6 tbsp)
    Salt 5g(1/2+1/3 tsp)
    Instant Yeast 4g(1 tsp)
    Unsalted Butter 160g(3/4 cup+2 tsp)
    Raisins 70g
    Dried Cranberries 40g
    Candied orange peel 50g
    Surface :
    Ground almond 40g(5 tbsp+2 tsp)
    Egg whites 40g (5 tbsp)
    Icing sugar 40g(5 tbsp)
    almond slices
    Icing sugar
    Bake :
    Preheat oven 15 minutes
    180°C
    35 minutes
    Tips & Process:
    1⃣️Poolish starter:
    100g of room temperature water➕1g of yeast, stir to dissolve, add 100g of high-gluten flour, mix well.
    Ferment in a warm place for 30 minutes (or until 1.5 times in size).
    Place in the refrigerator overnight (10 to 18 hours), (or room temperature for 2 to 3 hours) and ferment until 3 to 4 times in size.
    2⃣️Dough making
    200 grams of Poolish starter ➕ 2 eggs ➕ 2 egg yolks ➕ 100 grams of water ➕ 4 grams of yeast ➕ 90 grams of sugar
    Stir until the yeast is basically dissolved
    Sift in 340 grams of high-gluten flour
    Add 5 grams of salt
    Mix well until there is no dry flour in the dough
    Add 160 grams of unsalted butter (you can also add it in two times) and mix the dough for 3 to 5 minutes
    3⃣️
    Let the dough rest at room temperature for 30 minutes. After the first folding and stretching, the dough begins to tighten (about 3 to 4 turns).
    Let the dough rest at room temperature for 20 minutes, then stretch and fold the dough for the second time
    Let the dough ferment in a warm place for 70 to 90 minutes, and the volume will double to 2.5 times.
    Take out, grease the cutting board, cut into 2 pieces with a scraper, and place into a cake mold lined with baking paper.
    Ferment for 60 to 70 minutes.
    4⃣️
    Surface sauce:
    40g egg white➕40g powdered sugar➕40g almond flour
    Mix evenly, put into a piping bag, and pipe onto the surface of the bread.
    sprinkle with sliced ​​almonds
    Sift powdered sugar
    5⃣️
    Preheat the oven 15 minutes in advance
    180°C
    Bake for 32 to 35 minutes

      您好,一發麵團可以在冰箱冷藏隔夜發酵,後面整形後放入模具裡第二次發酵建議還是當天做膨脹力會好一些🥰💕🙏

      您好,這個食譜如果沒有2個6寸模具可以換成2個8寸(可能會不太滿),或著1個8寸模具(比較滿的效果),如果沒有圓模具也可以換成其他磅蛋糕或著吐司模具都可以的🥰💕

      Hi, sorry for the method I used it’s not suggested 🥰🥰🥰🥰❤️❤️❤️❤️because if you used directly it’s not good for recipe with high oil and high amount of sugar👍👍👍 if so it takes a lot more steps for the starter to transform

      Hi, yes you can use machine, but the sugar is not suggested to reduce❤️🥰🥰❤️❤️ but don’t worry, because the amount of sugar is relatively small in this amount of flour, as you can make quite a lot from this recipe👍👍👍 it’s not sweet, the taste is very mild

      您好,這款麵包因為高蛋高油,所以組織很鬆散,口感比較像蛋糕不似普通吐司,加上因為用免揉的方法所以筋度不是太高,切片不太容易呢。
