    Best chana recipe I've made from RUclips recipes, and I'm up to about 8 recipes. I decided to cook the onions and tomatoes "old school" by frying the onions and tomatoes, then cooking till the oil separates. I've found that blending the onions and tomatoes first gives it the consistency of apple sauce, which I don't care for. I also replaced garam masala with MDH chana masala mix. Everything else I followed exactly, including the condensed milk, which adds both flavor and color. My new go-to recipe. Thanks so much.

      Thank you so much Rob I will note all your suggestions. Do try my cauliflower recipes and Masala vadai recipe from playlist indo chinese recipes and southindian recipes are huge hit among US, German and UK friends they enjoy all my recipes. Best way to serve channa masala is with kerala layer paratha or Poori thats how we serve. Layer paratha/kerala paratha recipe is also posted on my channel :)

    Excellent. Now everything is clear.... Always wondered how the restaurants could cook everything so quickly... and how the spice flavours are so rich...

    Nice recipe. Just a little tip. Better if you avoid putting dry powdered spices directly to the hot oil. Much of it will burn quickly, you'll lose a lot of flavour and that may make the curry little bitter. Add them after the puree. Alternatively, you can make a paste with little water and leave them for 10 minutes. This way you'll need much less amount of spices

    Wont it be too sweet? Chana masala is thought to be tangy and spicy..adding sweetened condensed milk gives a feeling as if it would be turn out to be a Chickpea dish from Gujarat where sweetened savory dishes are eaten!

    I just don't like the idea of condensed milk cause it contains unhealthy processed sugar. Besides this the recipe looks like it's worth a try. Without the condensed milk. That's why I don't in restaurants any more cause I don't trust that they care about people's health & I don't think they use organic ingredients either.

      condensed milk adds a smooth texture and thickens the curry, also it is a perfect balance to the sweet and spicy. I havent tried this recipe but tried a much more complex one and made huge adjustments to my own taste. experiment a few times and combine recipes sthat you like to your own taste

    • @Vidyalakshmi
      @Vidyalakshmi  7 лет назад

      I used regular chilly powder from tikkalal. chilly powder varies from time to time in summer the spice level of the ground chilly is always spicy. If the gravy is very spicy add condensed milk or a boiled potato to reduce the heat level...Happy cooking :)
