I clicked this forgetting there are non-Jamaican/non-Caribbean versions 🤦🏽♀️. In Jamaica we soak the fruits in rum and wine before baking the cake, THEN we wet the cake with a mixture of rum and wine for days (my mom uses sherry or brandy as well) so a good fruit cake is moist and likely to make you drunk if you're a light drinker 😁. In fact, some people have fruits soaking the whole year (or longer). PLUS, while we leave the fruits whole for Easter buns (which I can't stand!), I've never had a fruit cake where the fruits weren't blended smooth (so there are no fruit chunks). Also, I've never seen any nuts 🤔.
Note: I have had terrible ones though cuz not everybody can (or should) bake 😑.
Exactly my thoughts about the cake. My Caribbean family have never produced a black cake that looked like this!

My Grandma Verna was Italian and she ALLLLWAYS Yearround had a fruit cake on the DiningRoom Table under glass and she would slice it with a CHEESE SLICER real thin like and serve it up with Expresso when her friends all gathered up in the ROOM kids werent allowed to go in and sit on the furniture...LMFAO!

If they had ANY Caribbean version, this would have been a completely different experience. I was so confused as to why their cake was so dry! Soak the fruit in an alcohol mix and feed the cake with alcohol from once it's cooked and cooled until you're ready to eat it.

You should try German fruit cake. It's called Stollen and I would eat the Dresdner Christstollen. You can get it with Marzipan, Poppy seeds or just "plain" fruit. I'm black and make it every year for Christmas season. It's delicious.
