    Well Heather ... I have been watching every video of yours for over 5 years now ..and I "binged watched" the older ones too.
    I was about to start my journey in canning (bought all the necessities for water bath and pressure can) and then had a life change and a move that put a stop on it all for the last two years ...but I kept watching !!
    WELL I FINALLY got my necessities again, .I have my water bath caner now and I just received my new pressure caner today..... BOY AM I READY .. !!
    (the others are still mine ..but packed away in another state half way across the country ..
    and it's just too expensive to ship them all here ..so I RE-INVESTED AGAIN ... collected everything i need ...
    yeah ..it was a long wait in time and finances) ...
    I bet by now I could teach caning after the hundreds of videos I have watched from you and others ..lol
    Anyway ... I finally will be able to can along with you and the video and I am SO READY ...
    SCARED to DEATH ...BUT READY !!!
    ALSO >>> GUESS WHAT ELSE ... I FOUND A BRAND NEW ALL AMERICAN CANER 921 ... it will be shipped in November ...
    they will not charge til after shipping but it's on order with a reputable retailer !!

    I am disabled and gonna be 68 this year but I tell you what ..if it takes all day ..
    I will get through this canning if it kills me ...lol
    My caning shelves are supposed to come this weekend .. then I'm good to go !!
    I have no idea how many caning videos you have ...but i am going back to simple Grape Jelly and working my way up !!

      You sound like my twin lol i feel like i could teach aswell lol. I have been canning non stop since i got my canner a few weeks ago! Ive made multiple things a day until the wee hours of the morning some days :) ive done meats, ( chicken, ground beef, meatballs, pork, roast) bean soups, beef stews, dry beans, potatoes, green beans, carrots, chilli, corn, cabbage soup. I also was binge watching tons of videos from different canners. I just love it!! Feels so rewarding when you take out the final product and stock your shelves. I also feel more secure diversifying my food to not only freezer but ready done food on shelves. Incase of power outage. Happy canning :) ps canning has given me something to look forward to! I was in a car accident and injured my back, shoulder and knee. I couldn’t do much, but i sit at the table and prep taking my time, and geter done!! :) Heather you are such a warm, loving person with a beautiful soul. I love your beautiful smile and energy you bring while canning! Ty xo its almost 1 am waiting for my last batch of beams to come out. I have an electrical canner. It stops when done :)

      Ps while waiting for my pressure canner to come in, i ordered a water bath canner and did cherry jam, pineapple jam, pickled beets, peaches in syrup, mango and pineapple in syrup and more. Thank you Heather for all your teachings!!

    When I make stock, I always roast my bones and veggies at 400 for an hour, get it all nice and brown. Adds so much flavor and color. Tfs.

      I do the same thing but only about 20 minutes! Really does make a difference.

    When I make bone broth, I but it in freezer bags and freeze it laid out flat. So when I need a quick gravy, I can easily break off a piece of the broth, heat it up with tapioca flour. Healthy gravy in less then 5 minutes!

    So I saw this video several days ago. I just loved it. Such a simple thing to make. I had my daughter get me some onions at the store and then I got online and ordered an electric canner. I had no idea they even made an electric canner. But I love it I just got it in the mail yesterday and I’ve got my onions in it this morning. I have a feeling I’m going to be getting a lot of use out of this canner. I have to admit when I got back on your video this morning I saw where I had accidentally giving you a thumbs down. I immediately changed it. I get so much enjoyment out of your videos. I know you’re a busy mama and I don’t know what all goes into making these videos but I know it has to be a lot so thank you for all you do for us❤️

    Good Morning from Ms. Ella. Onion stock has been simmering 27 + hours now. And yes the house smells amazing. Will need to start one with chicken. The usage possibilities for both are endless.     It was comforting, and a pleasure to watch this from start to finish. I didn't get bored at all, or stop to check how much longer was left on the video, like I usually do, with some long-winded women, that like to hear themselves talk. Lol. No, you're different, this was interesting from the beginning, all the way through!! And that's an attractive picture on the front of the video, of the finished onion preparation in the pot.
    I like how you are informative in a humble sweet way. A person who's new to you, would automatically feel comfortable right away.
    Thanks for your helpful teaching videos. They are really a go-to, for me now. And thank you also for being so kind, and thoughtful of all of us, your subscribers! You seem like you actually enjoy being sensitive to people's needs. And somehow, you're strong enough to do it.
    And also, I get the impression that if there was ever a subject, or topic, that you are covering, that somebody was offended by, or uncomfortable about, that you would always, apologize, or definately try to endeavor to accommodate their feelings.

    People think I'm crazy because I do beef stock for 4 days, just below a simmer. I also freeze it often (for a healthy drink) because I took all that care to get all the good stuff without killing it with heat. But any stock tastes better with a couple of days. And it gels! Got a colleague interested in canning, she found a used Presto. I was just telling her about your onion stock today :)

    This is the second time I've watched this video. I have just started my first batch of onion stock in my new Nesco 18qt roaster oven. 🤞 it turns out great. Thank you for sharing this recipe.. I'm 63 and really do not cook because I am single. But you inspire me to do better for myself . Prayers and Love your way 🙏❤

    Followed your recipe, cooked it in my 23qt electric turkey roaster for 36 hours. At 24 hours I tasted, was not very flavorful, so took it to 36 hours. In the end the stock was very, very dark. Tasted a litter bitter, but not burnt tasting. I had a hard time straining thru cheesecloth had to strain it twice because there was so much “sludge”. My lesson from this is I think the roaster was at too high a temperature and actually roasted the onions. If using a roaster be mindful of the temp. I plan on using the stock to cook some rice if it tastes ok I’ll keep else goes to compost. Jars are precious right now. Thanks Heather

    I'm definitely going to make this soon. I may end up using our large slow cooker. My husband adores onion in just about everything so he was all over this idea! ~Cyn

      The onion becomes bitter when cooked for so long. Maximum flavor extraction from vegetables, including onion occurs in around 45 minutes. I do not know if the bitterness will occur if the onions are removed and the stock is reduced. Mine was too bitter to attempt this.

    Oh yummy! I save my tops and peels to put in the onion stock (never the roots) in the freezer until I have a big bag and also add fresher whole onions when I make it. Thanks for teaching and sharing!

    I had to try this recipe…I’d never heard of onion stock…I did mine in 2 6 quart slow cookers with 3 onions , 1 tablespoon each of turmeric, salt & pepper…it was a guessing game for sure…I left the crock pots on low from Wednesday morning until Friday morning…I did add some water…it turned out just like yours…thank you so much…it’s delicious

    I am so glad you talk about washing your onions and peels! All the other videos I've watched about using scraps just creep me out because they never talk about discarding blemished parts or anything. I imagine a bag full of stuff that I would just toss into the compost because it's NOT clean.

    Thanks so much! I've always wanted to can, but was afraid to try on my own. Now I feel like I've got you over my shoulder. Is there any way you'd be able to temp your stock after it's come to a boil and then settled into the slow cook stage? Thanks to you, I now know my free standing roasting oven would be perfect for this, and it has an actual temperature guage rather than a low-med-high setting. I'd love to know about what to set it on after the boil.
    I just so love your stuff. You still keep me grounded and are so cheerful and loving. I am jealous of how much you're able to do for your family, though!

      don't be jealous, i get very little sleep and i need to take better care of myself. hahaha i need to learn to slow down a bit. i think the only temp thingie i have is a thermometer you stick into meat. hahaha but just as long as its a low simmer.....you will be fine! you dont want to hard boil it, but you dont want it luke warm either. just a nice simmer.

    Any canner right now is almost impossible to find and the prices have just skyrocketed! I found a Presto 23 qt pressure canner by chance at my local ACE Hardware! Even canning jars are getting hard to find and are getting VERY expensive! I'm so glad I saw this coming in January and stocked up on jars and wish I would have gotten more! Even used jars are going for new prices now! I see in a year or two a whole lot of canning items at yard sales!
    I do hope people are paying attention to the tried and true canning procedures as I've seen a whole lot of new "Homesteaders" ignoring some of the basics and it scares me. I always love seeing you do your canning and your broths. You are always following good tried and true procedures and teaching the right way! Thank you Heather!

You were so wise to act on your gut instinct, when you saw what was happening back in January! I wish I had picked up more canning jars. And a canner, just to have to loan out to anyone who needed it. I knew one day this would happen, but I guess you are never prepared for it to actually happen when it does. We still have no toilet paper up in my area!

    A great video and info! When I do large batches of stock I use a big turkey roaster and works great! I roast bones before I place to the toaster

    I just got my Ball Electric Water bath canner from Bed Bath and Beyond last week. Haven't used it yet. Bought it to make jelly because I have a glass top stove that I don't want to break, broke one in the past. Excited to use this pot to make stock and jellies!!

    Hi Heather! I’m a new subscriber and just finished watching this video. I can’t wait try try this recipe. Regarding the electric canner, I found 2 at the Fleet Farm store in Monticello, MN, for $129.99. Their website this morning before I went to work said they had this canner in stock but for ‘’in store’ pickup only. As soon as I got home from work I called to confirm they still had one because I’m about a 45-50 minute drive away. They didn’t have 1, they had 2! I got right back in my truck, drove to the store and bought 1. Nailed it!!! So if anyone else is in MN like me and looking for one of these, go get it before it’s gone. I really can’t wait to try this. To think of all the old onions I didn’t use before they started getting old. Now I know what to do with them.
    Also, I make a ton of & pressure can beef, turkey & chicken bone broth to add to my senior dog’s food to entice him to keep eating, plus the broth is super healthy for not just him but me too. And I always throw in a couple of chicken feet for the gelatin, turmeric (anti-inflammatory properties), as well as carrots, celery, bay leaves and some sea salt. Again, extremely good for him and me and super delicious. But I’ve always had to have 3-4 crockpots going to make up 7 quarts to then pressure can. This electric water bath canner is going to save me time and energy big time! I can’t thank you enough for suggesting it.

    Looks terrific! I use my roaster oven all the time for making stock. Doesn’t have the convenience of a spout, but it gets the job done. 💕

    I just spent my day canning onion stock and pork stock. I think I will try your recipe next time. For a different tast. I love onion stock! I use it to cook my roast in, I make gravy with it, I use it to cook my potatoes in then mash them and top with carmelized onion and gravy, cheese melted on top. I use onion broth for everything. Also if you search you will find the many many benefits of onion broth. Thank you for sharing your recipe it looks delicious and cant wait to try it.
    Oh just for a hint. Everytime I chop a onion for anything, I place the ends and peel in a bag I keep in the freezer. When i make broth I just pull it out and it is ready to go. No waste at all.

    @Heather I made this a few weeks ago but I was give 4 huge bags of white onions today so decided to experiment. I also added 1T poultry seasoning 1T bay leave ground 1T thrive garlic 4T chicken base now will see Thursday afternoon how it did.

    I heard what you said about not being able to find the electric pot, I'm not sure about others, but there are no FLATS to be found in my area, and amazon is almost as bad - sold out. IF you can find them, last year I paid 1.69 for a dozen, this year, HELLO!, 7.50 a dozen. I know that people out there are sorta running scared, and it's great to think that maybe they've found out what us old timers always knew, growing and canning your own food is most times less expensive, tastes SO much better, and it's great to have a full pantry of food, knowing where it came from and what's in it. BUT, 7.50 to 9.00 for a dozen regular flats, necessary to can from home, if the new canners don't realize you should never reuse the old flats, who is responsible for the price gouging going on? At least there are other things you can replace TP with, but nada when it comes to flats. Now I'm wishing I had had the money to buy the TATTLER lids, at least I wouldn't be faced with the dilemma I find myself in now. Very sorry, this sounds like I'm on a soap box, but if I hadn't bought a few boxes of flats last year, my garden would have been wasted if not for the freezer or dehydrator. A very worried old lady that loves to can edibles, and finds it as relaxing as reading a good book. Blessings to everyone out there that might be in the same predicament I am in!

      I'm 67, and was fully white headed by the age of 42. I never once thought of coloring my hair, 1 - because why fight nature and 2 - think of all the things I couldn't have because I spent all that money over 30+ years of worrying about looking younger than I am. My poor daughters have been coloring their hair since they were barely into their twenties, and it's ALL MY FAULT, lol; it was my genes that gave them little white hairs by the time they were 16. LOL, supposedly a little white makes men look distinguished, and women are just showing their age. I've been giggling about that for ages! Blessings!

    They make large pots for deep frying turkeys and they also make pots for european mounting skulls these can be found at hunting supply stores I sometimes use mine for canning hope this helps 😊😊😊
