    I have about 25 lbs of large onions in my garage right now. I planned to dice and freeze them, but maybe I'll make onion stock out of some to try. We don't eat a lot of vegetable soup because of family that doesn't like vegetables, but I like your idea of using it with a roast. Smart!

    I did this as well, used whatever onions I had in the house, including several red ones. Then used my Nesco Canner to can start canning them using
    25 min with 10 lbs pressure. I know there is a debate with these but I’m going with them and not using the quick release. Meaning a longer time under pressure.
    Also used my Bernardin canning book on page 99 there is the vegetable stock recipe you used.

    Last month I made 23 quarts of onion stock. I barely had enough time to get it into the jars and I had to deploy for work. Once I got it all jarred up, I put all the jars (13 of them) in the freezer so I could finish when I got home. Well, when I got home and went to get them out Of the freezer, all the jars had broken. I was devastated 😩😩😩😩.

    Holy Cow! What an AMAZING idea!! I've had onion ends in my freezer for a while now, but not enough of the other veggies for "Veggie Stock" I never even thought of doing just plain onion stock! So now, I've got my instant pot going with onion ends in it. set for 4 hrs. lol. . I had enough ends to do a whole full pot! (two gallon bags full) Thank you Miss Leissa for the amazing idea! :)

    As much as I've canned I've never done onion stock. Got to do this. Love it for soup, roasts , dips!

    I went to a produce auction last week and got an absurd amount of onions. I took all the trimmings and the stems and made onion broth out of them. I got 8 quarts. I made black beans with the broth and it made them taste so meaty.

    My 1st try canning I made chicken bone broth and my lids did go up & down! Almost put it in refrigerator because I thought I did something wrong and they didn’t seal. Low n behold I was able to lift the jars by the lids they sealed. So thank you for sharing about lava lamps with just broth

      @@SuttonsDaze the onions I get are truely wicked in sulfer compounds. Old Amish farmer, great yields of onions and wonderful bulbs but eyes water and noses run.

    I buy my onions 40 pounds at a time……make frozen chopped…..carmelized onions….and all the scraps and skins go in the pot to simmer overnight …..usually get about 2 gallons of stock….mostly use the stock for cooking brown rice…..

    I am an onion lover🥰🥰. So they do not last long in my house, and stock I have never made. I am always buying stock but last year I made chicken the stock and can it. So I will be doing onion 🧅 stock this year.🥰🤗

    I've been making chicken stock for a LONG time! I've never heard of onion stock, buy I can see how that would be useful and easy to make.

    I gather all my vegetable scraps in freezer bags … onion ends, garlic papers and peels. Etc….using the whole o ion is a great idea though. I think I will use this to bump up my pantry stock just a tad. Thanks !

    I use onion skins pour hot water it’s tea healthy nutrients from skins . Let cool great for houseplants and garden only once per month for plants and garden. I use skins for making stock

    Aw, now see I can't just cut up a beautiful whole onion for stock. But I can definitely save the clean dried onion skins, root ends, and bits left after chopping delicious aromatic onions for stock. Usually I wait to use them when I've also got freezer baggies full of leftover chicken bones so they can be shared between multiple batches in my 6 qt Instant Pot. I love the inspiration from Michelle, your friend AllSorts, many years ago and how she got multiple batches of broth. Your broth came out so incredibly rich looking! I definitely have to get another batch going soon. I love, love the gorgeous wooden racks you've been using under your canning jars.

    I have a batch on now, and plan on getting some more onions tomorrow. (Giant Tiger has them on sale 2 lbs for 97cents). The next batch I think I want to try with some thyme and bay leaf. I have a gas stove, and because of timing and my available space I do simmer broths and stock overnight, but I will either use the Instantpot and use the keep warm setting or put the stuff in the oven. I can get several covered pots in my oven and I feel safe with the temp at 215F overnight. My oven shuts off after 7 hours anyway. And personally, I love waking up the smell of a rich soup in the kitchen.

    The price of Onions here has gone crazy.
    I need to do this.
    I've been buying 300 gram plastic jugs of dried Onions for years and stashing them.
    Lately I've taken to dicing up the unused portion of my onion and freezing them.
    Onions don't last long in this house. They are used every day.

    I enjoyed this video, thanks for inspiration. I wonder if cooking onions overnight in my slow cooker would work. I like to place my slow cooker on my screened porch when cooking foods with very strong aroma.

    have an instant pot max it cans 4 pints pressure cans its faster than my presto but i just use it for smaller loads use my big canner if i have more than 4 .

      I canned onions. Do you think I could open up those onions and dehydrate them? I need to free up some canning jars. There's no telling if or when the canning jar supply line will dry up..

    I bought a case of BALL jars with lids. There were 4 jars that had manufacturer defect cracks / chips.
    3 jars had bad (chipped) lids. So out of twelve jar I had 5 jars that were usable.
    Maybe BALL should just go out of business and leave it up to the new professionals.
    I hope she fixed that lid, I hope she fixed that lid. OH good she fixed the lid.

    I canned some onions, and also canned the broth from when I cooked the onions before canning.. I figured I'll use it wherever I would normally add water, like stew.
    My mom asked me why I would can "onion water"! Mom! 🤦‍♀️

    My stove top pressure cooker is my good friend when it comes to stocks and stews....and, and, and 😁😉. So I understand your liking for your instapot. I usually make Caramelized Onions (in butter) with my Oops, forgot onions .

    omg. I did not know that you didn't have to see the steady stream of steam. I tried to pressure can one time and was so frustrated because no matter what I couldn't get the pot to steam to where I could see it. I used to keep all my peelings and onion bits and make onion broth and freeze in 2-quart bags. it was the onion broth that I tried to can that didn't work out for me.

      You absolutely have to have a steady stream of steam, however determining that stream is the trick

    We did that thinking it would be a great dilution for chili. Not a fan. I'll watch this video and see if we strayed. It could easily be a preference thing.
