    In Today’s video, I will show you how I can Caramelized Onions for shelf-stable storage. I love having these on hand for recipes and toppings. I use them a lot for Patty Melts, which are one of my favorite burger versions.
    Not everything I do is USDA/FDA approved. I believe in “MY KITCHEN, MY RULES” and I do not think untested necessarily means unsafe. If you are someone who only does things by the book, then this video may not be for you. It works for me.
    I am not telling anyone that this is the way it should be done. I am only sharing with you how I do it in my kitchen. I have done my research and I am comfortable with doing it this way. I strongly encourage you to do the research and do what works for you. The National Center for Home Food Preservation is a great resource, as well as the Ball website. I have left a link below. There are also several groups on Facebook and lots of videos on RUclips to help you get started and find information.

      I think REAL food that we raise or grow is always going to be the best for us. I don't trust the additives that are in all the foods we have been eating for so long... If you are in my area, I would happily cook dinner for you! I rarely have anyone to cook for anymore, so it would be a treat for me!!

    I caramelized my onions using the Crock-Pot method and add 1/4 cup Worcestershire sauce during cooking and just before canning, the house smelled like a steakhouse! Adds that extra zing to a steak or patty melt.

      I just learned to make Frisco sauce, and am actually having a patty melt and fries (all from my pantry) for dinner one night this week. I LOVE a patty melt!! and these onions... amazing on them!

      I love having onion on hand. I can it several ways... chopped, in peppers, in soup, in jam, and carmelized. They all turn out great.

      I am doing good. I hope you are as well!! It is still cool here (we hit 46 degrees woo hoo) but sunny. Work is finally slowing down a bit so I have a month to concentrate on getting some videos made before I start getting ready for the move to my new apartment. I am going from 680 sq ft to 1150 sq ft... It will be so big in comparison that I might get lost in it! LOL The beautiful thing is I will actually have some kitchen counter space so I can have my microwave and my mixer out at the same time!! The bad thing is, I have a LOT of jars of food to pack for the move. Blessings, my friend!!

      I love patty melts!! Hamburger meets grilled cheese with a load of caramelized onions... HEAVEN!!
      I do not think these get mushy after canning. Caramelized onions are soft, but canning doesn't seem to change them much. I just made a couple of videos using my canned goods and am editing them now, so they will be up soon. I finally remembered to record when it was time to fix dinner...

      Thanks for subbing and welcome! A Patty Melt is like a burger and a grilled cheese sandwich with caramelized onions all made together. I serve mine with "Frisco" sauce (no idea why it is called that, found the recipe on the internet and fell in love with it) and fries. Next time I make one I will do a video and post it. They are like Monte Christos for me, an indulgence that I don't allow myself too often. They are DELICIOUS!!!

    Hello there. I seen comment on another video said if you put out on counter small container of white vinegar and have water faucet on small stream going. It will attach onion oils to that instead of eyes. But I've not tried it yet to see.

      I will try it next time I do a batch of onions. Since I usually do onions in 10 or 20 pound patches, I am winning to give most tips a try to save my eyes. I have tried the match (didn't work) and goggles (couldn't see without my glasses) and vicks rub under my nose (was almost as bad as the onions, all I could smell the rest of the day was vicks rub.... and i still cried from the onions).

      LOL, I just watched that same video today. I've been cutting my onions that way for quite a while now to keep the smell off my hands. A real DUH moment because I had no idea why I wasn't crying as much. If that doesn't take the "didn't think that one through" dummy me cake. But so nice to know why the crying's not happening. And there's one of Bob Ross's (the artist) happy little accident moments.

    One pound per 1/2 pint. Patty melts are delicious, that’s what they are.

    Can these be canned in the 4oz jar? If so would the processing time remain the same?

      yes and yes. I have canned them in the 4 oz jars, and I kept the time the same as for half pints and pints.

    Do you find it a little more difficult with the coil electric stove to can? I do... it holds the heat more than the gas stove I used to can on.

      It took a while to adjust to it. I have been back and forth bewtween gas and electric depending on where i have lived. Now I am back to electric, unless I am canning outside on the camp stove.

    Does the texture of the onions change much after canning? Do they still have any bite to them? I imagine the flavor is still really good.

      They are soft, like caramelized onions. if you just can them, they are more like sautéed onions (soft but with bite). Carmelized onions are soft, but hold together, not mush. One of the first videos I am going to do in my what's for dinner is a patty melt and fries, so I will be using them and you will be able to see how they turn out.

    How long would you water bath them? I dont have a pressure canner.

      Actually onions aren't acidic enough to water bath can. They should always be pressure canned for safety sake. However, that being said, if you put good quality lemon juice or vinegar in your bottles before adding the onions to the jar that would probably make them acidic enough to water bath can (maybe 1teaspoon on the low side per pint to 1 tablespoon per quart). I'm the kind of cautious person that I literally pressure can everything not just for the safety but because it's quicker and takes way less water and weight on my stove (glass top). Hope that helps.

      I just opened a jar that I canned in 2018 that are perfectly fine. as far as how long, I don't know for sure. I can say mine have been good for 3 years and going...

      I have seen Townsends videos where they canned butter. That's how they preserved it in colonial times. I cant imagine the butter here would go bad.

      the onions are moist enough after cooking down to not require liquid. When canning plain onions, I add water.

    Thank you for sharing but some important details cant be seen in the video, either they are out of camera angle or they are skipped altogether and its a 14min video.. it seems a good idea to have one another video..
