I DID IT 😅 I MADE ONION STOCK! I started the stock in my roaster Sunday..canned it Tuesday...checked it today! 100% seal rate and head space is beautiful! (16 pints) Thank you so much Heather for the confidence you have given me. Watching your "basic" videos gave me so much needed help. I set everything up before hand like you showed us and it went smooth. Especially the second batch..after the first batch didn't blow up on me haha. Thank you again. Prayers and Love your way 🙏❤

I bought cloth diapers and use those for straining out solids. They can be used over and over. Also the flour sack kitchen towels I purchase from Sam's. They come in a pkg of 10 and are Prewashed, Preshrunk & Lint-Free. Their 100% cotton. Hope that this helps others. The diapers are also 100% cotton and I purchased them from Walmart. Found them in the baby aisle.

Question about the flour sack cloth - what is the best method to wash them in the washing machine? IE: bleach or no bleach; dryer versus hang dry, dishwasher, not washing machine, etc. I want them to last a long time, and I don't want to accidentally add unwanted chemicals (like fabric softner) to my food.

I made this earlier in the year. I wasn't expecting much except a strong onion taste. I added it to my pinto beans... stuck it in my instant pot... MAN... THE BOOST OF FLAVOR IT GIVES THE BEAN was absolutely amazing. It made the whole difference. I saved leftover beans and stuck in fridge for refried beans another night. I'm making this every year now! I tried it in my chili... OMG the difference and it looks beautiful all clear and golden! Thanks! Finally figured out... Southern Oh... I've been pressure canning at 15 lbs of pressure when it should have been 10 all along. OOPSIE... explains the mushy stuff.

i slice all my onions and put them in my slow cooker with about 1/2-1 cup water and let it go all night. It makes a lot of broth and perfect caramelized onions to which i then strain and put the onions in dehydrator. It is soooooooo good in many dishes.

I do poultry stock. I save all my chicken carcasses and my turkey carcasses from Thanksgiving and Christmas and then do a huge batch of stock after the holidays and it lasts me the entire year. I use it the same way you do, in place of water in just about everything. I was saving all of my veggie scraps and peels to add to it as well but now that I have a garden all those go in the compost bin.

Heather, I have some quarts of onion stock cooling on my counter right now, and a canner full of Wilhelm's Boston style baked beans going in the canner that I made with some of the onion stock. Going to make your maple beans later tonight too I think. I've never canned beans or onion stock before, so thank you, thank you, thank you for these tutorial recipe videos!!! They are awesome, even for an old canner like me. Always new stuff to learn and try! I grew my own dried beans this year (Pinto, Cannolini and Italian Woman yellow beans) for the first time as well, so I'm very excited to learn how to can them. (I used some navy beans from the store, however, for tonight's trial run. ) Some day girl, I'd love to meet up with you in person. I bet we could get into some fun trouble. LOL!
