This South Indian all time favorite dish is made by steaming a fermented batter and we are is showing you how to make soft idlis using millets.
Also its classic combination , the small onion sambar.
For Idli batter
1 cup urad dal
3 cups fine millet rava
1 cup millet poha
1 table spoon methi seeds
Or in case you don’t have millet poha
3 and half cups millet rava
1/2 cup cooked millet rice

Try my this recipe, you will really like it. No need for any rice or Poha.
Idli came out super. What a soft, cotton-like texture. Loved it. The chana dal addition made it ferment faster. The idli recipe just got it right after so much experiment.
Recipe:
2 Cup Foxtail millet or millet of your choice.
1 Cup additional millet cooked.
1 Cup Urad dal.
1/4 cup chana dal
1Spoon methi seeds.
Salt to taste.
Soak the millet and the urad dal adding water to the same level of the dal and millet. When soaked for 30 mins add a little extra water as the dal would have swelled up.
After 2 hours grind the dal and millet into a thick paste in a wet grinder. Add cooked millet and 1/2 cup water and grind into a thick paste.
Allow it to ferment the whole night.
After fermentation add 1 spoon salt or as required.
Make idli and enjoy with hot sambar or chatni or molagai podi. Yum 😋
Can v add the salt before fermentation?
@@suganya.m7148 yes you can add salt before fermentation. Adding salt makes fermentation faster.
I have sorghum, pearl miklets and they're super big how can I grind them. Mixi won't be able to do the task I think

Hello mam my son (3.5 year) is recently diaganosed with fatty liver and slightly wheat allergy and lemon allergy doctor suggested not to eat fermented food like idly dosa and lemon juice, sour fruit and food. *You should not add salt before fermentation, it will kill microbes. Hence, add salt just before steaming iDli..*
