Absurd (!) Espresso Workflow on Delonghi Dedica

- Опубликовано: 6 окт 2022
- This is a morning espresso on the Delonghi Dedica ASMR video. In this video, I use the Timemore Chestnut Nano grinder, a Normcore bottomless portafilter, a WDT tool to distribute the grinds, and a precision 51mm tamper. Beans used were Höga Kusten Harras.

RUclips is full of coffee channels that claim you need equipment that cost more than my car to make proper espresso. And then theres this guy, making beautiful espresso on a Dedica :)
Thanks for noticing!
True that! I want to get a coffee machine because of him
Exactly! I was at a fancy specialty coffee store today looking for the tools to upgrade my own DeLonghi Dedica and this employer was all convinced the Dedica could not be upgraded with a bottomless portafilter etc., and I should upgrade to a 'better' (i.e. more expensive) machine. Videos like this give me hope...:)
@@hurricanerzIf they also sell machines you already know his goals...
I swapped recently to bottomless portafilter and I immediately understood why staff at De'Longhi dont recommend this upgrade. Grinding, tamping pressure, dosing is important now. As well as bean quality and roasting process. Sometimes if i got new batch of beans id waste 3-4 shots before I'd get them somewhat right. I can see people come to delonghi saying their machine is broken lol
You went all the way to install a new steamer 🤯 Now that's DEDICAtion.
That's a clean shot, nice!
Thanks, Marek!
This man is SO KNOWLEDGEABLE about everything Espresso-- you would think he has been doing it for 40 years 👏👏👏👏👏🙏🏼👏👏👏👏👏☺️😊
Thank you Terri, for stopping by and watching...I really appreciate it! 👍☕️🙋🏼♂️
That's not absurd, that's how you make coffee.
Its to preempt the “3 hours later” comments lol
I’ve been looking everywhere for exactly what I need to get a good extraction finally stumbled across this video.. was about to fork out a load on an electric grinder but seems this one does the trick just as good
Hey Jamie, get the K4. It is much better than the Timemore. K4: amzn.to/3JesiE9
Great video as usual ❤
This may be the perfect option for me while I save my pennies for a bigger grinder❤
Amazing 🤩
Beautiful crema
Beautiful beans!
@@TomsCoffeeCorner wich one ?
Recently I get dedica arte and I was looking for grinder thanks!! I am gonna get this one for sure!
Very nice! Also consider the C3, a larger version.
@@TomsCoffeeCorner Thank you , I will :)
Nice Tom, looks really dialed, must have been tasty
❤ love
It seems it’s a turbo shot (compared to traditional 30s target). Is it for taste preference or for video edition?
Do you have any plan to improve further your Dedica? I feel one improvement could be a sensor with arduino/raspberry that would stop the brew based on the output weight.
Fantastic! The video proves that one may extract true espresso with Dedica. Could you please tell me if you recommend Kingrinder K6 instead of Timemore C3?
I like Kingrinder over Timemore.
Hi, quick question if you don't mind, I'm currently looking for a hand grinder for espresso, would you recommend the timemore nano/ slim?
Hi Stu, I would recommend something from 1zpresso, like this JX Pro, since it can be dialed in for espresso much better than the Timemore.
Jx-Pro: geni.us/JxPro
you only need 2 things for a good espresso: 1. reasonable tools and 2. experience and routine .. no "Laqnvy fancy" high end stuff... its the same as with the HiFi and High End Blablabla.... tag the end we deal not about 99,576845% but the decisive 85-90 %: beans, grinding and consistency, pressure (tamper), temperature, pressure (by machine < or=9 bar).. and so I decided to spend more than 4 times for the flat burr grinder (more differentiated flavors also for dark roasts) than for my Dedica 685 ( demo item for about 140 euro)
so much crema! was it super fresh coffee?
Hi! Yes it was a freshly roasted light roast from Hoega Kusten up there in Sweden. Fresh coffee is always key!
Nice job Tom! Could you recommend us a grinder more economical in spain, that works ok? Thank you !!
Graef CM702 or Kingrinder K4
@@TomsCoffeeCorner thanks, I have purchased yesterday the timemore chestnut c3 on a flash sale in 79,99€ . I hope it will be ok .
Just got single shot basket for my bottomless but even with my finest grind wnd 7,8,10 or 11 grams of coffee flow was soo quick , and so i just throw that bad coffee out.
I tryed many times but still not good , in oast i could do good coffee on double shot , but i think it deppend on coffee too .
I want just some market coffee , i tested so many types , now i am trying Lavazza crema but maybe its bad coffee for bottomless idk , i am depressed since i was excited but no good result in 2 days.
+ I bought even sterl puck i put on coffee
I know it’s expensive, but go to your local coffee roaster, and buy a small bag of freshly roasted beans, with like a percentage of 80% arabica, and 20% Robusta. Use 14 g in a double basket. What market are you in? Maybe I could recommend some beans for you.
@@TomsCoffeeCorner we have fresh and lidl near but yeah there is some coffee shop with caffee and they sell even 2 days or few weeks old max 1-2 months old coffees but all are only 100% arabica , before i bought for goodprice 4,50€ for 150-250 grams of coffee idk sure how much it was. And they told me they can grind it for me , i said sure but when i tryed it with double basket before even with 17-18 grams it flow soo fast :( . But nowaday i buy or make only singleshots since they are more tasty for me .but yeah maybe i will try look for some more fresh beans , hope it will work , thanks for fast and helpful reply :)
@@TomsCoffeeCorner bought new coffee beans from cafe dias with is famous coffee place in famous book ahop and it was roasted 31.8.2022 with iant that new but still not old . But its again 100% arabica (wanted test it didnt found mix yet )and even with aingle shot 8 gram or double shot 14grams water runned too fast like full espresso cup in less than 5-7 seconds :( ah maybe realy my grinder cant grind that fine how i should grind . It was present for my birthday from this summer and around 80€ , its not famous bramd WMF but i like it
@@TomsCoffeeCorner i use WMF Stelio 417070011
(Now its for around almost 100€)
@@TomsCoffeeCorner now i found , maybe i had bad water hardennes setting because i have no ideahow hard is my tap qater at home , i read somewhere it need be on hard so i changed it + temperature put to low and boom there comes light for descaling , maybe its long now there and maybe its not working right bwcause of that
Yummy

Haha, thanks!

Hi Tom, would you mind sharing what settings that are recommended (water hardness and temperature) for the Delonghi ec685?
Hi! That depends on where you live. I have really hard water, so I set that at high. And I use the max temp possible. Cheers!
Hello Tom, where did you get the bottomless portafilter and the step for the cup?
Bottomless is from Normcore.
What size basket do you recommend for a bottomless on the delonghi? Something that will fit 16-18grams work well?
Yes! Try a 51mm from IMS. Link in description.
I made this my wallpaper
Nice!
Hey tom, I was wondering whether this shot is considered to be really quick or not.
It was dialed in 18 seconds. Why didn't you aim for 25-30 seconds? did you adjust it on taste? or that's what you think dedica should produce.
Also, I face the same problem in extraction, and its shown in the video. the extraction makes a huge line of espresso then it gets thicker in the end. its not consistent one thick line, like its spilling water in a cone shape which I think is more of a coarse grind issue.
I think including pre-infusion that the shot was around 22 seconds. But anyway, sure you can grind finer. Also, I found that this Timemore Nano was off center, with its burr axis, and therefore provided uneven grinds - leading to extra channeling. Which grinder are you using?
@@TomsCoffeeCorner Mine’s really bad, and got worse when I tried to grind for pour over with the same grinder, it didnt go back to fine grind anymore.
What about the cone looking extraction? do you think because it eas fast extraction?
Absurd he’s making coffee
I have a k4 Kingrinder at 90 clikcs and cant get a good espresso. What do you recomend? Should i change grinder?
Try 60 clicks, and fresh beans!
Quick question I see you mention a ‘c3’ is that the timemore grinder?
That was a Timemore Chestnut Nano
Nice❤ What kind of coffee beans do you prefer?
All kinds! Light roast, med, darker...the important thing is that they're fresh.
I recently bought the timemore C3, how many clicks do you recomend for presurized and unpresurized filters in the dedica?
Hi Carlos! For unpressurized, I would use 8 clicks. For pressurized, try 10 to 11 clicks. 👍🏻
@@TomsCoffeeCorner thanks!
Hello! What do you mean with clicks? I’m in Spain, thanks!
Did you manually stop the machine after a certain yield ( 1:2) ?
Yes, that's how I roll.
When I run mine the pump seems to stop start a lot until the flow is more stable and then runs continuous. Do you think there’s an issue with it, or that I’m just grinding too fine?
Hi Duncan, that's hard to tell without a video. Have you descaled recently?
Is the 9 bar spring recommended for an unpressurized basket?
There is no 9 bar spring for this machine...but yes 8-9 bar is better for an unpressurized basket.
How do you skip the pre-infusion on the dedica?
You can't.
Between this grinder and the Mignion, which would you prefer?
The Specialita is faster, and higher quality. So, I’d say the Mignon. But, the chestnut nano is very nice and portable.
hey Tom, i recently tried to use the sage buskets. I'm not getting the right shots .. Did you have the sage ones too ? for dedica of cause. any tips ? I'm getting 10 grams in (eureka mignon silenzio) but there are coming too much out .. I'm close to grind too fine
Hi Daniele, I do not use Sage baskets. Which market are you in? I could recommend you something. If you are in Europe:

@@TomsCoffeeCorner I'm from Germany.
And oh sorry I have the Graef one .. do you use the one shot basket ?
I grind with the eureka mignon
I use Lavazza Espresso
In the one shot basket I put 10 grams of coffe .. grind size is really fine, in the eureka between 1 and 0..
In 30 sec after you press the button it comes not good out .. any tips ? 😅
🇧🇷☕👏
What are the settings you use on your dedica?
Highest temp, and 30 minute standby. Important is just good fresh beans, and a decent grind.
@@TomsCoffeeCorner Thanks! :)
Is this the timemore nano chestnut c2 or c3?
Chestnut Nano, but I suggest the Kingrinder lineup instead.
Hi Tom! I have the same funnel as you do, and I find it extremely frustrating that it leaves this gap around the edges of the filter after wdt. I usually tap against the counter repeatedly before tamping because of this. Do you tamp as is? Have you seen any channeling because of it? Thanks! :)
Hey Jordi! Yes I know there is a gap. You can also buy funnels that sit on top magnetically. Maybe I should go for one of those next time. I don't think this affects channeling for me though. Cheers!
@@TomsCoffeeCorner Thanks a lot! I love your channel, please keep it going! :)
Thanks Jordi, that's real nice of you to say. 👍
@@ribesjordi First, thanks Tom for showing how far you can push this little machine! I have made a number of upgrades on my Delonghi, and everyone is surprised at how well this machine can work at pulling shots!
Jordi - As someone who owns both types of funnels, I find that there is a tradeoff between having one that funnels into the basket and one that sits atop the basket. The one that sits atop the basket benefits from not leaving an impression in the grounds after WDT. The one that sits atop the ridge of the basket avoids this, but the result is that more of the grounds don't make it into the basket. In my case, I've run into a situation where about 0.1-0.2g of coffee ended up on top of the ridge of the basket when I removed the funnel, adding a source of variability to my process. Ultimately, I find I prefer the funnel that feeds directly into the basket for this reason, but you might find the opposite to be better for your process.
@@brandony8691 thanks for the very detailed reply! I was considering getting a magnetic funnel, as I was worried that getting rid of the small gap across the ridge after WDT was affecting consistency. But what you're saying looks like a bit more of a problem. And then there is all the hassle of having to clean the counter, which I normally don't have to with my equipment (dedica+jx-pro), if I am careful enough. Anyway, thanks a lot, and take care :).
is the timemore nano the same as c2?
I think it's similar. C2 might have larger burrs...
Someone should mod it to attach the drill!! Then I'd use the hand grinder everyday'
😂. I actually did this with my rhino hand grinder using a quarter inch step down.
so this grinds fine for espresso?
Yes. Cheers!
How many grams of coffee to shot grams?
Hi! 17 g in and 35 g out.
What is your temperature set for espresso on Dedica?
High 👍🏻
@@TomsCoffeeCornerhow many seconds have you set the water pour time to?

Purge? 🤷♂️
@@TomsCoffeeCorner osea. Sacar la primera agua de la máquina por si hay una posible suciedad o animalito.

Any recommendations of coffee brands I can buy in the US?
It's always best to buy from your local roaster, so you know the bean's freshness. What part of the states are you in?

@@TomsCoffeeCornerthanks, maybe i shoulda waited and not ordered the kingrinder k4 and just ordered this
Hi Tom, is that the Dedica with Spring mod? approx 9bar? Andrew
Hi Andrew! Nice to hear from you. No, I reverted back to the original OVP. I found that with the right dose and grind setting, I can reach nine bars. Please stay tuned for a special video tomorrow. ;)
Tom
Ummm the nano grinder came up as $240 AUD is that normal? WTF...
Every market is different. Sometimes it's 3rd party sellers looking to make money. I would consider this Normcore: amzn.to/3DYfJJ4 for a good economical grinder in AU.
@@TomsCoffeeCorner Well i just bought the Delonghi Le specialista Arte... it has an inbuilt grinder hoping it's good enough for now.
When he said "absurd" what he meant was "normal espresso workflow".
Things you could do that are extra:
Preheating portafilter
Bottom paper in portafilter
RDT
Distribution after WDT
Preinfusion
Using a puck screen
Your prep is like a 3/10 tbh
Dedicas preinfuse. My 685 does anyway...
Really? is this take less than 1.5 min to grind for an espresso!!
No, it takes about one minute to grind. But I have to shorten the video or it would’ve been pretty boring. 😉
