材料Ingredients(八個份量/8 buns):
三百克高筋麵粉 300g bread flour
七十毫升清水(湯種用的)70ml water (For yudane mix)
八十毫升清水(撈麵份的)80ml water (For flour mix)
一隻雞蛋 (打發好)1 egg
七克 即溶酵母 7g instant yeast
二十克奶粉 20g milk powder
八克吉士粉 8g custard powder
四十五克白砂糖 45g sugar
六分一茶匙鹽 1/6tsp salt
二十克室溫無鹽牛油 20g unsalted butter
以下是菠蘿皮的材料 Ingredient for the topping:
一百零五克低筋麵粉 105g all purpose flour
半隻蛋黃,大約十二克 1/2 egg (12g)
四分一茶匙梳打食粉 1/4tsp baking soda
四分一茶匙氨粉(臭粉)1/4tsp food grade ammonia bicarbonate
五十五克無鹽牛油 55g unsalted butter
一湯匙鮮奶 1tbsp milk
六十克白砂糖 60g sugar
半茶匙清水(氨粉用) 1/2tsp water

Thanks for the recipe. I live in north of Scotland and the Chinese store is tiny so couldn’t get ammonia powder. I substituted the ammonia powder with half/half baking powder/soda of bicarbonate and it worked out great!

很好吃啊!very tasty , I made this today and it reminded me of HK . Topping was crispy and the bun was soft. Spraying the rising bun is totally recommend to keep the bun moist. I didn’t have ammonia bicarbonate so I substituted it with baking powder it worked fine! Thank you for your recipe.

Hi, thanks for the recipe. i made this today following your instruction, but the crust when I made it is very hard. Is there anything I can add to make the crust crispy but not as hard?

昨天照做這個港式波蘿包。嘩!跟在店買的一樣👍👍非常好食,內軟外(翠)。我只在包皮的材料用了baking powder 來替代嗅粉(因在加拿大不知那裡有賣)。我立刻把我的制成品照片和video share 出去我的朋友圈,個個都話要試。多謝你 CHEF Mama Cheung🙏

Tried the recipe it’s perfect my buns came out delicious the only ingredient I didn’t use was the food grade ammonia bicarbonate. Without this ingredient the buns were still very 😋😋😋

Hello Mama Cheung! Thank you for this recipe! I have tried this recipe out and the buns turned out great! The only struggle I´m having is that the buns get really flat after I´ve baked them. What can I do to prevent this from happening?
I wish to maintain the height of the buns, just like yours!

Also i got the topping all burnt in 10mins and the base was still undercooked even i transfer the tray to the bottom. I used 200 degree, whats wrong?

師傅。所知普通麵粉 1 cup = 128 g 如高筋粉( bread flour ) 1 cup = 136 g ,我應該用那種量法呢??
試多次用普通300g 也不見效。:-(
