Pineapple Bun is a favorite breakfast staple as well as for afternoon tea in Hong Kong. The name only refers to it’s similarity to the appearance of a pineapple, as it does not contain any pineapple whatsoever. With this recipe, you can make this wonderful tasting, super-soft bun with the crispiest (pineapple looking) topping right out of your own oven.

湯種材料:
高筋麵粉 50 克
水 250 毫升
麵糰材料:
高筋麵粉 550 克
鹽 8 克
湯種 184 克
牛奶 60 毫升
鮮忌廉 (鮮奶油) 90 毫升
雞蛋 86 克
速發酵母粉 12 克
白砂糖 80 克
無鹽牛油/無鹽奶油 (室溫) 50 克
菠蘿皮材料:
雞蛋 1 個
雲呢拿香油/香草精 1 茶匙
無鹽牛油/奶油 (溶解) 145 克
糖粉 100 克
高筋麵粉 220 克
梳打粉/小蘇打 5 克
Water Roux Dough Ingredients:
50 g Bread Flour
250 ml Water
Bread Dough Ingredients:
550 grams bread flour
8 grams salt
184 grams Water Roux dough
60 ml of milk
90 ml heavy whipping cream
86 grams whisked egg
12 grams instant dry yeast
80 grams white granulated sugar
50 grams unsalted butter, softened
Pineapple Topping Ingredients:
1 large egg
1 teaspoon vanilla extract
145 grams unsalted butter, melted
100 grams powdered sugar
220 grams bread flour
5 grams baking soda

Here is the correction on oven temperature:

Is that a fan-forced or normal convention oven?

This recipe never failed! Easy and clear instruction! I followed through the entirely recipe and successfully made the first time! It’s soft inside and crunchy outside! It was perfect to go with HK style milk tea! When I can’t fly home and this is the best way to pamper my home sick!

I've followed this recipe twice, and it makes the most perfect buns. The only thing that needs to be amended is the amount of water roux. The recipe only calls for 184g of the roux mixture to be used when you make the dough, but the amount you originally make is closer to 235-240g, so you end up wasting quite a bit of it.
Also, it's worth mentioning that this recipe makes *15* buns, not 14. If you divide all of your dough into 75g pieces like the video shows, you get 15 pieces.
请问没有whipping cream可以吗?还是可以换成topping cream?

When you divided the bread dough it's only 12pcs not 14pcs. And do you need to cover the water roughx dough to let it cool off before using?

我按照你的食譜將所有分量減半, 成品出來是像酥皮餐包, 口感像是pound cake,我家無高筋面粉, 所以用了中筋面粉加vital wheat gluten,如果手揉面團的話, 請問要多長時間? 我可能第一次發酵時間不夠, 第二次發酵面包發得很慢,差不多一個小時, 面包出來扁扁的, 我下次再試過。 謝謝 不過味道很好。

I just made these and they were successful. I didn’t think it would turn out to be successful as my dough was sticky. However I kept adding a little flour until it was smoother. Surprisingly it worked. Very impressed! Thanks for sharing.

Annalisa Yan i kneaded for a long time since im not strong, you will get there eventually, tip would be add some flour so it is easier to knead to get it to the consistency in the vid!

I made it. Perfect recipe
If I want to cut the recipe it half, would the amount of yeast (14g), be (7g)? Cause I noticed in some recipes, the amount of yeast would be different. For example, one loaf of bread uses 4g of yeast but two loaves of bread uses 7g. And can I still make this though I do not have a bread machine?
