I use plantain to make dumplings. Mash the plantain add flour and some cornstarch season and then boil in water until they float. Had it w8th a chicken soup and it was heavenly. Edit(use a 50:50 flour and cornstarch mix and make sure the dumpling mix is quite firm before boiling) enjoy

Yes, ripe or semi-ripe plantain will need a proper dehydration and still might not work because of the elevated sugar content as it ripens, it becomes tricky ( remember, theirs a few varieties of plantain, and they all function slightly different). So I also suggest using green unripe plantain which hasn’t started to develop its natural sugars, and this flour is readily available to buy at health food stores and can be done at home especially in a standard dehydrator. I like that you do it by hand instead of a food processor. I like being able to cook without using gadgets. I love plantains but it's rare to see them in stores in my area. I make flatbread using sweet potatoes.
Surely, at some point it's gets too overwhelming to store and clean all the gadgets. Most times you'll find plantains in African or Mexican stores. Are those available to you? Sweet potato pancakes sound phenomenal 😋 I'll have to try them someday soon.

Amazing idea thank you. I might try to add some oil in the dough as well so you don't need so much added to the pan, I find adding the fat in the batter given a much nicer controller cook.

You're so welcome! That sounds like a great time-saver. I haven't experimented with freezing them yet but I'd like to think so since I've freezed homemade tortillas in the past and they warmed up nicely without deforming. I'll update you on this aspect in the community tab once I've confirmed it. 🤗
These look fantastic. I have also made them without boiling and just added a tiny bit of water and didn’t have to add any flour. This also works well with green plantain. I did use my blender though instead of mashing. Waakye makes a great filling 😜

Your welcome! Plantains are different from bananas in that bananas have more water content than the former. When cooked, I notice that plantains tend to hold more form than bananas from frying to baking to boiling. Although I have not tried this recipe with bananas, I think it would be challenging trying to turn them to a dough. Please let me know how it turned out for you. I'm suppose you mean flour. If you opt to leave out the cassava flour, I suggest you get plantains that are just getting ripe not as ripe with all the black spots as in the video. I'd love to hear if this technique worked out for you. Have fun creative cook! 😊

Yes, cook them first, allow to cool then freeze.

Why not addd plantain flour to keep it gluten free
I would dehydrate the plantain and make into powder and proceed as normal for any flatbread paste. Thanks for the tip.
