I have been attempting gluten free vegan bread for 18 months now & this is the very first time I actually liked the taste. I did make a few subtle changes. Used chia seeds instead of psyllium husk. Enough seeds to make the water gluey. Used almond flour instead of rice flour. The mixture was wetter, so I used a loaf pan. Cooked at 190 for approximately 60 mins & it was perfect. Thank you

We do live in high elevation though so we end up using more tapioca flour than suggested in recipe to get it to the right consistency. Also, last night we doubled the recipe and made a bigger loaf for bigger slices. Our middle child can't have gluten or yeast bread atm and he really enjoys this one. We all really like it too (fam of 5).

I saw a comment that someone used it but not how much The only problem with this bread is that although very tasty I can't eat very much with all that fibre! I can't use gums and think psyllium is the only option (someone online said almond flour but I don't think that is mucilagenous enough :) ) BTW you are right about weighing - using measurement was no where near as nice.

Hey! You can make some modifications. Please read through the comments on my blog, there are some people who used lentil flour, etc. I wouldn't skip the tapioca though. :)
Your bread looks incredible. I tried making it using a store bought GF mix, & had to toss mine away. Curious if you've tried your recipe w store bought GF mix before? Thanks Ela!
I think someone tried that recently (check the comments on my blog: elavegan.com/gluten-free-vegan-bread/), but said that my own GF flour blend was way better.

On your website the ammount of Psyllium husk powder is 3Tbsp or 30g. When I added 3 Tbsp it came out 13g. Is your 30 g correct or is it have to be 3 Tbsp? Please help
You need to use powder, not whole. I measured it many times, and 3 tablespoons of the powder are 30 grams. Always follow the weight measurements, though.

Try the double amount of ground chia seeds, but the bread won't rise much. :)

Hi, no, that won't work. You might try a smaller amount of xanthan gum with less water.
