I wonder if can cut a thicker piece of watermelon and then hydrate it. Then when ready to use can rehydrate them in the seasoning liquid. Since hydration will give it a different texture when rehydrate and might have the fight texture more? 🤔. If someone done this before, please be so kind to share. Thanks
There is a recipe by Gentle Chef where he boils watermelon for 15 min in seaweed broth then drains on paper towels. and then marinates. Try this approach next time!

I have powder kelp, how much would I use?
I’ve never used powder kelp. I would suggest starting off with a few teaspoons and adding more as needed.
