If you want it to taste a bit more like tuna, would recommend you add some nori flakes in the marinade to give it more of that seafood-y flavor, but yeah there's never gonna be a perfect substitute for tuna (I freakin love tuna so we'll never get something that tastes as good) -- just a cool trick to try at home :)

I kinda wanna try this, maybe it would be good as a spicy tuna roll, the sweetness of the watermelon and the spiciness of the sriracha might be a good pairing. or add it to a California roll with cucumber avocado and cream cheese with some sriracha mayo, with all those ingredients it might create the illusion of it tasting like tuna because its surrounded by familiar sushi flavors.
If u r intending to try it out/again maybe try with a tasteless watermelon. try a few pieces that are made from freshly cut watermelon and a few from a watermelon that u froze and then left outside/in the fridge (and maybe try to also press on it/massage it a little so it loses its crunch and some of the juices). Add some nori seaweed to the marinade and maybe even cook with it on the top/bottom.. Just some things that my brain tells me will make this better hahaha
Thanks for this video and your honest opinion. I'm going to try this weekend but will add dulce flakes or crumble some nori sheets in the marinade to give it more of a fish taste. Anyone who is wondering why a vegan would want to eat food that tastes like it's animal counterpart is because most people who are vegan didn't give up animal foods because of taste or texture but rather ethical, health and/or environmental reasons. Foods like beyond burgers or watermelon tuna for instance, allow vegans to still consume foods with similar flavors/textures to the foods we were raised on and grew accustom to without violating our moral and ethical beliefs.
Love the channel... My friend in Japan recommended that I try slicing avocado and dipping it soy sauce and wasabi as tuna substitute, and you know what. It's pretty good, loses a bit of the magic without the wasabi though. He said his Aunt that lived in Hawaii for a while told him about it.
It all depends on how you treat the watermelon and what kind of and how strong of a marinade you put on it. If you put kelp powder and nori in the marinade it will get a fishy taste. Nonetheless it will never be exactly like tuna. Nothing vegan will be like EXACTLY what it’s trying to replicate and I don’t like how it’s always promoted like that. If you give people that high of expectations, disappointment is ensured. If you see it as a new flavor experience, you just take it as it is and don’t compare it to anything.

Soo I just made it but I put smoked coconut aminos, sesame oil, nori flakes and old bay seasoning and garlic powder it turned out very convincing! BTW, I'm a pescatarian that eats mainly plant based during the weekdays which is why I tried this so I know how real ahi tuna tastes!
I've had vegan "smoked salmon" tons of times, im not a vegan and I love smoked salmon and it was really close to the real deal in a bagel. It was made with carrot, liquid smoke and the thing that really made it take somewhat like fish was seaweed in the marinade. I wonder if you could make something closer to "vegan tuna" using an unripe unsweet watermelon and adding seaweed into the marinade.

I've seen people doing unspeakable things to innocent watermelons and gotten them to have some weird (but awesome) tastes. Fish isn't quite one of those tastes. Perhaps this guy had been vegan for so long that he forgot what tuna tasted like.
As someone who was vegan for 9 years (and still vegetarian), I can tell you that you COMPLETELY forget what meat tastes like - and if you accidentally eat meat it just tastes nasty - like fat and musk. If he (and other vegetarians/vegans) like it, more power to 'em - but I really don't think meat-eaters should expect it to taste like meat to them... You need to get a meat-eater to taste it before you make any big claims lol

Ok! I will say--there's a place in New York called Fresh & Co that has a salad in which they marinate tomatoes in a similar marinade, and I can attest that that genuinely tastes like tuna. If you add some nimono, furikake, and some seaweed, it adds to it as well! I'll try and look up the recipe if it exists!

joseph stallings I originally went vegetarian for my love of animals and it became difficult for me to eat/cook them. About 1-2 months in I found out I have some health issues and a couple doctors told me it would be best to stay vegetarian.
I tried this like 5 years ago at a Poke place and it was amazing how much the watermelon actually tastes like tuna!!!! Pretty delicious even though I would much rather have actual Tuna haha
Hey Taku, how about you make a video actually trying to make the water melon taste closer to tuna. Boiling it to remove the watermelon flavour, soaking in kombu or something else in the marinade to get more of a seafood flavour, adding some MSG, then baking it. Perhaps then it could work, or atleast get closer. Love your vids Taku.

I could see it under the conditions of bad watermelon (underripe) tasting like bad tuna (low quality). Both of those have this mildly sour flavor that has reminded me of each other when I've had the displeasure of having them. But good watermelon and good tuna taste completely different, and Taku was never going to try this with sub par ingredients.
Maybe take a watermelon that isn't completely ripe and take the edges (close to the white stuff). Maybe it's not as sweet and watermelony. And also add some kombu or nori to the marinade so you get that seafood flavor. Maybe even add some more oil to make it more fatty. It definently won't be tuna. But i guess it's a pretty solid vegan option for fancy new sushi rolls. Definently looks tasty! Never being a replacement for tuna for me. But i would still love to try it :)
Tajin is great and all... but have you ever had watermelon with a sprinkle of ground ginger? Yummy! Kinda tastes like watermelon rind salad, also yummy!

How about adding rice vinegar and some kombu to the marinade? it should reduce the sweetness and add some see taste
