Thanks for this video and your honest opinion. I'm going to try this weekend but will add dulce flakes or crumble some nori sheets in the marinade to give it more of a fish taste. Anyone who is wondering why a vegan would want to eat food that tastes like it's animal counterpart is because most people who are vegan didn't give up animal foods because of taste or texture but rather ethical, health and/or environmental reasons. Foods like beyond burgers or watermelon tuna for instance, allow vegans to still consume foods with similar flavors/textures to the foods we were raised on and grew accustom to without violating our moral and ethical beliefs.

  • @nika5318
    @nika5318 4 года назад +91

It all depends on how you treat the watermelon and what kind of and how strong of a marinade you put on it. If you put kelp powder and nori in the marinade it will get a fishy taste. Nonetheless it will never be exactly like tuna. Nothing vegan will be like EXACTLY what it’s trying to replicate and I don’t like how it’s always promoted like that. If you give people that high of expectations, disappointment is ensured. If you see it as a new flavor experience, you just take it as it is and don’t compare it to anything.

I kinda wanna try this, maybe it would be good as a spicy tuna roll, the sweetness of the watermelon and the spiciness of the sriracha might be a good pairing. or add it to a California roll with cucumber avocado and cream cheese with some sriracha mayo, with all those ingredients it might create the illusion of it tasting like tuna because its surrounded by familiar sushi flavors.

If u r intending to try it out/again maybe try with a tasteless watermelon. try a few pieces that are made from freshly cut watermelon and a few from a watermelon that u froze and then left outside/in the fridge (and maybe try to also press on it/massage it a little so it loses its crunch and some of the juices). Add some nori seaweed to the marinade and maybe even cook with it on the top/bottom..

If he (and other vegetarians/vegans) like it, more power to 'em - but I really don't think meat-eaters should expect it to taste like meat to them... You need to get a meat-eater to taste it before you make any big claims lol

Use a slightly underripe watermelon, and a different technique - simmer it in kombu dashi for 10 minutes then drain on a bunch of paper towels for a while. Mind you you need to cut it much thicker as it will have most water drained out of it and will shrink. Then marinate similarly, a bit of soy, a touch of mirin, but use either algal or hemp or chia or flax oil to give more of rich sea taste. Huge difference, gets rid of watermelon crunch and takes on supple texture.

I being non vegan. Is always so amazed and fascinated by non vegan things and what people make out of it. I know from the same experience you just had, that - watermelon is a lookalike (that I give credit too) but not taste alike.
Try this recipe for a experiment.
    200g sushi rice
    3 ripe roma tomatoes
    Marinade:
    1 Tbsp soy/tamari sauce
    1 tsp miso paste
    1 Tbsp olive oil
    ½ tsp smoked paprika powder
½ tsp nori flakes (I simply grated nori sheets)
    2 Tbsp hot water
Cook and season your sushi rice according to instructions on the package and let cool down.
Fill a small pot with water and bring to a boil. Take you tomatoes, place 4 small cuts into the skin on top and place into the pot. Let the cook for 40-60 seconds until the skin is slightly coming off. Immediately take off the heat, and drain and rinse with cold water to prevent further cooking.
Carefully peel off the skin and cut the tomatoes in halves, then again, and again. Use a melon scoop or spoon to scoop out the inner parts (seeds, liquids, etc.) until you have a simple slice of tomato left.
In a bowl combine all the marinade ingredients until smooth. Place the tomato pieces inside and stir to cover all pieces. Place in the fridge for 30 minutes (or overnight).
The nori sheets will give it that seafood taste.

@@LetsGoFlyers2011 though it might remind me of those Korean sushi rolls. The one with mango. It's on a sweeter side. Since watermelon is sweet it can have a bit of resemblance.

I add some wakame or kelp during the marinating process. No it didn't taste like tuna but when I was vegan along time ago the flavors did the trick. Now I'm 100% tuna and watermelon is for picnics!

Maybe take a watermelon that isn't completely ripe and take the edges (close to the white stuff). Maybe it's not as sweet and watermelony. And also add some kombu or nori to the marinade so you get that seafood flavor. Maybe even add some more oil to make it more fatty.
It definently won't be tuna. But i guess it's a pretty solid vegan option for fancy new sushi rolls. Definently looks tasty! Never being a replacement for tuna for me. But i would still love to try it :)

Maybe add MSG. or vegan bouillon in the marinade? Also you can use green jackfruit.

What if you tried marinating it in water first (to pull the sugar out through osmosis) then do a soy/sesame marinade. That might help get the sweetness out

I think you would have more surface area to expose to marinade with the small pre-cut pieces.
