What's the labour time for a job like this? Specifically the water pump/thermostat.

Water pump it is easy, thermostat is around 5 hours if you do it right, i see shops do in 3 hours and in a year leaks again :)))

Did the a/c start working after replacing the solenoid on the compressor?

That was the Solenoid for Camshaft Adjuster

I need to replace my injector on cylinder 2 do i have to drain the coolant beforeb taken out supercharger and what gaskets do you recommend replacing once i remove supercharger

Yes , you have to replace gaskets too, but do the carbon cleaning too.
