Old Fashioned Fig Preserves like Grandma made

  • During the Fig Season July 2013 I picked about 20-30 gal figs per week for a 3 week period. I made Strawberry Fig Jam (link to that video below), Old Fashioned Fig Preserves & even froze whole cleaned figs. All of this from that 1 Fig Tree that I have shown in some of my pervious videos.

    I hope seeing this has helped someone but PLEASE refer to Ball Blue Canning book or the Ball Complete Book of Canning (links to these books below). Especially if it is your first time canning. Proceed at your own risk.
    The formula/Recipe I use:
    1 Part Figs (32 C Figs)
    1/2 Part Sugar (16 C sugar)
    Mix clean figs & sugar in your pot. Bring up the temp & continue to cook with syrup bubbling slightly for 1-2 hours. Syrup will not appear very thick, this is ok, it will continue to thicken up as it cools & even more so when it is refrigerated (after opening jar).

    Great video. This fig preserve video look so much like my mom and grandma use to make. I'm going to go and find myself some fresh figs and cook this fig recipe. Then like a fat hungry little boy living on the farm, I'm going to sop them up with several cans of biscuits .

    I sure do love figs in any way shape or form and you got some mighty fine preserves! I do like the big ones, though I know you don't so no worries, just a matter of taste. So good, thank you for sharing. Sure wish I could grow fig trees here. You are fortunate, and good for you! God bless!

    Thank you SO much for doing this video. I'm pretty sure this is how my Grandmother did her fig preserves. She left hers whole though :) I haven't had them since I was a child and I miss them, so I'm happy to know now how to do them myself. I think it's so important to carry on such traditions. Thanks again for sharing :)

    Enjoyed your video. I for one love fig and ginger jam. Just nothing beats fig jam, certainly my husbands favourite. Thanks for sharing.

    I made raspberry and strawberry fig preserves this summer. I water bath them. I planted my own tree this year so I look forward to home picked next year.

    That is awesome!! I wanted to do some Raspberry this year but could not find any Raspberry Jello? Weird. Maybe I can find some next year?
    Yes I also water bath my Jams. Mainly, I think because I feel that the Jam mixtures are not quite a HOT as the large pot of Fig Preserves so am not comfortable that the vacuum will form.

    Ohhh Bread & Butter pickles are so delicious!! Funny, my birds ate way less figs over here also!! Isn't that strange?
    Yes that is my breakfast every AM~toast/biscuits with Jam/preserves & Coffee!! Cajuns gotta have their Coffee! LOL

    Sorry I did not make myself clear~you did not miss it. I just let them seal on their own (they have lasted a couple years this way). Yayyy for your Grandpa~smart man planting that tree so many years ago!
    Yes try a small batch like this & see if you like them. With the ratio you can make as big or small a batch as you desire. Also you can freeze the cleaned (& stem cut off) for cooking later if you choose. Wishing you the best with them & any more ?? just ask away. Let me know how it goes.

    Yes Mam~~I did not Water Bath them at all. My Grandmother never did, My Mom doesn't & I never have. I do Water Bath my jams & Jellies but mostly because I am following recipes (that I am not familar with them with long family history) so I follow what the Recipes says.
    Sadly sometimes I think Safety Regulations are put in place for those who have no sense? lol Like Expiration on Eggs? I ignore the expir dates mostly & use my Eyes & Nose to determine because we sure did not grow up with all those

    You just open kettled them? No water bath, or anything? I used to do tomatoes that way in the 1950's and 1960's, and we always did jams and jellies like that. In fact, we just put wax on top. I never did figs, because I had a zillion jars my grandmother and my mom had made. Back then, we didn't know jelly could ever go bad. (Well, I guess it can't. I have some 5 so old it's trying to crystalize.)

    I am not sure if I missed it or not but do you water bath these or just let them seal on their own? I know some people do that so I was just wondering. Looks yummy! I have a fig tree behind my shop that my grandpa planted before I was born. I've only eaten them fresh never cooked so I may try this since I always have tons of figs. Thanks! Take care :)

    Ok hope I can explain this in text..lol
    1 part can mean any amount measured....such as 1 Cup...then your sugar was equal 1/2 Cup. Notice where I said 1 PART Figs to 1/2 PART Sugar. So the actual measured amount can be any amount.
    More examples: 12 Cup Figs to 6 cups Sugar. Your sugar amount will always be 50% less or one-half the measured amt of figs.
    I have never actually done Pears this exact same way. But I have done them where I don't measure? just by taste?

    You could possibly try a small amount of pears using the Ratio of
    3 Parts Fruit to 1 Part Sugar & this will turn into this type equation such as :
    6 Cups Fruit
    2 Cups sugar
    Another way to look at the Math is like this:
    3 Parts X 1 cup.....= 3 Cups
    1 Part X 1 cup.......= 1 Cup
    If you use this equation, then you can always figure your specific amts depending on the Amt of fruit you have available to you. Let me know u need more help understanding this. I really do not mind. Thanks for asking
