    never heard of potatoes exploding until microwaves became popular. when baking mine in an oven i use a metal skewer so maybe that's why they don't explode. skewer helps cook them faster because the ends heat up which works it's way to the middle. my mom used to get really long nails from hardware store.

    Heard restaurants use margarita salt instead of kosher. Go easy on applying ..strong flavor. You can also pierce a metal skew through it lengthwise instead of forking. I often add lemon pepper to the salted potato’s. /collette

    I go 400 F for 1 hour and bake directly on rack.

      I was taught at culinary school there is absolutely no reason to poke holes in the potato.

      I was thinking that when I was watching the video. So many people use a fork first. I am 58 and never poked holes in my potatoes and never had a problem.

    When I punch holes in the potato I punch really deep and all over the potato. Is that a bad idea to punch so many holes so deep?
    I am still trying to get the center fluffy, but no luck. Also I cook at 400 degrees for 1 and a half hours for two BIG potatoes.
    Am I doing this all wrong? I can't get the skins to be crisp either. I love potatoes and would really appreciate any suggestions.

    I mix a kosher salt with ground Parmesan and some Natures Seasons...And After about an Hour, I like to lightly coat with melted butter and sometimes even some shredded cheese...Serve with organic hamburger or steak...FORGETABOUTIT...:)

      My great uncle was baking potatoes in an old wood stove...it popped when he pulled it out and got in his eye and blinded him.

      He said about forty minutes. I bake at least an hour. Unless it is a very small potato, it is still quite hard in forty minutes at 375, in my oven.

    Obviously you have never baked or microwaved a potato and had to clean the resulting mess when they blow. I guarantee in a microwave it will blow, and we have had them blow in the oven as well. And try to keep it at least "PG." Probably a damn Patriots fan.

    Martha Stewart cooks hers at 400 degrees for an hour, just saying. 375 for 40 minutes equals a raw potato in my part of the world. Guess your directions might work at an high altitute location, but not at 750 ft above sea level. Poking holes, I would not unless microwaving, In my book baking them in an over.

    Kosher salt also seems to be saltier than iodized little grain salt

      Gotta cook them longer sometimes, everyones potatoes are bigger or smaller and ovens cook hotter and cooler. The "until fork tender" statement is probably a better all around answer for cooking time. His 40 minute number is a good starting point so you can get the rest of your meal coordinated. Potatoes can sit for a while and retain their heat so if cooking a main course like grilled steak or chicken you can probably wait till the potatoes are starting to get tender and then start grilling the meat.

    Kevin, you might be surprised how many people simply microwave their potatoes, versus taking the time to bring out the flavor and texture of the skin via the olive oil and kosher salt...but....feel free to unsub asstard. Better yet, I think you will be blocked.
