Mini Upside-Down Banana Cakes

Here is what you'll need!
MINI UPSIDE-DOWN BANANA CAKES #TASTYJUNIOR
Servings: 12
INGREDIENTS
5 medium, ripe bananas
3 eggs
½ cup vegetable oil
½ cup granulated sugar
1 tablespoon cinnamon
2 cups flour
½ cup butter
1 cup brown sugar
1 banana, sliced
Vanilla ice cream
PREPARATION
Preheat oven to 350°F/180°C.
In a large bowl, mash the ripe bananas.
Add the eggs, oil, sugar, and cinnamon, and mix thoroughly.
Add the flour and mix thoroughly.
In a saucepan over low heat, melt the butter, then mix the brown sugar until dissolved.
Increase heat and bring mixture to a boil.
Remove the saucepan from the heat, and divide caramel between the cups of a greased muffin tin.
Lay a banana slice in each cup, then fill cups ¾ full with banana batter.
Bake 20-25 minutes, until a toothpick inserted in the middle comes out clean.
Serve with vanilla ice cream.

DerJul. Depends on how sweet you want them to be. I tried making these and I can tell you that the caramelized brown sugar made it so sweet that I had to drink like 20 glasses of water just to kill the sweetness in my mouth. But most importantly - the texture is dry. No moisture. You need to add either some milk or yoghurt to make it moist.

I would have thought that the oil and the bananas is what is supposed to make things moist. That is what I was told and what I usually do. I didn't see them aid any sort of leavening agent either. I would maybe try a bit of baking soda and then yoghurt as you suggested. Maybe eliminate 1 egg and some of the sugar. Of course then it would be a totally different recipe, lol.

Do we use Plain flour or self raising flour?
Both in the video and in the description box below, they say 2 cups flour, which means plain flour. It seems they didn't use a raising agent in this recipe. I hope this helps :)

I made these! They looked delicious and smelt yum but when I made them the caramel cake up and went almost everywhere! Plus only two of the twelve come out as they were supposed too the rest come out with the caramel still liquid at The bottom :( also I'm not sure they were fully cooked 😔

What's the difference between normal white sugar and brown sugar? In my village there is only white sugar.
D S brown sugar contains molasses because it hasn't been completely refined, but you can just substitute it with white sugar. There's just a subtle change in taste. If you still want the exact taste, you can just add molasses to the recipe.
