I made this for my mom and omg. Let me tell u. The texture was PHENOMENAL. SOOO fluffy and moist. I wasn't a fan of the strong peanut butter taste so next time I'll use almond butter but this was DELICIOUS. I also used 1 tbsp of cream instead of almond Milk cuz we didn't have any atm.
This will now be my chocolate fix! Absolutely defies logic! Forgot to put the milk in and it was still super moist. Sprinkled Lily chocolate chips on top while still hot and a dollop of heavy whipped cream. Thanks for this recipe! 🥰 my hubby didn't believe me that there is no flour in it!

Omigosh! So good 😊 I used Smuckers natural creamy peanut butter, cut the Swerve to half recipe amount and added Stevia sweetener. Baked in oven for about 8 minutes. At 4 minutes added some sunflower seeds. Pure yumminess with the molten center and crunch of the sunflower seeds! 😋
I love this. My son is allergic to tree nuts and the majority of baking or non-dairy recipes call for ALMOND! I would love to see more keto recipes that have an alternative to using tree nut flours. Thanks for this one.
This is really good...I tried the brownies with the almond flour and I can't get past it. I even made this tonight with peanut butter and heavy cream beacause that's all I had. I also drop a couple of chucks of cream cheese in it. Yummy!

I must say, Joe, outdid yourself on this absolutely yummy yummy low carb mug cake, especially those of us lowcarbers not to use flours or avoid sweeteners, & eat protein(egg)! however, I used only a Tablespoon of Besti brand powdered sweetener- pistachio nut butter(8 grams- 2 T), & another cake with purely pecan butter(4 carbs-2 T)-- absolutely satisfying & oohh soooo yum-- can only eat about 1/4th after a full protein meal! Thank you! 40- 46 seconds on my microwave😁

I added more cocoa powder, protein powder, honey, coz I didn't have Confectioners Swerve/sweetener, and normal store bought peanut butter coz I had no other. Needed more time to cook it and it made quite a large cake in a cup. Was still delicious! And very filling! I'll get some sweetener for nxt time & make my own nut butter so I can make it exactly like this
Hi Joe You still have to be careful with peanut butter and seeds as they are higher in omega 6 . Macadamia nut butter is the best choice for equal amounts of omega numbers .
Turned out great. Another keeper for sure. I do think it is worth it to add the same "frosting" recipe as provided in the chocolate yogurt cake recipe. It just adds that extra layer of complexity and taste.

I really like this because the fats are not all saturated. There is SOME saturated fat, but not all, especially if I use a butter alternative. I can do some fat, but not an over abundance of saturated fat. Thank you.

i used natural crunchy pb and heavy cream instead of almond milk...77 secs in the microwave...FANTASTIC!

Pro tip: mix all the ingredients directly into the Ramekin. That way you eliminate the step of having to transfer the batter over.
I do this on my keto lazy bread recipe, but for mug cake i usually make 2-3 mug cakes so i use a bowl...

Love the texture of this cake. Much nicer than the almond and coconut flour kinds. Those are good too but I like this one much better.

Yes, he did use a spatula---he used a mini spatula, I saw it. It looks just like mine, so maybe that's why I noticed it in the mixing cup.
