Great video mate! It’s exciting to see a b set at that station!

Hurstville my old stomping ground and a good video.
If you're there on a weekend or weekday off-peak, sometimes what you saw (all trains on platforms 1 and 2 aka Illawarra Local) happens when they're doing work on either the station or line between Hurstville and Arncliffe, though if a weekday peak period it'd be more chaotic as that would either be an incident or train with issues in that same section.
What's more unusual is a southbound train off platform 1 or 3 given trains normally head towards the city from those platforms (which you saw off platform 3).
A, B and M sets are indeed uncommon (remember the days of the 4 car M set during initial running before they realised they took much power, causing one to get stuck on the Cronulla branch in morning peak).
Used to see them at Hurstville pre Metro works when the Bankstown line was closed for trackwork since those trains would indeed come from the City Circle and turn around at Hurstville.
Think the reason for not tiling platforms 1 and 2 all the way is because that end section is subject to weather since it's exposed, and you don't want wet tiles with a sloping platform (you may have noticed platform 1 slopes down towards the track).

This thing started on a Thursday and ended on a Tuesday, and whilst it was supposed to be open for the weekends, Transport for NSW kept it closed over the weekends (hence the sudden change in timetable I showed in the video)
And yes, this trackwork happens when either the tracks between Hurstville and Arncliffe or the tracks at Wolli Creek are out of action.

There are few southbound trains on Platform 1 timetabled, but platform 3 never has southbound services.
There was a terminator from the City Circle one time during industrial action, where an M set came into platform 3 from the city and terminated there to form a City Circle via Museum service,
      That was super excitingn
