    Heat breaks down starch, and it releases the sugar. A raw potato has zero effect on your blood sugar. But, when you start heating it, that’s when things start to go downhill.
    On the glycemic index, below 55 is low, and above 70 is high.
    • Fried potatoes or french fries are at 75 on the glycemic index.
    • Potato chips are at 54 on the glycemic index.
    Potato chips are better than french fries when you look at the glycemic index, but what about other factors.
    Potato chips:
    • Oil Trans fat/GMO
    • Sugar
    • Chemicals
    French fries are often consumed with ketchup or meat, which can cause the glycemic index to be higher than 75, which can cause additional problems.
    French fries are usually consumed with a meal. Potato chips are usually consumed as a snack, which adds a spike in insulin.
    Having a potato chip at the end of a meal instead of a snack would be a better choice, especially if it was cooked in olive oil or avocado oil.
    Potato chips versus french fries, which one is better: Overall, potato chips are better to have than french fries.
    However, when starches like potato chips and french fries are cooked above 250 degrees Fahrenheit, it creates a chemical called acrylamide. Acrylamide may cause cancer.

    Our ancestors didn't have a choice on food, they only had real food, but we have supermarkets full of added sugar processed food

      @@venM9 Choice? Not really. At one time, women prepared almost exclusively homemade meals from scratch for their families. Company execs decided to try reprogram their brains into buying the newly emerging fast, processed, and chain restaurant foods. A lot of time and money went into researching how best to market to them and to engineer the products eventually making these highly palatable and addictive. After many years of trying to convert the women and seeing limited success, they switched to targeting young children instead.
      So, the average American today below about 60 yo has been bombarded with this stuff daily since they were toddlers. Brainwashed people usually can't breakout of that mindset on their own. If it was possible to make better choices, the vast majority of Americans today wouldn't be obese, out-of-shape, and/or sickly.

      Buy a bag of natural grown potatoes, some free range eggs, whole organic milk, organic oatmeal, organic parsley, onions, garlic, tomatoes, squash, dill, lentils, etc, etc.
      It's very easy to make a meal out of that.
      You dont need more than to keep in shape and live healthy.
      Add some proper fish or chicken from some organic farms if you feel dearing.
      It's really not that difficult.
      I prepare meals less than one hr a day.
      Most of the time spent by those poor women of old, was gathering or preparing the fire and bringing the water.
      I know for a fact. My grandmother used to do that .

      Most Americans consume large quantities of recreational drugs.
      I dont see big corps advertising for that.
      Its choices people make.
      Most people make bad choices in every century and every season.
      Human nature.
      Big corps only chash on what sells.
      And people buy mostly bad goods because they like bad foods.
      They taste better.
      Sugar wouldn't be a problem if it tasted bitter.
      But sweet ,oily and very salty things taste better.
      It's easy to explain.

    This blew my mind because chips are so thin in actual potato material that I figured they would have much more harmful grease, whereas a french fry is a thicker piece of potato. I'm also surprised that the effect on blood sugar is different, I figured it would be the same.

    I'd pick the fries because it retains a lot of its nutrients if cooked properly where as crisps do not. Chopping whole potatoes into fries and baking them with a few table spoons of olive oil, saltand pepper is a much, much healthier option than a bag of crisps

      Sweet potato is worse in that is has more sugar than standard ones. Chips worse in that they are usually cooked in cheap vegetable oils which cause other health problems.

    When you pointed out potatoes had zero effect on the glycemic index when raw, I never new people ate them raw, as well as sweet potatoes, yams, and Yakima. Can you do a video on those as well? There are so few zero carb foods it would be interesting and helpful. Thanks.

    If I'm gonna cheat. It's not going to be with chips. I'm dying for a grilled burger on a REAL bun with a plate of french fries. It's been 7 months since I've had potatoes, bread, rice, pasta or sugar. Lost a ton of weight and feel great, but I absolutely miss french fries BADLY!! lol

      So happy for you. I am trying so hard to get there. I am doing a lot better though. I am down to French fries and a brownie once a week. I try so hard to cut it out but once my husband is home he is always getting something to eat and its hard to say no. At least I can go all week when he's not here.       You know you’re going to die anyway right? Just work out more and indulge in your cravings in moderation. I don’t understand why people torture themselves like this. Non food related deaths can happen in an instant and they happen all the time so why screw yourself out of that juicy burger and fries- make it yourself, use an air fryer and get a couple more reps in at the gym or jog/walk an extra mile. Balance and moderation.

    Dr. Berg this content is great! I always go back and re-watch videos and take notes about what's in food and what it does to you. I'm honestly at the point where I don't have an urge to cheat because all I can think is how gross certain foods are or ingredients. Please do more videos about the garbage food that's all around us.

    So... the answer is to thin slice a potato, baste the slices with butter and slow cook them at 240F - Ergo, the glycemic would still be zero?
    Stay below 250F where starch breaks down.

    There are 4 types.
    for example
    type 3 - Resistant starch that is formed when starch-containing foods are cooked and cooled

    When I eat chips, I also drink water because it rinses out the sodium. I also drink pomegranate juice as an antioxidant. Only small sips though because of the amount of sugar.

    How about the amount of times, hours and days factories reheat the same oil until is bad enough to discard. Not to mention if they want to extend the oil by filtering and using that white powder to whiten it. 🤔

      Worked in a fast food before. We used some powder to filter the oil and press a button in the deep fryer to activate its cleaning process. We also use heated oil to clean the deep fryer

      ​@John Hooper It doesn't matter how they got insulin resistance. Once you have it, carbs spike your blood sugar more. People need to realize that there isn't a one size fits all diet, because people have various different health conditions and goals. There is no such thing as healthy food. There are diet plans to meet certain goals and deal with certain issues. There are foods that fit into these plans when consumed in proper portions.

    My clients ask to come off Keto during special events or vacations and I have learned to just allow them to make this decision. Being healthy shouldn't be a punishment but I find it is benefiting them to commit even more by taking this break and seeing that the grass isn't greener on the other side. Sometimes I think it's a good thing to remember why they started Keto in the first place.

    Acrylamide occurs in other foods by the roasting process too. Your coffee beans release small amounts as well. If you can't moderate it with self control, dont eat it.

    When I eat potatoes I slice them thick and put them in my air fryer for about 16 minutes with no oil and they get golden brown. They did a big study on potatoes and found they really did not elevate blood sugar levels. I know for sure they won't if you eat them cold like in potato salad..

    Been off sugar for a few years and the results are amazing, especially my mood. I have experimented sugar after getting de-toxed and I finally realise exactly the true effect, totally mindblowing, every way you see it.
    Try ! But first detox at least a month.

    My understanding is that if you boil potatoes and eat them when cooled they won't spike insulin as much as when hot. For me. This site is the only source of information that I trust.

      A lot has to do with local area gene modification over many generations. For example, Eskimos only ate whale and seal blubber for thousands of generations for much of the year. A Mediterranean would probably die on that same diet.

    I've heard that glucose isn't the problem because a lot of it goes to different part of your body to be used.
    Where as frutcose only goes to your liver and your liver doesn't know what to do with it.
    Dr Pradip Jamnadas says potato's aren't a problem at all unless you want to lose weight.
    We call French fries chips in the UK and I cook them in lard.

      @@1yoan3 no it doesnt. Potatoes are one of the best food if you want to lose weight.
      You gain weight with chips or fries if they are full of fat.
      With low fat fries you wont gain weight or feel lethargic.

    I fry my potatoes in tallow/lard/bacon grease. I think the potatoes absorb the fat and it lowers the GI.

    Hi Dr. B ....... what about Non GMO expeller pressed Canola oil? I see that at Whole Foods and other food stores that salad bars offer some tasty prepared foods there they add Non GMO expeller pressed Canola oil into the mix.
    Is Canola oil OK if it's Non GMO and expeller pressed??

      It's about quantity. It contains pretty much unsaturated fats which is important for cardiovascular system and metabolism. However you should be careful with the calories and in Germany only 3 out of 23 oils were certified as very good.

    Dr. Berg: Have you done a breakdown on popcorn that includes nonhmo heritage corn popped plain on stove versus plain in a brown paper bag in microwave. My question is, since the corn is dead seed at this point, is it one of the few “foods” not at all affected or rather not at all disaffected by being popped in microwave? Again, not talking about commercially prepackaged microwave popcorn that comes in coated bags with some kind of buttery-like agent inside. And secondly, if it is true that plain popped corn is calorie-less, is it quite a cheat snack that can double as a vehicle for real butter, avocado oil, walnut oil (tastes like butter to me!), or olive oil, along with whatever herbs and spices and smaller seeds one wishes to toss the popcorn in... such as dill, sea salt, lemon, sesame seed, etc.

    Even with the best of intentions, diets don't work in the long run because people can't stay on them forever. Some people can, but most can't and that is the truth. When you start with, you can't eat this, you can't eat that ever, you set up deprivation which causes it to fail. There are other ways around it, plant sterols being one, berberine, and chitosan. If nothing is forbiden, you won't binge on it because you know you can have it so there is no guilt. You have to work with what you can do. It does no good to go on unrealistic diets that you can't stick to.

    An airfryer was a solution - cornflakes and or other fleurs can be a crunchy panade- without oils- or popcorn, veggie chips baked-
    Any options??? The crunch releases stress for many people....but yea it is almost deadly - to snack through high fried bag of chips....there are options missing

    Lifes to short to study every single item of food you put in your body down to a fine art. Everything in moderation is what I stick to. Try and eat a wide range of everything.
    I've seen friends who were perfect weight, non smokers die in their early 20s. I've seen another friend die in her mid 20s . She smoked and was over weight but what killed her was not related. I think alot of it is to do with your DNA etc. Like they say when it's your time to go it's your time to go.

    My primary concern is not Glycemic index, fries have trans fats, I also wish to avoid all omega 6 oils Including canola and see oils since other tests indicate that omega 6 is fat more unhealthy than carbs.

    The only thing I have to give up now is bread and sandwiches....I don't eat it a lot but sometimes I don't know what to take to my student job to eat and just make quickly sandwich after collage xD

      You could be right because one of my favorite foods around the holiday time is potato salad and my sugar doesn't Spike up the only thing I eat on the holidays now is the meat and the greens.
      I stopped eating macaroni and cheese and dressing years ago but I would eat the potato salad and I did notice that my sugar didn't shoot all the way up now I know why.

    It seems as though cultural, ethnic, genetic factors and also internal attitudes must be Considered as an overall contribution to the intake of any dietary regimen . Every one does not metabolize the same things the same way depending on those factors.

      Yeap. My belief is that, avoid processed food as much as possible and eat in moderation what nature has provided. For instance, I won't touch soda, ever and I won't eat kale everyday, rather once/ twice per week despite all the benefits.
      It has worked for me for 3 decades , probably will not work for others.

    Yes. I agree. The oil you fry it in is the important factor. You use a good oil you'll be fine. Try to use sea salt. Much healthier than that horrible tasting table salt.

      Carmen Taira it’s not by brand it’s by ingredients. Here in Denver we have Boulder chips with options for avocado, coconut and safflower oil. They don’t do canola ever from what I can see but some of the flavors like BBQ and malt vinegar have lots of sugar. There are some brands that are generally awful but their plain salted chips are pretty clean and simple. I always look at ingredient list no matter the brand

    Yes, eating the chips after or with a meal is much better. Food combining lowers the glycemic response due to slower absorbtion. As mentioned, the sauces can cause serious problems if over consumed. Quantity should be controlled for sure. I purposely didn't shop Costco today to give my body a break from the chips. But now I really want them haha. Bought rice crackers just not the same. All good in moderation. Enjoy life. 🧡

    There are many things to consider. I have gut issues, so I soak my cubed potatoes, to pull some of the starch out. Chips wouldn't work for me as I doubt they are presoaked, and I couldn't eat them raw; too fibrous. I drain them and cook them in new water just till they are soft. Mashing them is easier for me to digest. I just add butter, sometimes broth, water or almond milk. No sour cream or milk. And they are a treat, not an every day food. I will make sure I simmer them as gently as possible from now on.

    my grocery store sells a brand of chips containing ONLY sunflower oil, salt, and natural seasonings. no preservatives whatsoever. when i read the label im in total shock

    I LOVE potatoes in any form, but I know they're very bad. Once a month, when I buy produce, etc. I buy and eat the smallest bag of chips, for a treat, but do not eat potatoes at any other time.
    I do not buy very many snacks, but I know I should consume less than I do...

      Don’t worry about cholesterol. The sugar industry paid for bogus research in the mid 60s that started the cholesterol myth. It was debunked in 2010.
      Focus on triglycerides.

      @@sunshine2049 Dr Berry says research has shown that triglycerides are the more accurate marker for heart disease than cholesterols.
      A study done about 10 years ago showed that not only was high LDL not a risk factor, it was actually protective against heart disease. Completely the opposite of what they’ve been claiming for 50 years. Yet they’re still selling statins because dogma is difficult to unlearn.
      You bring down your triglycerides by getting blood glucose and insulin levels down and getting your liver healthy again. Listen to what Dr Berg and several Keto/Low carb/carnivore MDs who have channels teach about nutrition.

      I will research Dr. Barry I’ve never heard of him, but that’s an interesting discovery since high LDL is the reason that everyone is taking statins. I refuse to take medications, I try to treat it with diet, I’ve cut down the amount of sugar I eat even though I’m in very good shape, I also take fish oil But to no avail, I recently/the amount of butter and olive oil I’m consuming let’s see if that shows any bearing on it I’ll give it a try though. Thank you for your input input

    I have not eaten French Fries and potato chips in a while. I love both. I buy potatoes and make French Fries with spices (no salt) in the oven. I sometimes fry potatoes. If I do, I use olive oil or avocado oil or grapeseed oil.
    But nowadays I don't eat potatoes.
