    Hi. I am Joconde.
    This time, I made Mint Chocolate Cake!!!
    But truly, I don't like Mint Chocolate.
    Why do they put mint in chocolate... I've always wondered.
    I saw BTS V Live a while ago, and RM also said that "why do they put toothpaste in chocolate?". I really agree with him.
    But also my husband liked mint chocolate so He had kept asking me to make a mint chocolate cake.
    I resisted intensely and ignored it thoroughly.
    I convinced him, saying that it was a waste to buy a whole bottle for a few drops of mint essence.
    Nevertheless, I ended up making Mint Chocolate Cake.
    I have to confess that it's one of the best things I have ever done. Hahaha...
    One day, I was looking around the Mart, suddenly the Peppermint candy caught my eyes!
    The ingredients of mint candy are sugar, starch syrup, and mint essence.
    I got an idea to make a sponge cake and whipped cream with this candy.
    Tested… tested… all week... Wow~ It was really delicious.
    The mint taste is not strong. It is softly fresh and has a mint scent from the inside of the nose...
    My family, sister, and a friend tasted it. Everyone loved it. It releases a nice, mild, and fresh mint flavor. But not too sweet.
    I am grateful to mint candy. Even I, who hates Mint Chocolate, really enjoyed it.
    I tested two mint candy products. They tasted slightly different, but the results were all good.
    Even someone who didn't love 'Mint Chocolate' like me would really enjoy this cake. I recommend you this recipe.

    Ingredients (15cm / 6inch size cake)
    ♥︎ Chocolate sponge cake (15cm / 6inch)
    2 eggs (104g)
    90g powdered mint candy
    1 egg white (36g) + 30g sugar
    55g cake flour + 11g cocoa powder (Valrhona)
    30g heavy cream
    ♥︎Cream for filling & Icing
    300g heavy cream
    38g powdered mint candy
    Mint-colored food coloring (Deco Relief)
    20g ground Oreo cookies
    6 pieces of Oreo cookies cream removed
    ♥︎ Mint candy syrup
    50g water
    25g powdered mint candy
    *Bring to boil all ingredients and let cool before use.
    ♥︎ Chocolate ganache drip
    30g heavy cream
    33g dark chocolate (Callebout 57.9%)
    ♥︎ Whipped cream for piping
    100g heavy cream
    12g powdered mint candy
    Mint-colored food coloring (Deco Relief)
    1M piping tip (Wilton)
    ♥︎ Decorations
    Star sprinkles.
    White sugar pearl (Wilton).
    Six half-cut Oreo cookies.

      Listen it’s not about speed it’s about profession, skill and how they are able to make it that amazing and delicious
      Don’t think it’s so easy just when they show us how to do it

    If anybody wants the recipe here it is:
    SPONGE CAKE INGREDIENTS:
    - [ ] 90g Mint candy
    - [ ] 55g cake flour
    - [ ] 11g cocoa powder
    - [ ] 2 eggs
    - [ ] 30g warm heavy cream
    - [ ] 1 egg white
    - [ ] 30g sugar
    INSTRUCTIONS:
    1. Finely ground mint candy in a blender.
    2. Then sift the little candy chunks through a sieve.
    3. In a bowl sift your cake flour and cocoa powder.
    4. In another bowl, whisk your eggs on top of hot water then add your powdered mint candy.
    5. Melt it while warming up to 42ºC until the lumps dissolve.
    6. Let your heavy cream sit in your hot water, meanwhile whipping with a hand mixer, your egg yolks on high speed for 6 min.
    7. Then lower it to low speed and break the big bubbles for 2 min.
    8. In another bowl whip your egg white and add your sugar 3 times while whipping.
    9. Then sift in your cake flour to your egg foam and fold until completely combined.
    10. Add and mix your heavy cream that has been warmed to 50ºc and mix gently but quick.
    11. Add your meringue and mix carefully and evenly. Don’t over mix and fold it about 25 to 30 times.
    12. Pour your batter into your mold and preheat your oven to 170ºC then lower it to 160ºC and bake for 30 min.
    13. Cut your cake into three parts (1.5cm thick).
    MINT CREAM AND ICING INGREDIENTS:
    - [ ] 20g mint oreo (no cream)
    - [ ] 300g heavy cream
    - [ ] 38g powdered mint candy
    - [ ] Green food coloring
    INSTRUCTIONS:
    1. Ground your Oreos finely.
    2. In another bowl, put your heavy cream in the freezer for 20-30 min and while whipping there should be thin ice around the edges.
    3. Add half of your powdered mint candy and whip for a couple of seconds.
    4. Then add your remaining and whip 60% of your cream with your green food coloring.
    5. Reserve 140g for icing in the fridge and for the rest, whip your cream to 90% whipped on top of an iced bowl.
    6. Add your ground Oreos to it and mix with a spatula.
    7. Add syrup on your first layer of cake and spread your cream on top.
    8. Place your half Oreos cream removed on top of your mint cream.
    9. Repeat until you reach the top.
    10. Cover your cake with your mint cream then cool your cake in your fridge or freezer.
    11. Cover your cake with your icing.
    CHOCOLATE GANACHE DRIP INGREDIENTS:
    - [ ] 33g dark chocolate
    - [ ] 30g hot heavy cream
    INSTRUCTIONS:
    1. Melt your chocolate with your hot heavy cream.
    2. Cool to 34ºC and pour your chocolate on top of your cake.

    As a mint fan, this looks really delicious :) Also, here in the United States, we already have mint Oreos, which are my favorite Oreo. But I'm sure a homemade mint creme would taste better.

    매번 메뉴 선정이 너무 감탄스러워요 ..
    생각해보면 그냥 이런 맛이 먹고싶은데? 로 시작해서 각각 시트, 크림, 토핑, 디자인 등을 고안해보는 것일텐데 그걸 그냥 자유자재로 휙휙 만들어버리시고 재료의 양부터 온도까지 섬세하게 하나하나 맞추시는게 너무 대단하신 .. 농도와 질감까지 모두 계산하신다는 소리잖아..? 이 분은 베이킹 계의 없어서는 안될 분이다 ..

    Боже... Я просто обажаю торт мятный шоколад и печенье орео.
    Раньше я делал крем из сливок, мятного экстракта, твороженнного сыра и сахара, а тут просто сливки с порошком из мятных леденцов, и знаете что? Этот крем раз в 10 вкуснее!
    Это пожалуй самый лучший канал про торты что я когда либо видел

    I made this today and it was awesome! Beautiful and delicious! I decided to opt out the chocolate ganache because I wanted the mint flavour to shine through a little more but overall it was a huge success.

    Here in America we have mint Oreo cookies. I don’t know if you all have them where you are, but that would have been perfect for this cake. I don’t like anything mint flavored, but it sure is beautiful 💜💜

    I love mint . I'm gonna try it but i don't know if i can find mint candies. I can substitute with mint flavor. what is the amount of sugar for sponge cake and what for cream filling? Thank you for this recipe. And for the Mint Chocolate lovers try to taste the "After Eight" chocolates
