    Spanish Omelette
    Ingredients
    Eggs- 4
    Olive oil - ½ cup
    Potatoes - 2 (medium)
    Onion (sliced) - 1 (medium)
    Capsicum (finely sliced ) - ¼ cup
    Carrot (finely sliced) - ¼ cup
    Salt & pepper - to taste
    Sweet Paprika powder - ¼ tsp
    Mixed herbs - ¼ tsp
    Method:-
    - Heat the olive oil in a frying pan over medium heat.
    - Add onions and fry them till translucent on low flame.
    - Meanwhile, slice the potatoes with the help of a mandoline slicer and then cut them into slightly smaller pieces.
    - Then add them to the pan, gently mix them into the onions & the oil, season with salt and shut the lid. Allow them to cook on low flame till they are nice & soft.
    - Once done, switch off the flame & strain the mixture. Allow them to cool slightly. (Reserve the excess oil & use them in a variety of dishes for that added flavour)
    - Now break the eggs in a bowl and beat well. Season with salt & pepper along with paprika powder & mixed herbs.
    - Now gently and in small batches add the cooked potatoes and onions to the eggs whilst stirring constantly to ensure that the residual heat of the potatoes doesn’t end up cooking the eggs.
    - Now take a non-stick frying pan and heat a teaspoon of the reserved olive oil over medium flame.
    - Pour the egg mixture into the pan, spreading it out evenly.
    - Cover the pan and let it cook till the egg almost sets and starts separating easily from the sides of the pan.
    - Then remove the lid, place a plate on top of the pan, hold tight and flip.
    Then immediately slide the omelette back into the pan so as to cook it on the other side too. This part is slightly tricky, but be confident and hold the plate firmly.
    - It will take another couple of minutes to set on the other side & slightly cook the added veggies.
    - ⁠Once done, transfer to the chopping board and cut into medium sized pieces in the shape of your choice.
    Serve your high protein spanish omelette bites either immediately as a snack or in the tiffin as even cold they taste delicious & creamy. Enjoy!!
