Sooo good! I didn't have 'fatback', but it's the day after Easter, so I used the remnant bone of a spiral ham, chunks of meat and flavor still on! I've been wanting to use my white beans that I bought bulk at our local market. Made cornbread, too, for a surprise dinner base of white bean soup, with loads of leftover veggies chopped and thrown in. Did not resemble Easter leftovers at all-- on this cold day after a snowfall on Easter. (:

When the Food Trucks were in Mobile I think the weather was supposed to be rainy and I didn't hear about it until the night before. It would have been fun cause I LOOOVE to eat. You can do anything with northerns--from Mexican to savory to making vege burgs. Going to do this quick soak, I never heard of that. I am pressure cooker fan and don't soak, but I am going to do this because Debbie's beans look great. I think Northerns are the best!
I've had beans soaking overnight. I mostly use Roger Wood smoked sausage. I'll take one and slice it in half so I can remove the meat from the casing and take another one and slice it into disks. I also slice some of the disks in half. I like to start by heating my herbs & spices in the pot with a bit of butter and olive oil then start the meat and adding a little bit of water. Then the beans go in with the rest of the water. When my wife isn't looking I'll take 1 or 2 leftover Ramen season packs and put in. Since neither one of us uses the whole package of season we have them left over. You'll find mostly beef, chicken and shrimp in the container we keep them in.
I like my beans think! Those look delicious and I am going to try them with salt pork. I have always used smoked bacon or a ham hock, but fat back will be new to me. Thank you for sharing!!

Debbie, what I do when I make pinto beans when they are soaking (I soak over night) I add a couple of spoons of powdered ginger. Sometimes I add to the beans as they cook. This helps with the stomach issues. It helps me. You can’t taste the ginger but it does help.

I was going to do this but became sidetracked ... It's amazing how many people have no idea what to do with dried beans.
Bought 4 pounds of Turkey Backs from my Amish market. Boiled them for an hour. Soaked two cups of dry Navy Beans for 24 or so hours,rinsed and drained them, then added the turkey back broth and boiled for an hour and added cooked long-grain brown rice. Talk about good. Season anyway you'd like. Can't be beat and beans are SO good for you.

I don't like Turkey, well only the legs or right after it has come out of the oven. I made a big pot of Butter Beans (Giant Lima Beans) yesterday with a couple little pieces of fat back and half a stick of margarine. lol They were so good. My kids and I ate them all. The one thing about these were they just dissolved and it ended up being like a soup with a few beans in it. Never had them do that before. Have you ever fixed Lentils? I have 2 bags of them but I have never made them and have no idea what they taste like. As for beans and rice, I have never had that. :)
***** Any bones make great stock and I do it all the time I've begun to use salt pork skin (rinse all the salt off then go easy on how much salt you put in whatever it is you are cookin) - not the crispy pork skins, but the hide just trimmed off the pig then cured with salt. I 400 degree them in the oven for several hours 'til they blow up like pillows. Save the BACON juice to use elsewhere, cool the skins that are now crispy, break them up and use them on top of soups or beans or whatever I am cooking. My suspect is you cooked your beans too long. If you keep cooking them after they are done they do dissolve. Still taste good and are good for you. The United States of America was discovered 'cause Columbus was looking for a new way to get to India and other places where he could get pepper. Yes, I fix lentils and they are delish. You only need cook them for about 45 minutes or they will dissolve too. I cook them with ham hocks. Oh, you've got lottsa good stuff to cook and eat. Thanks

Hi Debbie, those looked great. Any beans that I eat I eat over cornbread like that, even green beans with taters. Most people cook their green beans till there's not much broth left on them, I'm just the opposite, because I like that broth with the beans over my cornbread. As for pintos tearing up your stomach, if you were referring to gas then get you some Beano, that stuff is awesome. It had done reached a point to where I gave up beans, broccoli, brussel sprouts and anything else that caused gas, it was horrible, I couldn't stand myself. ;) I had seen Beano advertised on TV but had never tried it, I was talking to a woman I worked with one day and was telling her about how I'd quit eating all those gas causing foods and she told me to get some Beano as it worked for her husband. So I tried some, I can take one of those with my first bite of food like the directions state and I won't even burp, much less pass any gas. They are the best thing since peanut butter. Now I can eat all the gas causing foods I want and my stomach won't even make a gurgle. ;)

I am going to the store tomorrow and I am going to get some and try out some pinto's with it. I miss my homemade pinto beans sooooo bad. If this works I am going to send you a big kiss!!! lol I have never heard of people eating green beans with cornbread, but I am not much on green beans. Until I made this video I had never tried cornbread with any beans but pintos, but it really was good with the northern beans. I love beans too. My favorite is Pinto Beans but I had to stop eating them because they tear my stomach up. I don't have a nu wave cooker so I was wondering if you knew the cooking ranges for a slow cooker ? This recipe looks soooo good just like my granddad used to make and I'm excited to try it! Please and thank you so much :)
Another way that seems to work is to let them boil for 5 mins.uncovered so the gas is expelled. Let set an hr. before actually cooking. For butter beans don't put salt in until almost done to keep them from splitting.
That's not true as both beans and rice are more carbohydrates than protein. Also, neither have all the amino acids to make a "complete protein". There's a good amount of non-digestible fiber though.
@@coryaw95 Nope. Assumptions are made, yet not satisfied here. You're assuming that all beans are the same and have the same nutrient profile, much the same as all rice. This simply isn't true, and it's apparent that it isn't widely known. To add to real complexity, the ability to absorb and make use of every amino acid varies. Even so-called 'protein shakes' may have varying amounts of essential and other amino acids so consuming a shake doesn't necessarily guarantee a complete profile nor complete absorption nor use. Granted, it's better than nothing, but the variance here matters.

Yes, if you eat only one kind of rice and one specific bean, you may miss out on a couple amino acids. By including all sorts of beans, rice, and also peas, you can cover your entire amino acid profile.

If u put some raw peeled gingerbread about a medium size piece in your pinto beans it takes the gas out and stops u having an upset stomach. Try it it works at our house.

I don't think I would cook them in a regular pressure cooker for an hour. They will explode and turn to mush. I would google your type of pressure cooker to se how long. I had the old timey morro pressure cooker with the disk on top.

Peel loose skin off of onion but do not cut ends off,place in center of the beans whole. Do not disturb or consume the onion, because that's where all the gases will be trapped. Enjoy

Because bringing them up to a boil like that makes the water turn a horrible black color and you want to rinse them. Lol I don't know why they do that but they do and it's just what I've always been told to do. One of those questions that make you go hmmm. 🤪🤪🤪
Yes you can drm. I also add a carrot and a stalk of celery and half onion. I mean, let's get creative here. I put a whole ham bone in my beans. Left over from a ham dinner last week. You can put bacon, chopped up ham slices, I also use bay leaves in my Northern white beans.
By tearing a stomach up, it doesn’t necessarily mean gas and farts 😂 I love pintos but they give me horrible stomach cramps. I end up in bed curled up praying to “Dear Lord Baby Jesus” 🤣
Beans do not have an "indefinite shelf life." They expire because they are real food. Yes, they last longer than, say, a fresh apple, but by no means are they "indefinite."
When you see chefs ask what's that it don't look like Pork, in a can of pork and beans. Oh its pork, but not bacon like you wanted to think, its Fat Back tell em.

Lumana Rai I have always been told that washing the meat in your sink causes the water from washing it to splash up with the bacteria of the meat getting all around your sink which is worse than not washing it. Any germs from your meat is going to get cooked away where the dirt and rocks from your beans, veggies, etc. don't. They stay in the bottom of your pot. I'll continue doing it the way I was taught. Have you tried eating rice with the pinto beans? The rice is supposed to counteract the digestive issues that pinto beans by themselves can produce. Might want to do an internet search about it.👍

You can also add some baking soda while soaking the first time.Helps with gas and stomach issues. Also works for pinto or soup beans!
Also at odd lots there a wild game seasoning that has powdered ginger. Garlic ,etc.

I have always kept a stock of beans, from pinto, navy, kidney, and the list goes on. I'm gonna get me some fat back and fix me up a huge pot with your cornbread. I add a little chopped onion and carrot to mine, another way to get more veggies into everyone. lol Love sent to you and yours :)

Hi Debbie, those looked great. Any beans that I eat I eat over cornbread like that, even green beans with taters. Most people cook their green beans till there's not much broth left on them, I'm just the opposite, because I like that broth with the beans over my cornbread.
As for pintos tearing up your stomach, if you were referring to gas then get you some Beano, that stuff is awesome. It had done reached a point to where I gave up beans, broccoli, brussel sprouts and anything else that caused gas, it was horrible, I couldn't stand myself. ;)
I had seen Beano advertised on TV but had never tried it, I was talking to a woman I worked with one day and was telling her about how I'd quit eating all those gas causing foods and she told me to get some Beano as it worked for her husband. So I tried some, I can take one of those with my first bite of food like the directions state and I won't even burp, much less pass any gas. They are the best thing since peanut butter. Now I can eat all the gas causing foods I want and my stomach won't even make a gurgle. ;)
WHOA!!!! I just read this. Sorry I have been lazy and haven't felt like getting on the computer. So Beano really does work? I am going to the store tomorrow and I am going to get some and try out some pinto's with it. I miss my homemade pinto beans sooooo bad. If this works I am going to send you a big kiss!!! lol
I have never heard of people eating green beans with cornbread, but I am not much on green beans. Until I made this video I had never tried cornbread with any beans but pintos, but it really was good with the northern beans. Now with Navy Beans I couldn't do that, I like them with ketchup. lol

I love beans too. My favorite is Pinto Beans but I had to stop eating them because they tear my stomach up. I don't have a nu wave cooker so I was wondering if you knew the cooking ranges for a slow cooker ? This recipe looks soooo good just like my granddad used to make and I'm excited to try it! Please and thank you so much :)
Another way that seems to work is to let them boil for 5 mins.uncovered so the gas is expelled. Let set an hr. before actually cooking.
For butter beans don't put salt in until almost done to keep them from splitting.
Beans and rice make a complete protein.
That's not true as both beans and rice are more carbohydrates than protein. Also, neither have all the amino acids to make a "complete protein". There's a good amount of non-digestible fiber though.

To add to real complexity, the ability to absorb and make use of every amino acid varies. Even so-called 'protein shakes' may have varying amounts of essential and other amino acids so consuming a shake doesn't necessarily guarantee a complete profile nor complete absorption nor use. Granted, it's better than nothing, but the variance here matters.

Yes, if you eat only one kind of rice and one specific bean, you may miss out on a couple amino acids. By including all sorts of beans, rice, and also peas, you can cover your entire amino acid profile.

If u put some raw peeled gingerbread about a medium size piece in your pinto beans it takes the gas out and stops u having an upset stomach. Try it it works at our house.

I don't think I would cook them in a regular pressure cooker for an hour. They will explode and turn to mush. I would google your type of pressure cooker to se how long. I had the old timey morro pressure cooker with the disk on top.
To take the gas out of pinto beans ,soak them overnight in water and baking soda.
Also, drop in 2-3 bay leaves. This will de-gas the beans while cooking.

Thanks hon!! I just turned 58 in July. Yea, I definitely have no life. lol As for Navy Beans, they are a lot smaller than Northern Beans and with those I always put ketchup on them. My grandma always soaked her beans overnight too. But I will forget and then have to do them the quick way and so far I haven't noticed any difference in the taste.

Peel loose skin off of onion but do not cut ends off,place in center of the beans whole. Do not disturb or consume the onion, because that's where all the gases will be trapped. Enjoy

Because bringing them up to a boil like that makes the water turn a horrible black color and you want to rinse them. Lol I don't know why they do that but they do and it's just what I've always been told to do. One of those questions that make you go hmmm. 🤪🤪🤪

Yes you can drm. I also add a carrot and a stalk of celery and half onion. I mean, let's get creative here. I put a whole ham bone in my beans. Left over from a ham dinner last week. You can put bacon, chopped up ham slices, I also use bay leaves in my Northern white beans.

Lumana Rai I have always been told that washing the meat in your sink causes the water from washing it to splash up with the bacteria of the meat getting all around your sink which is worse than not washing it. Any germs from your meat is going to get cooked away where the dirt and rocks from your beans, veggies, etc. don't. They stay in the bottom of your pot. I'll continue doing it the way I was taught.
