Here in the Philippines, she is famous in tv even though we can't understand her 😅 we really enjoy watching her while cooking Chinese foods. I was only grade1 or kindergarten that time. Now im 32 yrs old ❤

There was Fu Pei Mei 😎👍🏻 She is truly a legendary chef, made prominent in the 90s especially in the Philippines. Every weekends, kids watch this show while waiting for their favorite tokosatsu shows (Shaider, Maskman, Bioman) and some mommies, despite Chinese at first or sometimes asking for translation, tried to imitate the dish she is cooking.

超過30多年了.這節目從1962年開始.4000多道菜而不重複.真的超級厲害.我小時候有映像.只可惜人事皆非了.這是時代光陰的故事.傅培梅是那時代首席的料理大師之一.在缺乏文化與知識的年代.無疑是一代時代的傳奇.對文化及飲食有非常大的貢獻.
時至今日也沒有一位線上師傅或美食家敢在節目上做這種功夫菜 而且做法上很接近餐廳的專業做法 一鏡到底 一氣呵成 不拖泥帶水 很敬佩您的精神 向您致敬…

松鼠魚這道菜不一定要選用黃魚,其他種類之白色魚肉細長體形之海魚或淡水魚均可使用。唯黃魚肉質滑嫩而無細刺,且鮮美,尤其在台灣又四季可得,故一般菜館多採用黃魚來做。由於去骨後,在肉麵上切劃交叉刀紋,炸時皮縮肉卷,翻成花條而狀似松鼠,故以「松鼠」為名。其澆汁又酸又甜,亦為大眾所喜愛。
購買一條重約一磅半左右之大黃魚,先將魚頭切下,對剖成一大片,撒鹽少許留用。魚身部分剔除大骨,取下兩面魚肉後,在魚肉上(內面)先直切三長刀,(深至魚皮),再橫切十數刀口,(每隔半寸一刀)不可切破魚皮,兩片魚肉均切好後,亦用鹽(半茶匙)及酒(一湯匙)拌醃十分鐘。
香菇二朵泡軟後切小丁,蕃茄半個去皮也同洋蔥(小半個)各切小丁,另外準備青豆二湯匙。
用雞蛋二個加麵粉及太白粉與水調拌成麵糊,然後沾裹魚頭及魚肉後投入燒熱的炸油中大火炸熟至十分酥脆止。撈出後置大盤中。另用油三湯匙炒香洋蔥丁、冬菇丁、蕃茄及青豆,倒下綜合調味料(醬油半湯匙、酒一湯匙、糖四湯匙、白醋四湯匙、蕃茄醬四湯匙、水六湯匙、太白粉三茶匙、鹽一茶匙、麻油、茶匙)用大火煮滾,最後淋下熱油少許,拌均即迅速澆到盤中之魚上便成。

以前傅培梅時間根本全台灣的媽媽必看的節目,我記得我媽還會跟他的姊妹們討論節目的菜色怎麼做的,誰記得配料、東西怎麼切怎麼洗都會討論,而且我印象中好像很少說什麼比例,幾乎都是叫媽媽們自己判斷😂
