I miss the good ol'days, when my grannies and mom make homemade meals, sewed, made preserves, planted gardens, etc. Most of these young folks do not have a clue how to survive. My Mom also taught me these things as well, even how to spend and save money.
We're middle eastern. We eat a lot of eggplant. As dip, roasted as a side, in a tomoato stew with onions and chickpeas. Grilled etc. We also pickle it in olive oil filled with walnuts, garlic and peppers..
A little tip when making eggplant - - bake it. I dip in egg and seasoned crumbs and then place the slices on an oil drizzled baking sheet. Drizzle more oil on top of each slice. I also sprinkle some grated Parmesan cheese on them. Bake in a hot oven 400 F about 10 minutes then turn and bake until done (about 10 more minutes). So easy and uses way less oil! Enjoy!
I would love to see what you actually have to buy from a regular grocery store since you get so much from your garden and preserving foods and meat from your sister.
Lisa, no need to let it sweat. I am Italian and we just dip in egg then bread crumbs and I fry in Avocado oil till cooked. Put into 13 x 9 put gravy first, then fried eggplant and then motzarella. Just continue to layer then bake. It is amazing.
The best way my Grandma taught me to take the bitterness out of eggplant is take a sliced eggplant and soak it in salt water for 15 minutes. Then dry on a hand towel for another 15 minutes. After that they are perfect for all of your delicious recipes.❤
I little tip for your cutting board!! I have a wobbling cutting board myself, and I learned from Rachel Ray that you can lay out a damp wash rag under the cutting board to stabilize it so it doesn’t move while cutting. It was a game changer for me!!!

We absolutely love eggplants in our house! We plant them in our garden every year. I make an eggplant stew which is just onions, chopped eggplant (bite size pieces) chopped potatoes, belle peppers, tomato’s, kind of let it all mush cook together lol and then add in some sage, basil and parsley and it’s delicious!
You might not realize it, but I think you are so amazing. I am way older than you, but i do remember having three or four foster sons, lots of cooking, cleaning , running them places and working outside the house, but I still think you are honestly one of the most energetic girls I ever had the pleasure to "know." You make me want to be more inventive on meals. We dont eat out but occasionally ....it is never as good as homemade. I love that you use lard...nothing wrong with that. A liitle tip when breading your eggplant. Coat the eggplant in AP flour before the egg wash. The egg wash will stick to the eggplant better, and the breadcrumbs will stick better during the frying process. Love your channel, and your enrgy.😊
I'm not a fan of eggplant generally but I love baba ganoush. I thought it would be hard to make, but it's easy. Great with a plate of veggies and pitas on a hot night.

Lisa you can use some dental floss to cut the rolls. Just take a long piece, slip under the dough cross over on the top and pull ends. Easy and nice clean cuts.

Wow those savory rolls looked amazing ❤ We use eggplant in the Russian culture as well. So many good recipe variations using roasted or fried eggplant and garlic Mayo, cilantro and carrots or with bell peppers, carrots and cilantro, garlic, and a vinegar sugar mix to make the eggplant taste more marinated at the end and break down the oils a bit (because eggplant absorbs a lot of oil). Love your work. I have you playing in my kitchen while I do virtually the same thing you do, just on a smaller scale and with no dairy cow 😂
One of my favorite ways to use eggplant is this dip, so yummy! Eggplant Dip: 3 medium eggplant, cut in half 1 medium onion, chopped fine 2 cloves minced garlic 6 T. olive oil 2/3 cup plain greek yogurt 1 cup diced tomato 1/2 lemon, juiced Salt and Pepper to taste Green onions, sliced Procedure: 1. Put 2 T. olive oil on a sheet tray and coat the flesh side of the eggplant and roast 20-25 minutes at 350 degrees until eggplant is soft. 2. Cook onion in 2 T. of olive oil until light brown, add garlic and cook a minute or 2 longer. 3. Let the eggplant cool to handle and then scoop the flesh into a food processor, add onion mixture, yogurt, lemon, and salt and pepper. Puree and add the remaining 2 T. olive oil with the processor running. 4. Fold in tomatoes and top with green onions.

Hey Lisa..LOVE the puff pastry idea & will make some this weekend! You had the right idea freeze drying the tomato slices, but when they're done, just throw THOSE into the blender or food processor & powder them up... FAR less messy than freeze drying from blended up, liquid-y tomatoes as I know from experience.
On the topic of Puff Pastry.... Just the other night I made a Chicken Pot Pie. I also make my own Puff Pastry. I had thought about using some sourdough discard but it was one of those situations that I wasn't sure my family like the change. I definitely will be adding the sourdough discard. Lisa! My favorite way to eat eggplant! One of my three favorite veggies! Grilled with lots olive oil salt pepper and squeeze fresh lemon juice over! Good any temp! Also all your the fried eggplant for parm is wonderful without the red sauce as a yummy sandwich with mayo. Yum!
Moussaka is a great eggplant dish that is easy to make a large batch of. The peppers you thought were banana are likely Hungarian wax peppers. There was a mix up with a lot of seed providers this year. 93% of all corn in the US is GMO, so yes, if it isn't certified organic, it is likely made with GMO corn unless it is a small, local farmer. If you like to save your tomato skins when making sauce, you can dehydrate the skins and been into a powder which is a thickener and nice umami flavor.

I actually just made Eggplant Parm last night for the first time! I grew purple eggplant this year, but we just didn’t like the taste. I found some white eggplant at my produce store near my house & that’s what I used for the Eggplant parm - except I used Mozzarella cheese instead of Parmesan ❤ so delicious! Made my own breadcrumbs from homemade bread as well! My kiddos called them Pizza Bites 😊

It's a big commercial freezer, if not something one might define as industrial, which could be for manufacturing something one must maintain at low temps. We knew what you meant. Fresh tomatoes are so beautiful and delicious that it's often hard to want to use them for any purpose that does not make use of their immediate ripeness, freshness. 30 meals per day plus snacks sounds daunting. Your kids can eat fresh sugar snap peas from the garden as a snack. That's a help. Theo is getting so big, so confident walking around with you in the yard. The savory roll is a superb side dish for something like the chicken you were baking. Sauerkraut completes it.

We are cattle ranchers in the middle of nowhere Oregon. We always have a freezer full of beef at all times. 2 years ago I canned ground beef with onion soup mix for one batch and taco seasoning for another batch. Very handy.

Make your tortillas I had a Mexican friend that show me how to make tortillas. Also if you have a grain mill you can grind your own corn for tortillas

I add nutmeg to recipes it is a preservative.
Have you tried baba ghanoush? It is a silkie smooth dip great with pita bread. Most people would never guess it is made from eggplant.

There is a variety of spicy banana peppers but they are milder then a jalapeno, and a variety of sweet banana pepper.

Lisa! My favorite way to eat eggplant! One of my three favorite veggies! Grilled with lots olive oil salt pepper and squeeze fresh lemon juice over! Good any temp! Also all your the fried eggplant for parm is wonderful without the red sauce as a yummy sandwich with mayo. Yum!
Moussaka is a great eggplant dish that is easy to make a large batch of. The peppers you thought were banana are likely Hungarian wax peppers. There was a mix up with a lot of seed providers this year. 93% of all corn in the US is GMO, so yes, if it isn't certified organic, it is likely made with GMO corn unless it is a small, local farmer. If you like to save your tomato skins when making sauce, you can dehydrate the skins and been into a powder which is a thickener and nice umami flavor.

I actually just made Eggplant Parm last night for the first time! I grew purple eggplant this year, but we just didn’t like the taste. I found some white eggplant at my produce store near my house & that’s what I used for the Eggplant parm - except I used Mozzarella cheese instead of Parmesan ❤ so delicious! Made my own breadcrumbs from homemade bread as well! My kiddos called them Pizza Bites 😊

The creamy pale peach flowers from your garden are lovely. The eggplant parmesan looks good. It's a big commercial freezer, if not something one might define as industrial, which could be for manufacturing something one must maintain at low temps. We knew what you meant. Fresh tomatoes are so beautiful and delicious that it's often hard to want to use them for any purpose that does not make use of their immediate ripeness, freshness. 30 meals per day plus snacks sounds daunting. Your kids can eat fresh sugar snap peas from the garden as a snack. That's a help. Theo is getting so big, so confident walking around with you in the yard. The savory roll is a superb side dish for something like the chicken you were baking. Sauerkraut completes it.

We are cattle ranchers in the middle of nowhere Oregon. We always have a freezer full of beef at all times. 2 years ago I canned ground beef with onion soup mix for one batch and taco seasoning for another batch. Very handy.
