This Tea Fruit Cake is wonderfully soft and moist and contains dried fruits, candied fruit peel, chopped nuts and is spiced with ground cinnamon, ginger, and nutmeg. It doesn't contain alcohol. Instead the dried fruits are soaked in hot tea, which not only adds flavor, but also makes them wonderfully plump and moist. This recipe combines my Easy Fruit Cake recipe with the Irish cake called Barmbrack. It is different from Barmbrack in that melted butter is added to the cake batter. And it is different from my Easy Fruit Cake recipe because the dried fruits are soaked in hot tea instead of just water. I like to serve this cake in thick slices, preferably buttered. It is also very good with a slice of sharp cheddar cheese.

Stephanie, this is such a perfect recipe to share on Thanksgiving Day! This brings back so many wonderful memories of my Portuguese grandmother's fruit cake. She would add whiskey and let it soak overnight, then after it baked and cooled, she'd thinly slice them and wrap each piece in foil and store them for in her beautiful biscuit keeper. She'd be in the kitchen for days before Christmas making loaves to give to family and friends. You've inspired me and I thank you! I could almost smell this as you took a bite to sample. I love your channel! You are so much fun to watch, and I love that your hubby shared the cute picture of your dog peeking over to see what you were baking. Roy, I so agree this is one of the best cooking channels. Everything is clear and concise and helpful to us english cooks. She always gives uk equivalent. We have a ready mix in the UK called mixed spice for these cakes and dried fruit cake mix that has sultanas, currants etc so you just add mixed peel and cherries. All in all a great recipe. Different way of doing it, just dumping it all together, but looks a breeze. Definitely going to add this to my list of loaf cakes. Thanks Stephanie xx
@@anncarter6438 Yeah, she's always my first go-to! Very clear, very accessible, great explanations for why we do things a certain way (so, so important!). Also, here in Europe a lot of American desserts are not really all that popular - great to have a resource for all types of great baked goods. I have to say, I've learned most of my baking skills watching her - and now I'm planning to open my own bakery in the not-so-distant future!

I made this tea fruit cake about four days ago and it came out awesome. The flavor is incredible. And it was so easy. I soaked the dried fruits in lavender tea for 17 hours. After it was finished baking I let it cool for an hour at room temperature and then refrigerate it for 24 hours before I tasted it it was moist and amazingly flavorful. I think this is one of the best recipes of ever used to make a simple easy fruit cake. I’m gonna make more and give them as presents this year. Thank you so much for another wonderful recipe!

I baked this cake yesterday in the morning and served it to my family with the evening tea. Half of it was gone as soon as I served. It is such a hit! It has given me confidence to try your Christmas fruit cake sans alcohol, as I don’t drink it. Thank you Stephanie for such a yummy cake recipe.

It looks so good! I will try it this year. I've made light and mincemeat recipes several times, and they always come out great. I always freeze them, specially because here in Argentina it is very hot during holidays, so a slice if chilled fruit cake with ice cream is heaven!

Made this yesterday and had a slice today after the cake had time to rest. It was truly delicious. I used English Breakfast tea which gave good flavour. May try Earl Grey next time. I also used toasted pistachios as my walnuts were stale and it worked well. And yes I can’t resist a little salted butter on each slice. This one’s going to become a regular bake. Reminded me of Welsh Bara Brith.
This looks very like a fruit loaf my best friend’s Granny used to make when I was a child. We lived in Glasgow, Scotland, but she was Irish and said it was a traditional Irish recipe. I don’t remember her using spices, or if she did it was a tiny amount, more of a “fruit” recipe than a “fruit and spice” one. I do know she didn’t use nuts - my friend’s Grandad complained that they stuck in his false teeth, which always made me giggle! Happy memories. I am definitely going to try this recipe, nuts, candied peel, spices and all. And yes, everything is better with butter.

Delicious, and this reminds me so much of the Welsh Bara Brith with the soaking of the fruit in tea. Each family will have their own cherished 'secret' recipe.

I’ve cooked many of your recipes, my friends say they are all delicious.
I made this over the weekend and it is delicious. I know someone in a nursing home who likes fruit cake so I used standard muffin pans ( baking time was about 25 minutes) rather than a loaf pan to make shipping and portions easier and it turned out great. Much more flavorful, lighter and less dense than a store bought fruitcake. So if anyone doesn't normally like fruitcake they will like this.
I think the last time I made a fruit cake was in the 70's (yes, that long ago!!) and I think I will make this one. I love the simplicity of it and I always love your presentation. Stephanie. I highly recommend this channel! Last, but definitely not least, (and, though I have mentioned this before and will again), the zoom-in on that sweet dog is just the icing on the cake!!❤👍

I make this stollen every Christmas. Running a vein of chocolate in the center also adds to the amazing flavor.

I love fruit cake and I am not sure why it has a bad rep. When I convince people to try a good homemade fruit cake, most people change their minds as soon as they taste it. I'm definitely going make this one for Christmas! I am also team "butter on fruit cake" . . . or banana bread or zucchini bread or apple cinnamon bread or date bread. I just love butter. 😂
Store bought fruit cake tastes bad. But Joy of Baking's fruit cakes are AMAZING!

Butter is good on fruitcake, and so is a thin slice of sharp Cheddar.
I only make it at Christmas and not for myself as I don’t like raisins or sultanas. I make it for friends
@@janandawood4945Maybe you can substitute with dried dates , cranberries , apricots , peaches etc . Try it with your favourite dried fruits , you might like it . I usually slice and freeze them in portions as they keep really well . Just take out , thaw and eat as it is or toast it . Yummy goodness anytime .

This Tea Fruit Cake recipe looks so delicious Stephanie.
I doubled this recipe using molasses for 1/2 recipe instead of brown sugar to make my dark fruit cake. Also used 1 c orange juice for the tea & my usually spices. I made the original recipe without spices as my light fruit cake. Then I made a single recipe with diluted orange juice in place of tea. I packed it with lots of candied cherries and pineapple. I didn't like fruit cake as a kid so my mom made a pound cake with fruit I liked. This would make an excellent gumdrop cake as well, but not one I make, I find they are always too dry. So, I have all my Christmas cakes made in one day. Baked in loaf pans so they took less time to bake and didn't get scorched. They will season well before the holidays. I would usually make double these amounts but will make a second batch in the new year when i get the fruits on sale. My husband has helped stir my cakes for a few years, he was surprised I did them by myself. This kept me busy while waiting for news from my 93 yr old mom being taken to hospital after a fall a few days ago, her pain got worse instead of better. Damage but no break, needed medical help. She will like the fruit cakes with the other goodies my sisters bring her. My husband & I have tea & a piece of cake evenings thru the winter. Yum, yum! Thks for this awesome recipe!

I usually use boxed cake mixes because I'm not much of a Baker, but this recipe looks easy enough for me. Almost fail-safe. And I like the tip to stock up after Christmas on the dried fruit. Thank you.
This is easy enough for me to do. I have the nuts and raisins and dried spices, but I'll have to get some candied peel, and some candied cherries for sure. When I was a kid I loved a fruit cake that was chock full of fruit and nuts, and my favorite was the cherries. Well, I don't have currants, but I have some dried dates. I may cut them up and use them too. Thanks!
Edit: I'm thinking I'll use some kind of liqueur to soak it with after it's baked.
