First time I made these was at least 35 years ago. They also came out perfectly and I was SO happily surprised at the ease except the long stirring of the custard - my arm, lol. I couldn’t believe how well it went! People think it’s some very intricate stuff but it’s straight forward; eyeball each step and imho you need the techniques more than anything - and you’ve presented them here perfectly. 👍 Thanks! Coconut cream pie is my favorite. Betcha if you threw in about 1 1/2 cups of angel flake coconut into that custard before you filled the puffs, you'd have the best coconut cream pie ever!! Yum!

In North Carolina and Pennsylvania USA , we purchase them in the supermarket , or in N.C. in the professional neighborhood full service traditional bakery with some sort of whipped cream filling , never custard . I've only had eclairs or Boston Creme doughnuts with custard filling . I've never made cream puffs , but I'm not really a custard fan , like the ones prepared here . Isn't that why they call them CREAM puffs ?

I make cream puffs all the time! They are not hard to make, and I have no fancy tools. I find a wooden spoon works better than a spatula.
